Pasta Alla Cacio E Pepe

This is purported to be "the best quick meal" we've ever tasted, as per Yvonne Ruperti in Cook's Illustrated. There are two other recipes for cacio e pepe (pasta with Pecorino Romano cheese and black pepper) on RecipeZaar, but this one adds at least one more ingredient to keep the cheese from turning into a big clump. Add cream. This recipe was reprinted as "recipe of the week" in The Week magazine. -- posted by Kumquat the Cat's friend

Slow Cooker Beef Stew With Guinness

The meat in this stew is the most tender I have ever had. This recipe is a combination of two that I put together, one which I liked the cooking technique and the other that I liked the flavor of. I would suggest testing your slow cooker to see if it cooks hot. Ours does, so 8 hours does it for optimal tenderness. My husband likes it served over plain egg noodles, but I prefer it by itself. -- posted by Chef #1249089

Tomato Vodka Cream Sauce

This is a great recipe for a busy night. It takes minutes to prepare and most people already have the ingredients on hand.
No, I didn't stutter! Two ways of using potatoes in this recipe. Simple and tasty. Excellent recipe for not-so-expert cooks. When the meat is done, so is the gravy. The long slow cooking makes the meat very tender.
Easy Hearty Chili

This is a hearty chili without tomato chunks. If you prefer chucks of tomato in your chili use diced tomatoes instead of tomato sauce. This is just enough for a lunch for my husband, our toddler, and myself, but if we need a bit more I'd go to the 22 oz size of tomato sauce and or beans. Do not leave out the salt since the little bit really brings out the other flavors. IF you making a large pot to have left overs leave out the salt since chili always gets saltier as it stores. I started with another chili recipe I found here, but we made several modifications so I am posting it as is. -- posted by Vyrianna

Creamy Shrimp and Pasta

From Prevention. This isn't the most attractive pasta sauce I've ever made, but it sure is yummy! It is a great use for cooked shrimp, which I often find on sale. The original recipe calls for snow peas instead of green beans (add to pan with shrimp, don't boil) and roasted red peppers instead of fresh. I was worried at first that there was too much thyme, but it comes out nicely in the end. -- posted by smellyvegetarian

Spaghetti Alla Puttanesca, Italian Style

I first was introduced to this recipe when I was reading the book, "Belong to Me", when the main character "would have sold her soul" for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! Italians customarily do not use cheese in this dish; the cheese overwhelms the sauce and makes the anchovies more pronounced, unbalancing all the delicate flavours you just worked so hard to create. -- posted by The_Swedish_Chef

Kamut Salsa Lettuce Wraps With Cojita Cheese Crumbles

Kamut is a type of wheat also known as Krorasan, that is powerfully nutritious - loaded with more protein, fiber many vitamins and antioxidants that "regular" wheat doesn't have. It can be found in natural food stores.
The recipe can be found here: http://lobsterandfishsticks.com/2009/06/10/kamut-salsa-lettuce-wraps-with-cojita-cheese-crumbles/

Becky's Chili

I got this recipe from my friend. I have been making chili for years, and recently made her recipe, and my family raved over how delicious it was. I'll never make my old recipe again. Absolutely delicious. The corn is optional but we really like it. Also, I do not cook the celery with the ground beef so it is a little crunchy, which is what I prefer. If you prefer, cook it with the beef and onion. I make this in a large crock pot, but you certainly could do on the stove top. You also can substitute any of your favorite beans for the kidney beans. -- posted by home4my2

Emily's Easy Cheesy Vegetable Soup

My friend, Emily, shared this recipe with me at my bridal shower. Its a quick, easy, tasty meal for cold winter days. I like preparing it in a crock-pot instead of on the stove to avoid burning the cheese. Emily also told me that while any mixed veggies will do, Veg-All is her favorite and I agree! I use low sodium cream of chicken soup, since left-overs tend to get salty in the fridge over time. -- posted by Chef #1067801

Great Hamburger Patties

I bet I have tried close to a hundred different variations of hamburgers. DH likes things pretty plain (as in only cheese and ketchup on his burger) so our patties have to have enough flavor to stand up (almost) on their own.
Kristen's Kickin' Quinoa Salad

I was recently sold on quinoa and how awesome it is! Gluten free, an almost perfect protein, easy to prepare, the list goes on! This is a combination of two recipes, one of which I altered. The first is from this site, (#16399, Quinoa-Toasted). The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes. We thought it tasted a bit like sushi and loved it! Feel free to add more heat, but this had enough for our family as we've got wee ones. A large portion of the cooking time is cooling time. -- posted by SandwichQueen
