			<description>This is a filling, low points salad. If you really want to make it lower points, cut the amount of couscous you use (my usual couscous is 9 points per cup). I actually use 1/3 cup couscous for 3 points and leave out the olive oil from the dressing to make it really lean. As written, this recipe provides a total of 12 points but using 1/3 cup couscous and no olive oil gives 3 points only. Serves 2 as a lunch or up to 4 as a side dish. Cook time includes half an hour for the salad to chill in the refrigerator. I use about a 1/3 cup scoop of this over about 1/3 cup - 1/2 cup plain natural yogurt for my breakfast every day.  I also found this to be an easy, filling and healthy camping breakfast with the individual size yogurts thrown in the cooler. And to top it off it's SUPER easy, but tastes like you labored. If you don't like watching sports on TV, my suggestion is to make this, set it out for the guys mezmerized by your tv, and hit the mall.  Chances are you'll be back before they even know you are gone.

You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins &amp;amp; likely need a slightly shortened cooking time. Should be getting about 11 grams of protein &amp;amp; 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds &amp;amp; canola oil. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. We used whole wheat pastry flour with some flax meal thrown in for good measure, frozen blueberries allowed to thaw slightly, and a silicon muffin tin.  They were somehow dense and light at the same time, and had an interesting buttermilk note (we assume from the yogurt). 			<description>These delightful and rather unusual tea sandwiches combine the delicate French herb tarragon, with ripe tomatoes, garlic and shallots  a change from the usual basil and tomatoes. The tomatoes are gently poached with all the seasonings until a thick puree or butter is obtained; the tomato butter is then cooled and you are left with a wondrous sandwich filling, bursting with flavour and colour! The butter can be used for all manner of things, including a topping for a pizza or for toasted sandwiches. Use fresh bread, white or wholemeal, and garnish with fresh tarragon leaves. Any excess butter can be stored in an airtight container for up to a week in the fridge.
