			<description>This is a recipe from the Bagley House Bed and Breakfast.  It is their most requested recipe and is an adapted version of Miss Bobo's Apple Goodie recipe from Lynchburg, Tennessee.  It's very much like an apple crisp. Their recipe gives instructions to clean the dish as soon as possible or reheat adding water and a few drops of dishwashing soap to help remove the caramelized sugar.  I didn't and boy do I wish I had.  The recipe reads 4-5 servings, but because it is so sweet, I cut down on how much to serve. In any case, this particular salad appealed to me one morning so I threw it together and it turned out delicious.  Prep time includes time to boil egg.  While egg is boiling, cut all the rest of the ingredients and it comes together in a jiffy. They're a little crispy on the edges, top and bottom, deliciously soft on the sides, and almost impossible to get wrong.

			<description>I love banana bread!  Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes.  There are tons of low fat recipe options out there but the always take out the walnut.  Removing them will take away from those &amp;quot;scary numbers&amp;quot;  we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping. 
Side Note: Many people use &amp;quot;Splenda&amp;quot; as a sugar substitute, if you get an icky aftertaste try Stevia, like &amp;quot;Truvia&amp;quot;.  I personally prefer &amp;quot;Sun Crystal&amp;quot;, a mix of natural sugar cane and stevia. As it was quite tasty, I, of course, decided I needed to be able to make them at home!  A few tweaks later, here we are. 			<description>Cooked amaranth, berries, maple syrup, cinnamon and a splash of rice milk so much better than oatmeal!!  This has become a staple for me on this Elimination Diet.  I cook up a big batch of amaranth.  Then, throughout the week I can put this together in under 5 minutes.  Great for a quick breakfast or yummy filing desert.  I love the &amp;quot;pop&amp;quot; of the amaranth!  I use the 3 berry frozen mix from Costco.  Frozen fruit is a must for me as I am doing this diet in the middle of winter.  Use whatever non-dairy, non-soy milk you choose.  I like rice milk.  Adjust the toppings to your liking.  Time to cook does NOT include the cooking of the amaranth.

			<description>I first made these pancakes messages for my son's 4th birthday and then for the last day of kindergarten. Both times the kids loved them and ate up the pancakes. You can write on them even when they're frozen, which I think is actually easier. You can write any messages you want or draw any pictures you want. Now I make a whole bunch to freeze, take out what I need and write the message/picture right then for either breakfast, snack or lunch. The kids don't even eat them with syrup! Servings and yield are approximate since it depends on how much batter you have-I double mine and get about 60 or so pancakes.
