Broccoli Casserole With a Kick

I came up with this when I had planned to make a broccoli casserole and discovered that I didn't have any cheese! I went digging through my cabinets for something cheesey. I found a can of nacho cheese sauce. I figured it would work. It was very good in the casserole and just gave a light Kick. -- posted by Chele D

Macaroni & Cheese (Soho Grand Hotel, Nyc)

This recipe was shared by a co-worker who found it in a newspaper. It was touted to be the recipe for the famous Macaroni and Cheese served at the Soho Grand Hotel in New York City. There is another recipe posted on this site that also claims to be the Soho Grand's recipe, but it's different. I've never been to the Soho Grand, so I can't say if either of them are the right one, but I can tell you that this recipe is absolutely delicious. One of the best mac and cheese recipes I've tasted to date. -- posted by PanNan

Creamy Spinach Pasta Casserole

I had a bag of frozen spinach thawed and wanted to make regular greek spinach rice, but then my brain got toggled with cream and cheese and mushrooms and pasta for some reason, one thing led to another and the creation of this recipe happened. It was enjoyed, so if it sounds like something you would like, go along and play around with my recipe and tell me about it.
Verdict: Not bad. It was a tad undersalted for my taste but i think in general its better than over salted. And you cant tell how salty the cheeses would be. So i would stick to the amounts of salt and just add salt while you are eating if needed.
Optional in section B: you could add some chopped whole canned tomatoes - 1 cup. Also for those who prefer some meat in this dish, in section B you could add some cooked ham or turkey.
Serve with a nice vinegrette salad of cucumbers, olives, tomatoes, lettuce.. -- posted by Alfrancis

Opie's Cheesy Tater Tot Casserole

I created this recipe over time in homage to a religious experience I had when I fist experienced it from Opie's BBQ in Spicewood, TX. I've since eaten this casserole there again, and my version is WAY better! Some things to note: Ore-Ida tater tots have lots of salt and seasoning; typically off-brand do not. You really don't need to add any salt for the Ore-Ida tots, but I still add a bit. I would probably add over a tsp for off-brand tots. Also, the onions, peppers, and french fried onions are all totally optional things that I just like. So long as you have the tots, sour cream, soup, and cheeses, this will be a pleaser! Also, if you don't LOVE cheese like I do, you could probably cut that in half ;-) -- posted by Sobiedaddies

From "The Busy Family Cookbook." My whole family LOVED this. I was sure I had olives in the pantry, but didn't, so had to leave those out. I also topped with cilantro (I pretty much put cilantro on any food remotely Mexican, lol.) For a main dish, you can add a pound of cooked ground beef or turkey. I think next time I will add some black beans too.
Vegetable Casserole With Zucchini, Mushroom & Tomatoes

I was looking for a healthy lasagna alternative and couldn't find many options, so I made up this vegetable casserole. If serving it as a main course, you may want to add some extra protien - a layer of cubed extra firm tofu or ground veggie "meat" would be great. Also, if you prefer a more cheesy casserole, you could sprinkle additional shredded mozarella on top about 25 minutes into cooking time. -- posted by Katie In Miami

Chard, Onion & Gruyère Panade (Bread Casserole)

This is a delicious, decadent and luscious French "bread casserole" from "The Zuni Café Cookbook" that you will want to make again and again. It's a great use for stale bread and a very forgiving recipe, you can improvise with other greens and cheeses.
As with all panades, you may need a little more bread, or have some left over; same with the liquid, depending on the size and shape of your baking container. If you have more time, you can cook this at 250°F, for about 2 hours 45 minutes; the slower the bake, the more unctuous and mellow the results.
If you have leftovers, the Zuni Cafe's Chef Judy Rodgers instructs: Warm about 1 tablespoon extra-virgin olive oil in a nonstick skillet over medium heat. Slide in a scoop cold panade and press gently to make an 2-inch-thick patty. Fry gently to make a golden crust, about 3 minutes, then fry the other side. It's also great rewarmed in the microwave. It is actually not difficult to make; the instructions are just very detailed. You can skip the stovetop step and still get great results. Enjoy! -- posted by blucoat

Baked Macaroni & Cheese

Here's a classic mac & cheese recipe given to me by my (would-have-been) mother-in-law many years ago. It has become a family favorite, and I get asked to make it nearly every Thanksgiving and Christmas. It makes enough to feed a small army!

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

Leftovers can be easily cut into squares, wrapped with wax paper and frozen. Then just take one out and nuke it for a great side to go with a sandwich. -- posted by Chef #1299589

Flavorful Potatoes Ham Scallops

This potatoe dish is made with simple ingredients but full of flavors. A type of dish good on it's own or main dish with a salad. Potatoes, ham, cheese, and oh...lots of cheese...after a long day of working and taking care of my boys...this is the dish to feed hungry mouths. The results won't be disappointing!

I came up with the recipe because I wanted something simple but full with flavors and feed a lot of people.

NOTE: You will notice I did not add salt because the ham and cheese already have salt. If salt is added – the dish may be too salty at the end. -- posted by Chef #393272

Ultimate Broccoli - Blue Cheese Casserole

This recipe has been slightly modified to suit the taste of people who prefer a little more taste in the casserole. Other recipes for Broccoli and Blue Cheese casserole are often runny, have only a slight flavor to them, and over cooked broccoli.
We make this at Thanksgiving, Christmas, 4th of July, and other special occasions.
Chicken Salad Casserole Baked Up

For all those fans of my Chicken Pot Pie recipe....you'll live this one too! The real name of the recipe is Hot Chicken Salad. I got this recipe from a book called The Complete Guide to Country Cooking. I have been asked about this recipe so often and about what's in it that we call it the " What's In It " casserole! This is a great potluck addition or light luncheon and can be assembled 24 hours in advance. I hope you enjoy this wonderfully light and comforting meal/side.
My Kids Finally Ate Broccoli!

Roasted broccoli with a few familiar ingredients is what it took, but they ate it, liked it, and asked for more. I wish the same success for all you moms out there; that's why I'm posting. Good luck! Note: You could certainly use fresh broccoli if you have it, but I usually have a frozen bag on hand and it works great. I usually prepare these and bake at same time something else is cooking (like roast chicken). This is basically an oven fries recipe using broccoli instead. We also do this with sweet potatoes. -- posted by kc in la

This is the easiest way to make homemade mac and cheese that I've ever come across...in fact I've been altering all other mac and cheese recipes to reflect the method of prep in this recipe. I make this when I've got 15 minutes to throw together a meal (not including cooking time.) It doesn't hurt that this is a REALLY tasty macaroni recipe. Can be served as a side dish, but we're veggies so we usually eat it as the main dish.
Snobahr's Baked Mac 'n Cheese

My family adores this, and it reheats quite nicely. This is *NOT* a low-fat recipe. I use cream when I have it on-hand, or a combination of cream and milk. I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. I also use whatever small pasta I have onhand - macaroni, rotini, shells, etc. -- posted by SnoBahr

Wild Rice and Mushroom Casserole

Unable to find my go-to recipe for wild rice casserole, I adapted Creamy Wild Mushroom and Wild Rice Casserole (Thank you, SarasotaCook, couldn't have done it without you). You can use fresh herbs in place of dried ones and add ground nuts instead of hemp seeds (also sold in my area as hemp hearts). I used fresh button mushrooms, but any fresh mushrooms would work. I used Newfie savoury instead of parsley or regular savory. The French-fried onions are the ones you buy already cooked. I get mine at the Indian food store where they are less expensive. This is a tasty casserole that can go with just about anything. (Also, on a frigid cold prairie night, a hot casserole on your lap will keep you warm all the way to the potluck dinner!) -- posted by MA Blossom

Deluxe Cornbread Dressing Casserole (Big Batch)

An old family recipe that's been tweaked little by little over the last 100 years. This makes 2 large pans about 1/2-3/4 filled. To relieve holiday stress make the pre-cooked dressing the week before Thanksgiving and freeze. Use one pan for Thanksgiving and one for Christmas. Begin defrosting 2 days before in the refrigerator. I split the prep process between 2 days. On the first day make the cornbread, boil the fryer, pick the meat and save the broth. The second day assemble and freeze. For OAMC split dressing into even smaller portions; may need to reduce bake time.

Homemade Turkey Stuffing

This is truly a crowd pleaser and holiday favorite and have been making it for years now.
People like it as it is crispy and absorbs turkey gravy to make a wonderful combination. They also like it as it is NOT cooked inside the bird, but on its own in is own pan. Easy to make, great tasting, great addition to the traditional turkey meal either at Thanksgiving or Christmas.

Mushroom Green Bean Casserole

A french-style green bean casserole minus the fried onions and using homemade white sauce with fresh mushrooms and onions. This is very similar to Kittencal's Recipe #128905 , but mine does not use water chestnuts or almonds, and mine uses Cheez Whiz process cheese instead of shredded cheddar. You can use two 16-ounce packages of frozen french-style green beans instead if you like. Use more or less cream depending on how thick you like your sauce.
Holubsti--Ukranian Cabbage Rolls

I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints. While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked. This recipe comes from me combining elements of two or three different recipes that I found. The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well. If I want to do a homemade sauce, I usually do it a day or so in advance.,

By omitting the meat, this can be a vegetarian dish. By also omitting the sour cream and using margarine instead of butter, it can be vegan. -- posted by CorianneW

Perfect for Thanksgiving, Christmas, or any large format meal. The slivered almonds add a great texture and flavor to top it off. -- posted by Sean Acierno

Stuffing Bake

I went to a Christmas dinner and this dish was served, but the cook left before I could get the recipe. This is what I came up with to replicate it and it is very close. Makes a lovely side dish for pork, chicken or turkey. -- posted by 2SpiceItUp

Cajun Barbecue Beans

This recipe came from my sister-in-law and is a great side dish for any barbecue. Quick and easy to put together and you can adjust the heat to your liking. We like spicy so I use Stubb's Hot Barbecue sauce for this recipe. -- posted by PleasantNancy

Tasty Cheddar Cabbage Gratin

I modified a recipe in The Joy of Cooking to make this, which suited our tastes better (and used things I actually had in the house!). I think this would even be a hit with people who don't usually like cabbage.

For the "milk or light cream" I used 1/2 cup skim milk and 1/2 cup fat-free half-and-half. I actually used a bag of cole slaw mix (shredded cabbage and carrots) for the cabbage, so this was REALLY quick to make! -- posted by mayness

Cauliflower and Potato Gratin (Russ Parsons)

A simple, satisfying vegetarian recipe than can be served as a holiday side dish or a or as a main the rest of the year. Do be sure to cook the cauliflower well to mellow the flavor. And make the white sauce a little thicker than you might think appropriate -- the cauliflower and potatoes will both give off some moisture while they bake.
