			<description>This refreshingly-light summer salad is my absolute favorite way to enjoy vine-ripened summer tomatoes.  It's a quick and easy tummy-satisfying dish on a warm midday when the last thing I want to do is turn on the stove.  The juicy tomatoes, sweet onions and rich-tasting Kalamatas are dressed simply with olive oil, red wine vinegar, fresh herbs, salt and pepper.  If desired, add whatever other garden veggies you enjoy - our family loves cucumbers; or add a slice of feta and some sliced green peppers and you've got a Greek village salad! This historic restaurant is truly where I obtained my love of lettuce salads when I was a youngster. I went with my mother and father, downtown (sometimes even during the week!) to enjoy the great American &amp;quot;classic dinner&amp;quot;. I always felt like a grown-up ordering my own salad, which was made table side. I absolutely fell in love with the big old woodened, seasoned, salad bowls and large wooden forks to mix up the ingredients. I could eat anyone under the table eating one of these salads, and to this day, this salad is a favorite of mine. Just recently, this inspired &amp;quot;Marconi Chopped Salad&amp;quot; showed up in the &amp;quot;Baltimore Sun&amp;quot; paper by Brucie White who answered a request for this recipe. Although &amp;quot;Marconi's&amp;quot; never officially published this recipe, Mr. White has tried to put together the components that were so inspired for so long in memory of this great establishment. I think it is originally from  'cooking light'.I loved it, after I doubled the garlic, used extra parmesan,and added a lot of extra salt &amp;amp; pepper. I also added extra olive oil, and just a dab of red wine vinegar. Use the fresh parmesan, as it makes the dish special. Great way to use up those last few tomatoes in the garden! 
preparation takes more time then the actual cooking does. Its guess work on my part.

			<description>This is a filling, low points salad. If you really want to make it lower points, cut the amount of couscous you use (my usual couscous is 9 points per cup). I actually use 1/3 cup couscous for 3 points and leave out the olive oil from the dressing to make it really lean. As written, this recipe provides a total of 12 points but using 1/3 cup couscous and no olive oil gives 3 points only. Serves 2 as a lunch or up to 4 as a side dish. Cook time includes half an hour for the salad to chill in the refrigerator. 			<description>I think I got the original idea for this recipe from a South Beach diet cook book, but have modified it throughout the years.  This is a good snack to bring with you to work.  When I don't have cherry tomatoes on hand, I sub two or three sliced roma tomatoes (with a bit of shredded mozzarella sprinkled on top instead of the chopped cheese stick).  This makes a lot of &amp;quot;juice&amp;quot; if let sit for 30 mins or longer, so sometimes I'll serve this over a bed of romaine (it's my boyfriend's favorite &amp;quot;salad dressing&amp;quot;).  I use dried herbs, but I'm sure fresh would be amazing!  (I've tried starting several herb gardens over the years, but now that I am finally in a house and settled in one place, hopefully I'll be more successful!) You will be surprised and delighted...the juice from the tomatoes combines so well with the Miracle Whip, you'll never know that Miracle Whip is in it once the flavors have combined. You may be tempted to add something to it, it seems too simple to be good, but try it like this first, I guarantee you'll like it! I make it often for potlucks and BBQ's and people are always amazed at the simplicity of this recipe. Family legend is that relatives from California always made this salad and so it was dubbed 'California Salad'. Can easily be made low/non-fat, but I prefer the regular version. It is also great as a 'relish' on grilled meats, especially brats. This is also a very 'forgiving' recipe...I never measure anything, just throw it together. Just remember the veggie ratio is 1:1:1 and you'll do fine!  **Unless you live in a warm climate and can grow or get locally grown tomatoes all year long, don't bother making this in the winter! It's not quite the same as other vegetable gratins already on RecipeZaar.  Personally, I would make this with less olive oil, the amount of which I specified in the ingredients, but you can use the original amount if you prefer (just convert teaspoons to tablespoons).  This can also be made ahead after assembly and before baking.  Just pre-heat the oven.  Try to buy the zucchini and squash of roughly the same diameter.  I might serve this with bread to soak up the juices.  To make this vegan, omit the parmesan cheese.
