Broccoli Au Gratin (Simple and Easy!)

I think this one is also from Quick Cooking, not sure. Anyway, it is as easy as it is delicious. I do add salt and pepper, by the way. If you like, add 1 cup sliced fresh mushrooms cooked in 2 tbsp of butter. You can also add 1 cup cut up cooked ham. Instead of the broccoli you can use frozen asparagus, cut up and make ASPARGUS AU GRATIN instead. Same for coliflower. -- posted by MillaKette

Broccoli Salad With Sweet Vinaigrette

If you can coordinate making this salad a day in advance, it's well worth trying to do so.
Ultimate Broccoli - Blue Cheese Casserole

This recipe has been slightly modified to suit the taste of people who prefer a little more taste in the casserole. Other recipes for Broccoli and Blue Cheese casserole are often runny, have only a slight flavor to them, and over cooked broccoli.
We make this at Thanksgiving, Christmas, 4th of July, and other special occasions. It is the only dish of our 9-12 other dishes that doesn't ever make it to the refrigerator since it is completely gone on the first pass around the table. It is considered dessert by my 14 year-old son because it is so delicious. -- posted by Chef #1234576

My Italian hubby grew up on this (although I make it a tad differently). We eat it as a main dish, although you could easily eat it as a side for any kind of meat or fish. Adjust the broth to your preferences, my husband likes it soupy, so this version has a lot of broth. -- posted by hmtheLords

Spicy Peanut Thai Vegetable Salad

This is a very easy, amazingly tasty vegetable salad that takes minutes to make. The combination of all the greens, reds, orange and yellows in the vegetables make a wonderful presentation. It's the vinaigrette that brings all the veggies together. You can use any veggies you happen to have on hand; I think it would be great with tomatoes and lightly cooked asparagus. I made it at the last minute for a picnic with the veggies I had in my vegetable bin - everyone raved. I made it the next day for a work luncheon and had the same reviews. -- posted by Eight West

this recipe comes from a cookbook i purchased while living in thailand, as recommended by a native. the key is cooking time for the vegetables. be sure they are not overcooked and too soft. always use fresh vegetables, as frozen always turn out soggy. this is a great side for any dish, not just thai food. to make a great spread, i cook this along with my cashew chicken and sweet & sour pork/chicken. -- posted by gnet

My Kids Finally Ate Broccoli!

Roasted broccoli with a few familiar ingredients is what it took, but they ate it, liked it, and asked for more. I wish the same success for all you moms out there; that's why I'm posting. Good luck! Note: You could certainly use fresh broccoli if you have it, but I usually have a frozen bag on hand and it works great. I usually prepare these and bake at same time something else is cooking (like roast chicken). This is basically an oven fries recipe using broccoli instead. We also do this with sweet potatoes. -- posted by kc in la

Delicious Broccoli & Cheese Crunchy Bake!!!

This is an uunbelievably simple side dish recipe which was taught to me by an American friend of mine who moved over here. We decided to celebrate Thanksgiving with her to help her feel less homesick and she made this for us. I thought it was delicious, demanded the recipe which she gave me there and then and now it is a firm family favourite.

Give it a chance, it sounds bizarre and yes, it is FULL of calories but it is perfect for a family dinner, or holiday celebration like Christmas or Thanksgiving or even Easter.

I've tried this with normal cheese but it just doesn't have that same fix for me!

This is my first recipe listing so here goes nothing ha ha!!! Please rate!!! I'd love any advice on changing or improving this! -- posted by Surflou

Date and Chickpea Cous Cous

This was a throw together I made one night that turned out brilliantly. You can adjust the seasonings to your taste... just remember the stock and cous cous should be equal quantities. Great blend of sweet, sour and spicy. It's quick, filling, nutritious and will keep for a few days in the fridge - nice cold as well. To make vegan just omit butter. -- posted by Malaliu
