			<description>I wanted something that was cool, crunchy, tangy, spicy and a little sweet that would meet my diet requirements and was not your typical diet food. 

This is my version of a fresh veggie relish/salad that is great alone or when paired with seafood, beef, pork etc...

Perfect in a warmed flour tortillas wrap with some shrimp,  or a lettuce wrap with a bit of Avacado.  It can be used with seafood, chicken, beef or pork as a relish.  Or as I like it, alone for lunch.  High fiber, low fat and awesome taste.    I hope you enjoy it. This is a hit on New Year's day, the legend being that you eat black eyed peas on New Years day to insure health, wealth and happiness.  Not so sure about the wealth, but health an happiness are great.  You can use either fresh or frozen peas, but not canned and can substitue finely diced ham for the bacon. 			<description>Now, we all know how to grill vegetables.  This is my favorite marinade and I make this all the time with local market ingredients. And what is nice is you can use the outside grill, inside grill pan or even just the broiler. I serve this with steak, chicken, fish, or just about anything you can think of and sometimes just as a salad.  It is super quick, easy, and absolutley delish.  Fresh slices of tomatoes (yellow, purple, red and orange; fennel, onions and portabello mushrooms);  a easy quick marinade and what a side dish.  And think healthy. One of my girlfriends makes this all the time since I showed her; on baguettes, with pasta, over fish and just as a side. It improves on standing so if I'm wanting to take it to a BBQ or pot luck dinner, I'll make it the day before then chill it over night.  The brown rice gives it a lovely nutty, chewy texture in a sweet sour dressing.  Everyone will be coming back for more and want the recipe. If you cannot find candied jalapenos, just use one small fresh jalapeno (seeded and minced) and a tablespoon of sugar....it is just as good.  We love curry, so we add more curry powder.  Taste it and customize it to your taste!

You may be tempted to add something to it, it seems too simple to be good, but try it like this first, I guarantee you'll like it! I make it often for potlucks and BBQ's and people are always amazed at the simplicity of this recipe. Family legend is that relatives from California always made this salad and so it was dubbed 'California Salad'. Can easily be made low/non-fat, but I prefer the regular version. 			<description>Tim and I came up with this recipe after having a deli salad that we thought we could make on our own...and better. This is a very versatile recipe.  I have served it on a bed of greens and have added chopped grilled chicken on occasion.  You can also add a can of quartered artichoke hearts and a jar of chopped roasted red bell peppers. ( Be sure to drain both.)  It's a great day before shopping recipe as most ingredients are canned, bottled or frozen.  Be prepared...this makes enough to take to a potluck. The Owner / Chef was nice enough to share her recipe with me, and had many other recipes that looked wonderful, but this is the only one I asked for. Unfortunately, the Bed and Breakfast is no longer there and the owner can't be contacted. She was a fantastic cook. The cherries with the combination of the pecans and the creamy dressing, just make it a perfect combination.  I love to serve this with a honey roasted chicken, just something light and simple. I try to utilize as many &amp;quot;convenience&amp;quot; items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own.
