			<description>This recipe is from Gourmet June 2005 : Written as stated.

Chef Note: I have cooked these stove top by just quartering and adding ingredients to a saute pan. These are great mushrooms to jazz up that grilled Steak! Very easy too :)  I used the (jar) ground spices and skipped roasting /grinding them and the flavor was still wonderful.(sometimes adding more butter if topping a steak) I have made this recipe so many ways- on outdoor grill, indoor grill,  in saute pan, with portobello's...........Everyone always likes them- they have a nice little kick to them.
Special equipment:

			<description>This is a great side dish or can use as entree.  Terrific folded in a tortilla, even cold.  Have also put on sub rolls with cheese for a vegetarian entree.  I often double since this has so many uses later in the week for meals.  Have also made a cold pasta salad with these chopped or a hot pasta dish topped with parmesan and added cooked cubed chicken.  Use your choice of vegetables (asparagus, green beans), but this is what I like. I do not recommend making it in the oven.  Although it can be done successfully, it takes about twice as long to cook using raw potatoes.  Using cooked or partially cooked potatoes does not give the sauce a chance to thicken properly. And love this recipe, adapted from one by Nino Zoccali, that I found in the September 2009 issue of the 'BBC Australian Good Food' magazine.  Nino comments that he never peels the skins from mushroom caps &amp;quot;unless they are damaged or stained and (that) unlike many chefs (that he likes) to use the mushroom stems - as long as they're tender.&amp;quot;  Ah, great, I thought, before trying this recipe!  Perhaps it's uncool, but I only peel mushrooms if the recipe persuades me of the need to do this, and I generally use the stems. 			<description>I tasted these first at a Saturday Farmers' Market at Stellenbosch (near Cape Town). The lady who sold them had several types of mushrooms on her skewers and grilled them over coals -- so use as many types of mushrooms as you can get -- or one type only, they'll still be good! Having enjoyed them once again at the Market, I imitated them, but I think my marinade is better than hers!! Quick and easy, and grill along with the meat. On hot coals or charcoal this takes only a few minutes -- do not try and get them to be soft, as they'll break up. Put them on with the meat, and turn them gently with tongs, as they shrink and can slide off the skewers easily. If they catch here and there, no matter. 			<description>I got this recipe from the CopyKat website and I'm posting it here for safe-keeping and to add to my ever-growing list of recipes to try.  I have not made it yet, but a lot of people did say it was delicious.  Some people said they sliced the mushrooms and some said they left them whole.  One person said she doubled the mushrooms because they did cook down quite a bit and also added sliced onions.  I guess the sky is the limit as to what variations you can dream up.  I think they would great as a topping for a grilled steak.
Edited 12/21/09:  I did make this last night and they are indeed yummy!  I can see the need to at least double or triple the recipe as they do cook down an awful lot.  I haven't experimented yet with increasing the mushrooms to say 2 pounds with 1 stick butter &amp;amp; 1 pkg ranch dressing mix but I think it can be successfully done judging by the amount of liquid in the pot.
