Tasty Taco Soup

Waste Not, Want Not Creamy Cauliflower-Ham Soup

"Waste not, want not", my Grandma's favorite expression. I know that she would approve of this delicious Clean-Out-The-Fridge soup. For herbs, use your favorites. (a little dill is tasty.) Make it your own, by adding whatever veggies you need to use, green beans, peas, carrots, potatoes, even chopped spinach. -- posted by Caroline Cooks

Lentil Soup- Cfg-Cheap, Filling and Good for You!

Can be made from your pantry, no running out into the cold winter to make dinner.
Comes together fast- I make this year round but it is extra good in the cold NY winter
Perfect meatless but any meat could be added, left over ham, bacon, sausage.
If I am making this for lunch, I fry bacon in the pot, remove the bacon for a sandwhich and leave fat in the pot tosauté the veggies. -- posted by Chef #801828

Cheap and Easy Crab Bisque

I was at a restaurant and they were serving red pepper crab bisque and it was so delicious, so I came home and made my own version of it. Real crab can be a little pricey so I used imitation, not as good but a lot more healthy for my budget. I loved how it turned out and I hope you do too! It's great served in a bread bowl or eaten with buttered Portuguese rolls. -- posted by Smuckercooker

My take on Panera Bread's Broccoli & Cheddar Soup...it's really close, except for the carrot bits! Kept the fat down until you get to the cheddar ( - try and get block cheese and shred yourself, it melts better than the pre-shredded. )! really easy and warming.
Dehydrator Root Soup With Ham

The roots in this soup include potatoes, parsnips, and turnips, assisted by quite a few other vegetables plus ham for flavoring. Vary the vegetables as you like: Two very good alternatives are dried rutabaga slices and shredded cabbage. An honest, nourishing Sunday night supper-type soup like this goes particularly well with Corn Bread, still warm from the oven. (see related recipe). Serve the bread with a small dish of honey, which complements the saltiness of the ham and the sweetness of the root veggies.
Adapted from the "Mary Bell's Complete Dehydrator Cookbook". Prep time does NOT include dehydrator drying time. -- posted by TxGriffLover

Hearty Light Chicken Soup

I'm on a diet and I wanted use up some left overs in the freezer and make something that would fill me up. So why not make an original low cal chicken soup? So here's my chicken soup recipe.

If you don't want to buy a bunch of different frozen vegetables just buy a quality mixed vegetable. It usually pretty close to the portions in this recipes.

If you cook at a lower temperature add about 10 minutes to your cook time. -- posted by Erv Kosch

Chicken Pepper Pot Soup

I got this fabulous recipe when I vacationed at Disney's Animal Kingdom Lodge. The soup was on the Boma - Flavors of Africa Buffet. When I inquired about a cookbook with the recipe, the waitress went & got the recipe from the kitchen. This is posted in the same manner I got it, but I'll tell you that finding 1 gallon containers of broth is difficult. So I use 10 14oz cans, it's a little more, but just as good. I also usually use 2 poblanos. Using ready to go chicken tenders is a big time saver. I just sautee them in a little sesame oil & garlic before I dice them. This soup is very tasty and borderline addicitive. I've made several times since I got back. It is absolutley delicious the next day and freezes well. Hope you enjoy it as much as I do. -- posted by Tina & Angie

Pantry Vegetarian Chowder

If I recall correctly, this came from a package of dried beans. It's rich comfort food that isn't really too awfully bad for you as most things in the "comfort" category are. You could certainly substitute canned beans for the cooked dried beans and get the same result. (If you do, don't add any salt, as canned beans are already salted.) Time for preparation assumes dried beans and excludes the pre-soaking time of 24 hours. You can use 1-2 cups frozen corn instead of canned if you prefer. Two cans evaporated milk almost makes 3 cups. I use that and add half and half to make the 3 cups. I like to garnish this with some plain corn tortilla chips. -- posted by Cook In Southwest

Chicken Taco Soup

This recipe is so easy and so good. It's become one of my favorite soups. In the prep time I didn't count the time it takes to cook and dice the chicken because you can either use cooked chicken that's already been diced for you or you can cook it and dice it yourself. I usually use about three chicken breasts. -- posted by Chef # 8654321

The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.

Easy Vegetarian Black Bean Tortilla Soup

Quick, hearty soup with a bit of a kick. Can be made Vegan by omitting sour cream. Tame the spice down by substituting diced tomatoes for the Ro-Tel. I serve the soup with corn chips, but tri-colored tortilla strips add some visual appeal. I like to leave the black beans whole, but you can make it creamy by mashing the beans. -- posted by Chef #1540606

Potato Leek Soup (No Milk or Cream)

This soup does not have cream or milk in it like many of the ones I have seen. I got it off the internet many years ago. The recipe is credited to the Dinner Co-op.
Hot Dog Bean Soup

I found this recipe in the 2009 editon of Taste of Home Quick Cooking Annual Recipes. It was sent in to them by Mary Ann Kime of Sturgis, Michigan. After she mixed everything together she warmed the soup in the microwave. Since I didn't want to dirty up alot of dishes, I just decided to heat everything on the stove top. If you want to follow the exact recipe, and have that particular cookbook the recipe is on page 101.Serve with crackers or even a grilled cheese.
Alabama Living Soup

This recipe comes out of a local electric company magazine. We love hearty soups on the cold, damp days. This recipe fits the bill. Just place everything in the crock pot, go to work, come home to a wonderful soup. This makes a large crockpot of soup. For thicker soups you can use less broth, for thinner soups, use more. The cups measurement for the broth is up to your preference. -- posted by Jellyqueen
