Alive Cookies

My mom has been sending me these healthy recipes lately, and this one was so weird I just had to post it. I don't have a food dehydrator but I may try to make these in the oven, just as an experiment. I think it sounds good, but I am kind of scared to mess it up! (Cook time==dehydration time, and prep time is soaking time for the oats.) -- posted by spatchcock

Dry Cure Southwest Beef Jerky

This was my first experiment with dry cure jerky. It's a peppery jerky with the flavors of chili. The beef sold as "fajita meat" works perfectly for jerky; it's lean and in good-sized slices. Prep time includes seasoning the beef overnight. Serving size is approximate - how much can you eat at one time? -- posted by EdsGirlAngie

Spicy Apple Chips

This recipe was born out my frugal urge to redeem a big basket of very wrinkly, aging Gala Apples. I've listed the seasonings I used to add flair to this age-old method of preservation, but by all means, tells me what combos you enjoyed! The Hot Pepper Sauce (I used Tabasco) certainly added a 'kick' much appreciated in our home, but you may prefer the classical sugar-spice-and-all-things-nice variety without a touch of added heat. While this recipe was executed with a borrowed dehydrator, I would love to know people's success with the oven -- apples spread in a single layer onto a lined baking sheet and place in preheated, 300 degree F oven for 25-30 min. or at 200 degrees F for 1 to 1-1/2 hours (cooling on a wire rack as you go).... -- posted by DoubletheGarlic

Healthy Salt Substitute

I need to change this description again. At first, I posted it as a healthy salt substitute, then someone rated it as unhealthy, stating celery was not recommended for someone on a low sodium diet. Then someone else rated it as healthy and gave a website to check. So I did my own research. This is what I found. According to the Heart and Stroke foundation of Canada, (www.heartandstroke.ca) celery is a healthy choice for people on low sodium diets. This is what they wrote in response to my question about it; "We are not aware of such claim regarding celery being an unhealthy food choice and acknowledge that incorporating 5-10 servings of vegetables and fruit a day is healthy for you and can help reduce your risk of heart disease, stroke, diabetes and some types of cancer. Vegetables provide nutrients that are important for health."

1 stalk of celery (raw) only contains 40 mg of sodium. According to my husbands cardiologist, he is allowed 240 mg sodium/day (or foods with no higher than 10% sodium on the label). Also, according to the way the nutrition info is listed on my recipe, one serving is listed as 1440g. This is for the entire recipe of 2 bunches of celery!! If someone poured the WHOLE THING on their food, yes, perhaps that would be unhealthy. But who would do that? So go ahead and use this recipe as a HEALTHY SALT SUBSTITUTE! -- posted by C & D's Mommy

Unknownchef86's Dehydrated Sliced Potatoes (Dried)

This is a recipe I came up with when I had an excess of potatoes. These are sooooooo much cheaper than buying premade mixes. It takes a bit of effort, but it's worth it! Something I also like is the fact that it doesn't have the sulfites that some products include. I don't bother peeling the potatoes before I make these, but then again I don't normally ever peel potatoes...I cook them with the skins on. You could do either. I used a corkscrew slicer (looks like a screw with a piece of metal attached) because that's what I had. It created a hole in the middle, which I wasn't sure I liked, but it probably helped the potatoes dry faster in the long run. If you use the corkscrew slicer, the potatoes will come out looking kind of like a big slinky. Set the potato on it's end and cut through all the slices...it will separate them into individual slices. If desired, you could use a mandoline, but I think I like the corkscrew slicer better due to decreased drying time. Drying time not included in recipe, as it will vary from model to model. -- posted by UnknownChef86

Passion Strawberry Fruit Leather - Dehydrator Roll-Ups

Once you know how to plug your dehydrator in, you're limited only by your imagination regarding how many different "recipes" you can come up with for fruit leather. These simple snacks are healthy and often more convenient to eat than fresh fruit. I ziplock a batch and take it with me. Either pureed apples or applesauce makes a great inexpensive texturizer with a rather mild flavor, so I often flesh out whatever the main fruit flavor is with it. This time it's strawberries! (My friend Freya arrived on my doorstep last weekend with a HUUUUGE box of the most beautiful berries I've ever seen, so rather than to lose the last of them to age, I've gone the dehydrating route.) -- posted by Sandi (From CA)

Thai Style Red Curry Beef Jerky

Idea I had of using a Thai style red curry to make a jerky. I'm not confident on long-term storage of this recipe so would recommend keeping refrigerated and using in a week or so. Preparation time does not include the marinating time. Leaving the seeds in the chili makes it quite hot, unless you really like a fair bit of heat you should probably remove the seeds so it's more like a commercial jerky spiciness. Otherwise make sure you have a nice cold beer or two on hand ;-). -- posted by Peter J

Essene Bread (Raw Sprouted Bread)

I really enjoy essene bread. Its sprouted, not cooked like a regular loaf of bread. You can add dried organic fruits or organic herbs to this bread as you like. The possibilities are endless. This is a bread that still has all its enzymes working, this means it's basically a live food. You have to soak whatever berries you choose for your bread. These are found in most health food stores. The bread is dehydrated, not baked. I came up with this recipe for my DH and myself. We are eating more raw foods and this makes a satisfying meal. I made some pine nut cheese and will put this on the bread. It should be a delicious change from the usually baked products.
NOTE: I didn't include the 2 day sprouting time in this recipe and the cooking time is actually the dehydrating time.

If you do use wheat berries don't use the hard wheat berries, its not recommended. You can use other types of seeds in this. I used a mixture of sunflower and pumpkin that I soaked over night.

Enzymes start to die at 106'F so avoid going above 100'F when drying this bread. -- posted by Chef Joey Z.

Almost Dad's Tofu Jerky

I adapted this recipe from one I found at tofujerky.org. One of the few cheats I would do as a veggie was eat my dad's venison jerky. With his passing, we lost the family recipe. I recreated it to the best of my memory using tofu. The marinade also makes great baked tofu. Adjust the pepper to your taste. I usually double this recipe because we love it so much. -- posted by PDX CakeGirl

Dehydrator Root Soup With Ham

The roots in this soup include potatoes, parsnips, and turnips, assisted by quite a few other vegetables plus ham for flavoring. Vary the vegetables as you like: Two very good alternatives are dried rutabaga slices and shredded cabbage. An honest, nourishing Sunday night supper-type soup like this goes particularly well with Corn Bread, still warm from the oven. (see related recipe). Serve the bread with a small dish of honey, which complements the saltiness of the ham and the sweetness of the root veggies.

Dehydrator Potato Soup

This soup is creamy and thick and the flavor actually improves if allowed to stand a few hours before serving. Very the herbs as your supply or inclinations allow. Small pieces of dried jerky or bacon bits are very good added to it, too. With a salad, it makes a pleasing simple lunch or supper, particularly on a chilly day. The recipe doubles nicely too.

Dehydrator Creamed Corn

To rehydrate and cook dried corn: In a saucepan, combine 1/4 cup dried corn with 1 cup hot water. If the corn has been blanched, it will rehydrate in 5 to 10 minutes, unblanched corn will take about 30 minutes or longer. Bring the rehydrated corn to a boil and cook for 3 to 5 minutes, cover and let sit for 5 minutes. Drain. This will yield 3/4 cup cooked corn.
