Low-Fat Black Bean-Pasta Salad (Vegan)

This colorful creation has a lot more flavor and a lot less fat than traditional pasta salad. It's easy to throw together, and with lots of vegetables and vegetarian protein it can be served as a light entree or a hearty side dish, perfect for potlucks, picnics or packed lunches. It can easily be made gluten-free by subbing gluten-free pasta. -- posted by Prose

If I could only eat one thing for the rest of my life, this would be it!
A wonderful way to use zucchini and tomatoes! It's great to sit around the table and eat good food, made with love! Feel free to use yellow squash instead or with the zucchini! Adapted fromKatie Brown Entertains cookbook.
Easy, fast, creamy cheese tortellini! With butter and creme fraiche, it's gotta be good! Throw in some fresh herbs and garlic and it's done.
Easy Italian Salami Pasta Salad

This is a recipe that is easy to make from ingredients that are often in the fridge/ storecupboard. If it is served straight after the minimum 30 minute chill time, you may find that there is a lot of dressing in the salad- this is so that it doesn't dry out if it is stored in the fridge for a few days. Serves 4 as a side dish but this would also make a good take-to work lunch or potluck dish. -- posted by Shuzbud

Cheddar & Vegetable Pasta Bake

Soooo good! I found this in a Sargento Cheese Ad sometime in 1996. It tastes like veggie lasagna, could be a vegetarian main dish or a side for dinner. Or a Lenten specialty. I did have to thin the cream sauce out before I baked it because the dish thickens up quite a lot in the oven. You can use penne or other pasta but the bowties are really pretty. You can find a picture on the Sargento web site. -- posted by Jezski

Eric's Pasta Salad With Tuna and Peas

This recipe came about at the last minute on Memorial Day. I needed something to take a to a barbeque, but didn't want to go to the store. My husband suggested shells, tuna and peas, all things we had on hand. I thought, ewww, sounds gross in the heat, but, I whipped it together. It was a huge hit. So much so our kids, my sisters and niece request it frequently. I'm estimating the measurements for the dressing, as I don't usually measure. -- posted by nanner18411

Italian Broccoli & Pasta

This quick, yummy, fairly healthy recipe came from the internet (can't remember the site) and I modified it to our families taste. My Italian hubby grew up on this (although I make it a tad differently). We eat it as a main dish, although you could easily eat it as a side for any kind of meat or fish. Adjust the broth to your preferences, my husband likes it soupy, so this version has a lot of broth. -- posted by hmtheLords

Vegan Spaghetti Casserole

This is a nice change from the typical burger or parmesan topped spaghetti sauce. Easy, tasty and the kids like it! I also like that it is a one dish meal. You can use any small pasta in place of the wheat. I use home canned tomato puree but you can replace that with two 28 ounce cans of tomato sauce and 2 cups of water.
Israeli Couscous, Tomato and Mozzarella Salad

My modifications to #116054. The Israeli couscous really makes this a wonderful salad. A small round pasta such as Pearl Pasta can also be substituted. Can be served right away, but best if refrigerated for a few hours. Great for using up tomatoes and basil from the garden. If using larger tomatoes, dice and drain prior to mixing. -- posted by Chef #609434

My Marinara

This marinara is a offshoot from the recipe I found in the most recent issue of the "best of the best from florida" cookbook. I love this recipe because this pasta sauce has sustinence. This recipe yeilds about 5 1/2 mason jars of marinara. Great for gifts or to keep in the freezer.
NOTE: when using the canned tomatos opt for whole because the diced tomatos have a weird taste because of what is used to hold them together.
Also I dont measure the herbs so use them at your discretion. -- posted by Crazy4Curry

Cold Pesto Pasta Salad

This recipe was submitted to Semi-homemade magazine by Courtney Dollar. It is a great accompaniment to a picnic, backyard bbq or anywhere you need multiple dishes that are easy to make and go well with a variety of foods. Super with chicken or sandwiches. If you substitute tri-color pasta it makes it even more colorful when matched with the fresh vegetables.
You can add onions for more flavor but it is good without too.

This recipe was handed down to me by a friend I met years ago. She was born and lived 20 years in Italy before moving to the states and this was Mom's favorite recipe. Apparently, this pasta dish was a very common side dish to many Italian dishes. It is extremely light but so full of flavor, and definitely not very much too it. Serve with some grilled seafood or chicken and it is a great quick side. As the pasta releases its starch, the dish becomes delicately milky. Instead of finishing the dish with a knob of butter he folds in fresh goat cheese, which turns creamy in the gentle heat. Here, Brenan uses a small tube-shaped pasta called ditalin, but any small cut works. From: Strategies for Cooking with Cheese, Pairing of the Day, F&W Magazine, Published October 2008. Wine Pairing: Jason Miller, wine director at Picholine, pairs this recipe with the 2006 Charles Joguet Cuvée Terroir, a Cabernet Franc from Chinon in France’s Loire Valley. When grown in Chinon, this red grape tends to have herbal, spicy notes that make it an ideal match for goat cheese as well as tomatoes. Another good Chinon to look for is the cherry-inflected 2006 Marc Brédif. -- posted by Manami

Spring-Summer Ziti

A yummy recipe from Rachael Ray's Big Orange Book. She got tired of living half of the year without her ziti, so came up with ziti lovely in flavor! A light tomato sauce with tarragon and basil surrounds the ziti at the bottom and on the top of the serving dish. The pasta is tossed with asparagus tips, sweet ricotta, tender peas and Parmigiano. Orzo is easier to work with than rice. You can cook it 3/4 of the way and hold it, chilled, in the refrigerator and add the last half cup of broth and half cup of water the next day.”

Spicy Macaroni and Cheese

From foodnetwork.com. This is the easiest way to make homemade mac and cheese that I've ever come across...in fact I've been altering all other mac and cheese recipes to reflect the method of prep in this recipe. I make this when I've got 15 minutes to throw together a meal (not including cooking time.) It doesn't hurt that this is a REALLY tasty macaroni recipe. Can be served as a side dish, but we're veggies so we usually eat it as the main dish. Hope you enjoy. -- posted by I Cook Therefore I Am
