Backpacker Bars

Here is another recipe that I found on the www.bettycrocker.com website. It is different from the other recipe posted on Zaar. "These versatile bars are at home in lots of places. Try one for a quick energy boost, a brown-bag treat, an after-school snack or anytime--it's just plain good!" -- posted by senseicheryl

Lighten Up! Chocolate Chip Cookies

I found this recipe in a Woman's World magazine. It's made with canola oil but tastes just as buttery as full fat cookies. One of these cookies has only 76 calories and 2 g fat, give them a try! -- posted by StephanieNS

Peanut Buttery Granola Crunch

If you are using salted nuts and peanut butter, you may want to leave out the salt, so your granola won't be too salty. I found this in Kids Are Cookin cookbook.
Healthy Peanut Butter Balls

I wanted a sweet but healthy snack that we could all just grab out of the fridge when we wanted. I eyeball the ingredients, adding more until I get a consistency that is sticky enough to roll into balls (you kind of have to pack them more than roll them) and not so stick they need to be rolled in something- I usually just make them plain with out the optional add ins. They would be really tasty rolled in powdered sugar, cocoa, crushed peanuts, wheat germ, etc. Have fun playing with this and adding your favs! Protein, fiber, crunch, sweetness- what more could you want? -- posted by newmama

Cheerio Squares

My mom used to make this instead of rice crispy treats. Honestly I like these way more than the rice crispy version. For a twist, use Honey Nut Cheerios.

I have set it up so that the Prep time is the the time on the stovetop and cook time is the time to let it set up in the pan.

White Chocolate and Maple Rice Krispie Squares

This is a yummy variation on the classic kids' treat.
I like my rice krispie squares to be heavy on the mallow so if you prefer, feel free to add more rice krispies to the mix!
I don't have easy access to good maple syrup this side of the pond so please feel free to adjust that amount too- 2 tablespoons of the fake stuff I get here is about right but you may need less of the real thing!
If you want to make less, half of this recipe fits in a loaf tin beautifully. -- posted by Shuzbud

Simple Berries and Cream: No Cooking Involved

Anzac Day Oaty Biscuits

I found this recipe for a healthier Anzac Day biscuit on the New Zealand Heart Foundation website. It comes from a program they have done aimed at schools. I was also drawn to it because of the lack of coconut which I was finding in a lot of Anzac Day biscuit recipe. Since I am not a fan of coconut these sound perfect for me. The recipe didn't give a yield. So, I am guessing on that. -- posted by Sarah_Jayne

Strawberry Cream Cheese Snacks

I was trying to find something to snack on one night, and I remembered reading another recipe about strawberries dipped in brown sugar, so I came up with this. Amounts are approximate, since you really just dip the cut sides of the strawberries in the sugar, and spread cream cheese on crackers... so it depends on how much sugar and cream cheese you like. This is the first recipe I have published on here, mostly because it's the kind of easy thing I like to find on the site and I didn't see anything like it. -- posted by Queen Roachie

This is a nice, not overly sweet cake that doesn't need frosting and is perfect in big squares at a picnic, or for a snack.
Banana Health Muffins

Healthy, tasty and suitable for coeliacs, those with lactose intolerance and vegans alike.
Despite their healthiness, these taste delicious and the recipe can be adapted to suit any tastes and i recommend sprinkling the tops with a little muesli and sugar and serving them warm from the oven and drizzled with yoghurt if you are not lactose intolerant. For a nuttier flavour, the vegetable oil can be substituted for nut oil. Chickpea flour can be substituted for rice flour if you don't like the taste. Variations include adding apple, dates, cream cheese, cranberries and raisins to name a few...the possibilities are endless! Enjoy! -- posted by the_allergic_chef

Tropical 7 Layer Twist Bars

*After making 7 Layer Bars for a bake sale at work, I started thinking about how well white chocolate chips and macadamia nuts go together. Then I thought, "Hey!!! What would happen if I threw them together with some pineapple and coconut?", and this is what I came up with ... A refreshing tropical twist on an old favorite.
Depending on how big you cut your pieces, you can get about 12 to 16 bars.

This is a modified version of the recipe from Baking: A Commonsense Guide. When they first come out of the oven, they're chewy and delicious. When they cool, they become crisper, ideal for dunking in coffee or tea. (And of course they're still delicious.) I added allspice just because I like it. If you use sweetened coconut, you can probably cut back on the sugar some. -- posted by dreabakes

Homemade Nutella -- Better Than the Real Thing!

Many European kids have grown up eating Nutella, I'm no exception & my kids love the stuff too. These days though, Nutella is becoming increasingly more expensive & as a mother of 2 young children, I'm also worried about what they're eating. This homemade version of Nutella is very simple to make & has only 3 ingredients.
Kiwi, Strawberry and Grape Juice.

I got this recipe from 'The top 100 juices' by Sarah Owen, published by Lifetime Distributors, Castle Hill, Australia.
Sarah Owen says "All three fruits in this juice provide a massive infection-fighting boost of vitamin C and can help to shorten the duration of a cold. The kiwi fruit a also contain lutein, a phytonutrient known to reduce the risk of cancer, heart disease and eye disease. Both strawberries and grapes are high in ellagic acid, which neutralizes carcinogens. The tannins, flavones and active compounds in the grapes combine to make them energizing and strengthen the cell walls of blood vessels"
You could make more than one serving, and serve with lemonade and ice in a punch bowl for a party if desired.
I haven't made this yet, as I don't have a juicer, but if I ever get one, this will be the first juice that I make.
Enjoy! :) -- posted by TALIA #3

Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy

Spooktacular Halloween Pudding Cups

Super fun Halloween treats that the kids are sure to enjoy. Easy to make and look great to!! I got the idea off of another website that used chocolate pudding but I thought using vanilla and dying it orange would be really cool since the pudding and oreos together would be traditional Halloween colors. This recipe can be easily divided in half and so on. For the pudding I used the kind that you cook verses the instant. I think the cooked pudding has a much nicer and thicker consistancy. The amount below for the oreos is a guesstimate because it wouldn't let me put down 1 large package of oreos but either way just one regular package of oreos crushed is what you need. Enjoy! -- posted by mamawheezy
