Oft Requested Rice Pilaf

Of all the dishes I make, this is the one I for which I get the most recipe requests. A simple but sublime pairing of ingredients and unusual preparation methods that ensure a real taste treat! This rice goes very well with chicken. Switch to beef, fish or turkey stock to pair with those meats. -- posted by Elisa72

Rice Casserole

This is one of my favorite dishes from my childhood. My grandmother would make this dish often and as a teenager I loved it. Although it is traditionally served as a side dish for any type of meat I usually eat it all by itself as a meal. I just season it with black pepper and red pepper and find that it doesn't need any additional salt. The soups are salty and I use salted butter so no need to add more. To me this is the epitome of comfort food. -- posted by Luby Luby Luby

Hamburger Pilaf

This makes a fast one dish "hamburger helper" type meal. Be sure to use a good beef broth as it provides a great deal of flavour for your dish. Sometimes I add sliced mushrooms that I saute with the onion & pepper.
Mama Agata's Lemon Risotto

Because this is such a simple recipe, you have to use the best ingredients you can find. Rich, buttery-yellow cream and plump lemons will make all the difference. Vermouth can substitute for white wine, and lasts forever, even when opened.
Brown Rice Tangi Salad

This is an easy to make family favourite given to me by my mother years ago. A delicious, high fibre way to include more brown rice in your diet. It improves on standing so if I'm wanting to take it to a BBQ or pot luck dinner, I'll make it the day before then chill it over night. The brown rice gives it a lovely nutty, chewy texture in a sweet sour dressing. Everyone will be coming back for more and want the recipe. Enjoy! -- posted by jodz

Quinoa Fritters

I created this recipe when I was on a highly restricted diet for 5 months, but I loved it so much that I adapted it a little and it's now a staple for us. It goes especially well with soup. They are also really good dipped in pretty much any kind of mustard, and my little one year old boy loves them. Feel free to experiment with any kind of rice you have on hand for this. I've used 11 different types of rice for it, and each time it was wonderful. It's a simple side dish, and sure to please anyone that comes through my door for a snack or a meal. -- posted by Canning_Queen

Basmati Cumin Lentil Rice

I went to the Indian grocery and picked up some nice staples, and whipped this up because it was cheap and simple. You can make this vegan by using oil instead of butter, but I like the richer flavor the butter gives in this dish.
Spiced Sirloin Rice (Teta Rice)

My Grandmother (Teta) made this dish as an accompaniment to Chicken, Pork, or Lamb dishes. My son will make a meal out of it on its own. The yogurt and pine nuts really enhance the flavour, but are optional. To truly enjoy this I would not recommend using ground beef. It also very easily reheats and can be frozen as well. -- posted by King Lu

Flexible Risotto

This is my basic rice recipe. I like it because I can throw whatever's in the cupboard in or just make it with onion.
You can add about a 1/4 cup of any kind of veggie you like to the onions when you sauté them to add flavor. I’ve added mushrooms, carrots, broccoli, bell peppers et cetera to the onions. It can be made with cheese or without. I like to use Parmesan but have used cheddar, provolone, or mozzarella in a pinch. I find it’s creamy even without any cheese. Careful not to over salt, you’ll ruin it. Using broth made from bouillon is way too salty for me personally. Enjoy! -- posted by ohNeiko

I have been using this recipe for years now. I cannot recall where the recipe comes from, maybe a Joy of Cooking cookbook? I've searched the internet and can't seem to find this recipe anymore. I am posting it here for safe keeping. I usually make this for a holiday side dish and can easily be made vegan by using vegan butter. Cooking time includes time to cook the rice. The rice can be made ahead of time.
Roasted Acorn Squash With Wild Rice Stuffing

Acorn squash is a satisfying side when roasted and topped with a pat of butter and a drizzle of maple syrup, but filled with a hearty stuffing of wild rice, pecans, and cranberries, it’s a meal in itself. Loaded with comforting flavors, this dish brings fall home, but it can be made any time of year.
The wild rice mixture can be made up to 2 days ahead; keep it refrigerated in an airtight container.
You can make the stuffing up to 6 hours ahead; keep it covered in the refrigerator.

Holubsti--Ukranian Cabbage Rolls

I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints. While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked. This recipe comes from me combining elements of two or three different recipes that I found. The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well. If I want to do a homemade sauce, I usually do it a day or so in advance.,

By omitting the meat, this can be a vegetarian dish. By also omitting the sour cream and using margarine instead of butter, it can be vegan. -- posted by CorianneW

Arroz Poblana

This is a recipe from the Two Hot Tamales, modified a little, by leaving out a sprig of finely chopped epazote, an ingredient that would be hard for most to find. I like to serve this Christmas Eve with Pork Tamales and a very thick Chile Verde. Let me also add, top it with an over easy egg for breakfast, YUM! This can be spicey depending on the chilies. And in the case you want to lighten the fats, oil may be substituted for the lard. -- posted by Chef #1499071

Left over (Leftover) Fried Rice Latkes or Pancakes

I had a lot of fried rice left over from a big Chinese feast I made and needed to change things up a little. I made these little pancakes and the family loved them. They are nice and crispy on the outside and soft on the inside. We dipped them in duck sauce but I'm sure dumpling sauce, mustard or any combination of your favorite would be great. They are yummy by themselves too. These could also be good hors'd' oeuvres as they are passable as finger food. My serving size may be off since I didn't really count how many I got and I made 2 + batches anyway. This easily doubles if you happen to have more left over. You can use 1 egg for 1-2 cups of rice. The point is just to get it to all stick together. -- posted by Ilysse

Hung's Clay Pot Rice

Recipe by Hung Huynh, a student at the Culinary Institute of America in Hyde Park, New York was a Top Chef winner. Hung Huynh learned to cook with the Chinese trinity - GGS = ginger, garlic and scallions. He uses all three here to flavor this earthy, mushroom-and-bacon-studded clay pot (without the clay pot) rice.;) It was fun trying this type of rice in the dining room and seeing the people's reactions - they either loved it or weren't convinced by it.From: Top Chef Winner's Tips, Hung Huynh - publlished 02/2008 edition of F&W Magazine. There is an hour soaking time for the raw rice.It makes a nice side for chicken or fish - we tried it with chicken tenders (lightly seasoned and done on the grill) and sweet peas.:) -- posted by Manami

The turmeric adds a wonderful golden color to this healthy brown rice dish. The spices add lovely flavor and although you don't eat the leaves, cardamom pods or cinnamon stick, leaving them in makes the dish look very authentic and pretty.
Perfect Spanish Rice

I was taught how to make this dish from my mother-in-law, a native of Guadalajara Mexico. The rice is moist and full of flavor and you can add cooked and shredded chicken and peas for a complete 1-dish meal. Great for potlucks, dinner parties and side dishes to your favorite burritos or tacos. This recipe is relatively simple to make and inexpensive.
Fragrant East Indian Basmati Rice

This is my recipe for the perfect side-dish of any Indian cuisine entree... it can be prepared two ways -- as a white rice which is better for dishes with sauces, such as chicken tikka masala -- or as a curry-seasoned yellow rice, which serves well all on its own. I've left plenty of room here for creativity, as I feel everyone is their own best chef!
Wild Rice, Cherries, Apricots and Cheesy Stuffed Acorn Squash

Easy nice comfort food. Acorn squash stuffed with wild rice, cherries, pecans and a creamy cheesy topping. I prefer a blend of wild and white for this, but you can really use any rice if you don't like wild rice. And hey, this is the time to take advantage of the boxed rice. Uncle Bens is what I use, but there are many brands available, and I just use the quick cooking kind, but any will work. My favorite is to serve this with roast chicken, but if you want something lighter ... serve with a fresh green salad topped with roasted pears. -- posted by SarasotaCook

Tex-Mex Rice from the Rio Grande Valley

This rice has been passed down in my family for at least four generations. The cumin is the key to this recipe. Use whole cumin, freshly ground. Ground cumin looses it's flavor quite rapidly. If you must use cumin purchased already ground, try throwing in an extra teaspoon. Also, this rice is cooked in a large skillet, rather than in a pot. -- posted by Chef #1522879

Ginger Fried Rice

This looked awfully good, simple, almost perfect! I made this last night and my BF and I were very pleased with the outcome. If possible, use leftover rice as fresh rice will be too moist. Leftover rice from Chinese takeout works well too. After making the dish the amount of garlic didn't seem excessive to me, but use your judgment. Courtesy of Mark Bittman, the minimalist, from today's version of the New York Times. I reduced the oil as it seemed excessive. Use 1/2 cup if you'd prefer. For a vegan dish, omit the eggs.
