Bayou Gumbo Crock Pot

This recipe is so great and easy to change up. Feel free to add more things like crab meat, chicken meat, more veggies. I like to add more hot sauce to the mix while its in the crock pot. Have fun with it and dont worry there is no way to mess this one up. People will think that you slaved all day to make it. -- posted by Miss Oregon

Cuban Black Bean Vegetarian Feast

After carefully perusing the other Cuban black bean dishes here, I decided this one is different enough to offer. Served over brown rice, with all the toppings, it's a power-packed veggie plate! For guests or family members who do eat meat, a good roast pork loin, grilled chicken, or lime-barbecued shrimp would round out the meal. A salad with a sweet citrus vinaigrette and sliced fresh oranges would make this a feast! -- posted by La Dilettante

Quinoa - Risotto Style 1

This is my own recipe. I like it, as it's a fast way to eat well and feel great... Quinoa, poblano peppers and parmesan ! Don't use kraft powder. Buy some real parmesan or, even better, Belgioioso 'American Grana' if you're in the USA -- by far one of the best "parmesan" style cheeses you can find in the states. The fact that they admit it's American, gets you over a psychological barrier, and it's just a great product. You'll become addicted...eat it with fruit : figs, mango, guava... -- posted by Asd;MRS-NYC

Ginger Teriyaki Chicken

A recipe from the back of a label from a can of LaChoy bean sprouts. The original recipe called for either chicken breast or thighs. We prefer chicken thighs and I often make it with whatever vegetables that we have in the fridge. It also called for serving this over crispy rice noodles, but since I am gluten free this was left out. -- posted by LARavenscroft

Calamari in Creamy Wine Sauce

If you love calamari, you will LOVE this one! Light, flavorful and super delicious! I sub 1/2 and 1/2 for the cream and still love it as much! The original recipe was for 1/2 pound of pasta but I increase the pasta to 1 pound without increasing the other ingredients because my family doesn't like things as "saucy". If yours does, either 1/2 the pasta or double the sauce! -- posted by ChicagoRN

Last Minute Helper (Like Hamburger Helper)

This was made on the fly out of necessity, you start your day thinking whats for dinner knowing you will not have time to cook later, so you grab a pound of hamburger out of the freezer thinking you will figure out what to do with it as you do the shopping today no problem.

So now you start your day, drop off the kids at school, do all your running only to get a call which delays your plans for shopping, so you think just make burgers add some chips for tonight no problem. Now its time to get the kids from school and you get another call asking you to grab more kids for the neighbor, you think still no problem they are not staying for dinner, so now it gets late and then it happens, the call that says we can't get the kids yet.

The kids are starting to scream they are hungry, now your brain is racing, what to do, so much for a simple burger not enough to go around, you think make hamburger helper and add extra noodles, you race to the cupboard to realize you didn't get to go shopping, so you say I'll make my own hamburger helper and thus this quick and simple recipe is born.

Remember this is for a quick and simple meal, treat it as a quick fix and a base to make bigger and better things. -- posted by Half-Elf

Crock Pot or Slow Cooker Mexican Chicken White Bean Soup

Once again, more of a method than a strict recipe. Comfort food with a little kick to it. I was going to make chile and this is what evolved - we liked it even better. And don't let the dried beans throw you - put them on the stove first, bring to a boil, let sit, and assemble the other ingredients while they stand. The pre-cooking and draining removes the volatile sugars that cause gas. You may also soak the beans overnight, drain the water then add the beans to the slow cooker. -- posted by One Happy Woman

so good! and so easy! my boyfriend and I seriously make this 2 days in a row so that we have a big pot of it. You can make it into a sandwich, or eat it with tortilla chips for a party, or you can put it over rice and enjoy it that way! This recipe came from a friend, she got it from a recipe book at the dollar store, I would have thought it would already be on here, but nope. So I figured I'd let you all enjoy it as much as we do :) -- posted by Rebel0219

Tomato Spinach Spirals

I'm trying to feed my family of four on $10 or less for each night's dinner. I found this tasty recipe on the Taste of Home website. I made it and was surprised at how much I liked it. I'm posting it here for others who are budget-minded. The original recipe submitter said that it serves 6 people at 69 cents per serving. I'm posting it with the same serving size she had, but truthfully my family of 4 likes to eat more than that, so I doubled the recipe and had a bit left over for lunch the next day. -- posted by G.I.

Found this recipe on Care2 website @ http://www.care2.com/greenliving/ten-mothers-garlic-and-spinach-soup.html

Adapted from The Roasted Vegetable, by Andrea Chesman (Harvard Common Press, 2002).

This delicious broth, redolent with garlic and enriched with the vitamins and minerals of fresh spinach, takes its name from an old folk saying that garlic is as good as ten mothers.

This soup is not only tasty and nourishing, it makes a comforting remedy for winter sniffles and sneezes. -- posted by SassiFras

Tuna Noodle Casserole

When first married, I never made TNC because my husband told me he didn't like it and wouldn't eat it. After being married for several years, I came across this recipe and it was a little different from most. I told my husband I had such a taste for TNC, I was making it and he could try it or go out and get himself something else to eat. It was during winter and, needless to say, he gave it a try and was pleasantly surprised. I've made this ever since. I hope your family will enjoy it as much as we do. -- posted by shelleybean

Crock Pot Beef Roast

I am becoming a huge fan on the crock pot. This recipe is something I whipped together on a whim. It was my first time cooking a roast and I felt if I did it in a crock pot there was NO WAY I could mess it up! Turned out great and meat was so tender, it was more like a stew!
Lentil Skillet (With Cumin and Lemon)

Warm comfort food. Someone gave me this recipe years ago. To provide contrast, serve with something crunchy and/or something colorful. I tend to cut the recipe in half, and then use less olive oil and more cumin. Also I sometimes find the uncooked garlic a bit harsh; wilting it a bit in the bottom of the pan may be wise. -- posted by Michelle from Central Time

Gourmet Mac & Cheese W/ Lots of Variations

Tweak the spices to your liking. I like it also without the paprika, but garnished with a sprig of fresh rosemary.

Also try making it cheesier or adding or substituting cheeses. I've made an excellent one with brie. I've also used canned tuna instead of chicken for a quicker version.

I have also experimented with different seasonings and rubs for the chicken or tuna, including celery salt, cayenne, rosemary, cumin, etc.

Changing the pasta also greatly changes the flavor as well, in my opinion.

Can be made with dried spices but I recommend fresh!

To go above and beyond, you can also bake the finished casserole with a breadcrumb or other topping. -- posted by GoldsmithLissa
