Almond Snack Cake

My oldest son was allergic to chocolate, so I had to find goodies to make without it. These treats filled the bill. In fact, my son is 47 now, so I’ve been making this recipe for a long time! With its great almond flavor, this snack cake is popular at bake sales.
All Butter English Flapjacks

The best home made flapjacks ever, I prefer to use a mixture of jumbo oats and rolled oats but all oats work perfectly except for the instant style powdered type. If you don't have golden syrup you can use honey or a mixture of light and dark corn syrup but the taste won't be quite as good. Maple syrup is too thin but you could get away with using half maple and half honey or other syrup. -- posted by robd16

Vegan Key Lime Pie Filling

This is a tad of a spinoff of a recipe on the side of a Nasoya Silken Creations box. You can skip the vanilla and cut the confectioners sugar a little bit if you use Silken Creations Vanilla instead. I didn't include a recipe for a pie crust because I like it crustless! And for ultimate laziness, you can even mix it right in the pie pan! There are lots of good vegan pie crust recipes on here, or you can buy a premade one. Note that cook time does not include cooling time. -- posted by the80srule

Super Easy Ice Cream!

Here is a simple and delicious ice cream recipe that does not require an ice cream maker! For a different flare try substituting 1/2 cup of the heavy whipping cream with flavored coffee creamer (I would reccomend not using the low fat kind) or egg nog. You can also sub the vanilla for any other flavor extract. Freezing time (cooking time) varies on how shallow your container is. I would sugest using this up within a week for best taste. Enjoy!

Oh You Foolish Cranberry

I don't care for Cranberry Sauce- especially the stuff in the can- but my family loves it. So in keeping with the tradition of making dishes that my family loves I came up with this one. I uses fresh cranberries and it is wonderful on the Thanksgiving dinner table as well as on Ice cream in the summer. This is more of a slightly spicy fruit sauce. I can this in nice jars with a bit of fabric and ribbon, and give it away in gift bags at Thanksgiving and Christmas. This recipe has a myriad of uses including as a topping on Cheese Cake, or as a filling between layers of cake.
Enjoy this easy to make recipe. -- posted by Kat/Chef #838578

Grilled Pineapple, Creamy Nut Date Cheese on Cinnamon Crackers

This is quick and easy, and a make ahead wonder appetizer. Simple store bought crackers - now I like "Cinnamon Wheat Thins," but there are many other brands. Last time I went to the store, there were 4 different brands, and Whole Foods and other specialty stores carry even more. A creamy cream cheese and nut date filling and topped with sweet grilled pineapple. I often serve these little bites on a dessert tray. -- posted by SarasotaCook

“guilt-Free Ice Cream Wannabe”

This delicious low-calorie dessert is a great way to satisfy your craving for a big bowl of chocolate ice cream without blowing your diet. The thickness of the Greek yogurt provides the creamy texture of ice cream for just a fraction of the calories. Also, by using frozen berries, the yogurt freezes as they are mixed in, giving the cool, frozen texture of real ice cream. The Fiber One cereal sprinkled on top provides a nice crunch and textural contrast - enjoy! -- posted by Chef #1453068
