			<title>Easy Baked Ziti</title>

			<description>As a grad student, I'm always looking for recipes that are quick, easy and relatively cheap, but taste great at the same time! I adapted this ziti dish from a number of recipes online after none of them were precisely what I wanted. I hope that you enjoy it too. 

The cheese is simply what I tend to keep in the fridge and therefore what I had to put the recipe together. It was a good combination, but you can substitute whatever you would like for it. Equally, you can leave out the ground beef if you'd like it to be vegetarian. 			<description>This is a great way to use up leftover ham, some frozen peas and some pasta and you have an amazing quick dinner.  Now I really think that a combination of the fontina cheese and the parmesan is what makes this good. You can use other pastas, but I happen to like the penne or the small penne.  My favorite is to serve this with balsamic grilled portabello mushrooms and a good glass of red wine. If you use homemade pasta, which is more absorbent than spaghetti, you should start with 1 tbsp more butter when making the sauce.
TO MAKE AHEAD : You can cook the sauce entirely in advance up to the point where you add the parsley. 			<description>The original recipe came from the San Francisco Chronicle.  The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach.  If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use.  However, I have used tuna in water when it was all I had in the pantry.  Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version.  Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!!   I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it.  This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). Traditionally we would think of this as a side dish, but at 396 calories per serving I wanted to make sure this recipe would fill us up without having to add large servings of meat or bread. It did!  We like it served with 1/2 of a small grilled/broiled chicken breast and steamed veggies, but  shrimp would also be a nice accompaniment. I am in constant search of low-fat, heart healthy recipes that actually fill us up. So often we find recipes listed as &amp;quot;low-fat&amp;quot; or &amp;quot;heart healthy&amp;quot; and the serving size is so small a person walks away from the table hungry or we are deceived by the words &amp;quot;low-fat&amp;quot; and eat 4x what the recommended portion size is defeating the original intent. This filling dish generously serves 4. We also like a tsp or so of onion powder added to the cheese mixture. If you are not on a sodium restricted diet, feel free to add salt to taste. The recipezaar database doesn't seem to recognize the yolk free egg noodles or low sodium worcestershire sauce so I will list the Nutrition Values as stated by the AHA.

			<description>I first was introduced to this recipe when I was reading the book, &amp;quot;Belong to Me&amp;quot;, when the main character &amp;quot;would have sold her soul&amp;quot; for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese!
