Company's in the Driveway Shrimp and Avocado Salsa

This is a delicious concoction that seems like it took a lot of time but you can whip up in about 10 minutes under pressure. You start with jarred salsa (whatever heat you like) and freshen it up with jalapeno, avocado, onion and shrimp. A shot of lime brightens the flavor and you're ready to hit the patio for a visit with your company. Also great to take to a cookout. Try it with the Chili-Lime Tortilla Chips. -- posted by Ma Field

Raw Vegan Brownies

You will not believe these are actually good for you. Full of living enzymes and better than cooked brownies, these are a frequent treat for us! The beauty of this recipe is that it's so easy to whip up when you have a craving. I always double or triple it and throw some in the freezer. The coconut oil helps to keep the brownies from crumbling, and is a great way to get some in your diet, it's so good for you if you make sure to get virgin, unrefined, cold-pressed coconut oil. -- posted by RawFoodNut

We created this amazing taste sensation by accident! We were going to make our "creamsicle" smoothie, but realized we didn't have any strawberries, frozen or fresh. So, we decided to try something different, and WOW was I surprised. I really didn't think it would taste this great with raspberries. I thought for sure it would need some sweetener like honey or agave nectar. But it really doesn't.
Dilled Salmon Tartare on Whole Grain Bread

Have been going through all my back issues of Bon Appetit and I found this great recipe for "another" salmon tartare. It has been suggested that it be served in martini glasses on small bed of a mesclun mix with a cocktail rye or some type of rye cracker. The pumpernickel cocktail bread just doesn't cut it. Also, to keep the color of the salmon vivid only add the lime juice in the last 30 minutes - it cooks in that amount of time so there won't be a problem. It is best to buy frozen - slice when it is partially frozen, if you want fresh, you'll have to partially freeze it to slice it. There is a chilling time for at least 30 minutes, which I didn't allow for. -- posted by Manami

Low Fat Coffee Banana Smoothie

Use up your old coffee a fun way! I always save my leftover coffee and freeze them into ice cubes. Usually, I cool off my fresh cup of coffee with them (without diluting the taste) - but you can use them to make iced coffee. I was out of my usual frozen strawberries one morning so I thought I'd give them a whirl in the blender. I currently use a hazelnut flavored blend. Also, don't let the "low fat" throw you - this tastes wonderful... Use the ripest bananas (black is fine for this) possible, as they are the sweetest. If they're too ripe to eat, peel them and put them in baggies in the freezer to save for your smoothies or for baking. No one will know! I hope you like this. -- posted by saTory

Super Kiwi Cereal

This is from the best book EVER if you want to feed extremely healthy and yummy food to your baby or toddler: Super Baby Food.

This recipe is "super" because it packs a nutritional punch. The Vitamin C in the kiwi works well with the calcium in the cottage cheese and the iron in the wheat germ. You can substitute banana for the kiwi and yogurt or yogurt cheese for the cottage cheese. If you use banana, serve with orange juice to get the extra vitamin C. -- posted by sammos

Artichoke, Garbanzo, & Spinach Pasta Salad

This is an old standby that we use here at the "home" and amazingly, the residents, eat it but they leave out a little of the spinach. Found this in a drawer with the ingredient quantities, as we use more of each, but I don't know from where it came. This is easy and with some chicken and some fruit, the meal is complete. Didn't account for chilling time. -- posted by Manami

With practice you can become pretty good at this.

Serve on bagels with cream cheese, a thin slice of onion and capers, and a squeeze of lemon.

Or on toast, or crackers.

The traditional Swedish way is on pumpernickel bread with equal parts dijon mustard, sugar, white vinegar emulsified with 3 parts regular olive or canola oil. -- posted by Kevinf

Real Vegan Yoghurt Cheese

Unlike most types of vegan cheese this is real cheese. At least it's made just like the same kind of dairy cheese would be made. It is quite low in fat and has a texture like low-fat cream cheese. The taste is also similar though not very tangy so you might like to add some lemon juice to the cheese. Make sure you use real soya yoghurt made from live cultures as it might not otherwise work. If you would like a savoury cheese, it's usually all right to use sweetened yoghurt and add salt afterwards, but don't use a flavoured variety (like vanilla). Of course you can also make sweet versions of the cheese to use in frostings and desserts or just as a sweet spread. I've heard that real oat yoghurt is also available and I'm sure this recipe would work with that as well. -- posted by Goldcrest

Tuna Cheese Spread

Who knew that curry and tuna would meld so well together? I used a lemon and pepper tuna and dipped it with roasted garlic italian bread. Serve this on crackers, stuffed in a tomato, or in a sandwich. I found this recipe in Potlucks, Parties, and Barbecues/Taste of Home from Dorothy Anderson of Ottawa, Kansas. Double the recipe if serving a crowd or just enjoy for lunch.

12/5/09 I made this again today (I came across the recipe again on another website), and I doubled the amount of tuna and added some lemon pepper and a can of garbanzo beans. I would add cucumber if I had some. YUMMY! More of a lunch than a dip. I enjoyed it on Ritz Crackers, but feel free to have it as a sandwich filling, stuffed in a tomato, or with carrot and celery sticks. -- posted by AmyZoe

Big creamy butter beans give a tuna and celery salad terrific heartiness! The salad would also be delicious spooned over slices of warm grilled country bread.
Fresh Dates With Brie

Not quite sure this is a recipe.....but it sure is a wonderful way to enjoy your dates and Brie Cheese! We can get the most wonderful fresh dates from nearby markets and I usually add them to my cheeseboard.
you can really use most soft cheeses with your dates....Brie is just my fave.
You can prepare some as a snack and as optional extras...drizzle them with honey and add in some crushed walnuts or pecans with the cheese -- posted by **Jubes**

Strawberry Cream Cheese Snacks

I was trying to find something to snack on one night, and I remembered reading another recipe about strawberries dipped in brown sugar, so I came up with this. Amounts are approximate, since you really just dip the cut sides of the strawberries in the sugar, and spread cream cheese on crackers... so it depends on how much sugar and cream cheese you like. This is the first recipe I have published on here, mostly because it's the kind of easy thing I like to find on the site and I didn't see anything like it. -- posted by Queen Roachie

Veggie Sandwiches A.k.a. Veggimiches

I used to make these all the time in southern Cali for my BF. Now that I've relocated to the far North, certain fresh ingredients are harder to come by, so I haven't been able to make this sandwich in ages. I'm not sure where the "m" stems from in "veggiemich," that's just what we ended up calling it. :) The reason for mixing the mustard and dressing prior to spreading on the bread is to avoid uneven spreading while keeping the calorie count down. Everything can of course be omitted or replaced to your taste; you can even make it Atkins-friendly by making a lettuce pocket and omitting the bread, hehe! We loved using a lot of pepper for a nice kick. You can make it a more filling meal with other additions, too! ^_^ -- posted by FuzzyKiwi

Cottage Cheese With Banana and Blueberries

Apple, Orange, and Yogurt Delight

I make these the night before for my husband and I to grab and go the next day. The acid in the mandarin oranges keeps the apples from turning brown. Sometimes, I'll add half a banana to each one for more fruit. I either use nonfat vanilla yogurt or plain nonfat Greek yogurt with a little vanilla extract mixed in. And I don't peel the apples for the extra fiber.
Walnut Brownie Energy Bites

Found this recipe at deliviouslivingmag.com. I haven't tried it, but I've seen recipes like it and wanted to put it here for safe keeping. The brownie bites are super healthy and I think they should be super delicious too. These are essentially raw brownie bites. Here's what it says on the website about them "Decadent and rich, these are made with good-fat almonds and antioxidant-laden cacao and sweetened with fiber-rich Medjool dates. They provide whole-food nutrition, so enjoy as a snack or treat. These can be kept at room temperature for a couple of days or will keep for at least a week refrigerated. Ingredient tips: Bob’s Red Mill makes almond meal (flour), but if you can’t find it, just use whole raw almonds and process them into a powder using your food processor. Prep tip: Keep batter from sticking to your hands by lightly coating them with coconut oil, olive oil, or even water." -- posted by dimply dots

Sweet Icy Milk Drink

My daughter loves this drink. My husband used to drink it alot as a child. It makes a great snack when paired with buttterd toast or a PB&J! I do not reccomend that you use any milk lower than whole milk because it will be too watery. A sugar subsitute does not alter the taste as much so you can try that. -- posted by Chef Sarita in Austin Texas

Pumpkin Guacamole

I've never been a fan of guacamole for some reason. So I figured, why not make my own, have it retain some avocado...but use my favorite versatile Vitamin A rich veggie instead? This is a fun, flavorful, and healthy dip. Great with Recipe #395640. -- posted by the80srule

Honey Mustard Chicken Salad

An original creation that is too good to lose! I hope you enjoy it. I chopped my veggies in a mini food processor to save time and ensure they were finely chopped. -- posted by sbera007

Victorian Watercress Tea Sandwiches for High Tea and Picnics

During Victorian times, children used to take watercress sandwiches to school in place of meat ones. I love them, especially when cut into small trianges and served with a cuppa (cup of tea!). Use the freshest bread - I like to use wholemeal, and a fresh salted farmhouse butter. I have inlcluded a soup idea at the end of the recipe, to be made with the excess stalks! So a soup and sandwich recipe then! -- posted by French Tart
