Slow Cooker Refried Beans

I've been making this refried beans many times for my Mexican dinner combo, sometimes I use pinto beans, sometimes I use red beans, depends on what I have in my kitchen, whatever beans I use,it's always very tasty. Before I cooked beans on the stove top,and I had to keep an eye on it all the time and add water many times in case it got burned.but now I use slow cooker which enhances the flavor big time and you can do other things while it's cooking, give it a try! -- posted by sasha's kitchen

Marinated Black Beans

This is a very versatile salad. You can serve it as a side dish with any grilled or BBQ'd meat, as an accompaniment for your favorite enchiladas or fajitas, or as a dip with tortilla chips. You can add corn to it as well as diced celery- use your imagination!
Barbecue Baked Beans

These beans are so easy, it's hard to believe they get such raves when served at a barbecue. I'm approximating the measurements, as I pretty much just grab a big handful of brown sugar, squirt the mustard, etc. The biggest difference I see in bean recipes posted is that I drain my pork and beans, and replace it with barbecue sauce. If you are out of brown sugar, use molasses or corn syrup, or even pancake syrup. Try different mustards. This recipe fits in a 13x9 pan, but you can adjust for 8x8 or whatever. Even the temperature is flexible. -- posted by MawMaw Angela

Sticky Rice Wrapped in Bamboo Leaves (Joong or Zhongzi)

A soy-free version of the Chinese Sticky Rice dumplings wrapped in bamboo leaves, known as Joong, or Zhongzi that are traditionally eaten in late Spring for the Dragonboat Festival. You can buy them at Asian supermarkets (like T&T here), and my husband's family makes them, but they all have ingredients my son can't have. Usually these have dried shrimp or scallop, mushrooms, nuts, soy sauce, 5-spice powder, chinese sausage and egg, but yummy as they are, these all make my son itchy, so I improvised! Special thanks to W.K. Leung for his pictorial description here: http://forums.egullet.org/index.php?showtopic=88644 You may want to see the pictures of the various packages he uses. If you don't need to avoid all those ingredients, you'll probably want to follow his recipe, as this one is a little bland (shhh, don't tell my son...)

Wrapping the dumplings is tricky - I had to watch a few different videos, and even then, my first one took about 20 minutes! Eventually I figured it out. My best ones ended up as somewhat rectangular pyramids, rather than the tetrahedrons I usually see.

This is a fairly time-consuming project, most families make it a group activity! Preparation time below is for one person doing it all herself for the first time, with a little "help" from my little man, and does not include overnight soaking time. -- posted by vancouverlori

Purple Hull Peas - Heart Healthy

Rosemary Rice Roll-Ups

Tofu sheets (also known as yuba or bean-curd/tofu skin) can be easily found in most Asian markets, in the refrigerated section - usually next to the tofu. They could probably be replaced by won-ton wrappers or other similar sheet. I recommend cooking the rice in advance, so you don't have to wait for it to cool.
Lambs Quarter (Quelites) and Beans

"Quelites" is a Spanish word for "wild greens." We like to cook with edible weeds, and lambs quarters fall into this category. You can look online for more information about how to identify this plant, which you can use much like you use spinach. If you live in the midwestern United States, you probably have these growing in your yard. I'm not sure where my husband got this recipe, but I like it. -- posted by MarieL

Guinness and Jameson Baked Beans

I like using Guinness in savory dishes, particularly those that are slow-cooked. This summer, I came up with this recipe for baked beans and they were a big hit. Given that this year is the 250th anniversary of Guinness, I thought I'd share and make it slightly more Irish, if not in tradition (these are much sweeter than Irish/British beans), then in ingredients, by making the whiskey Jameson. Feel free to use any whiskey you like (same with the beer actually) and they're still great. For those looking for a non-alcoholic beer substitution, try O'Doul's Amber, which is a really useful cooking beer that happens to be non-alcoholic. I buy my onions pre-diced and frozen and my garlic pre-diced in a jar.

Note that this recipe is made to fill my large oval crock pot and will NOT fit in the standard round ones. Split in half for that. -- posted by JWynia

This is my version of a fresh veggie relish/salad that is great alone or when paired with seafood, beef, pork etc...

Perfect in a warmed flour tortillas wrap with some shrimp, or a lettuce wrap with a bit of Avacado. It can be used with seafood, chicken, beef or pork as a relish. Or as I like it, alone for lunch. High fiber, low fat and awesome taste. I hope you enjoy it.
Easy Punjabi-Style Chickpea and Potatoes

I came up with this when I was in the mood for spicy potatoes, and immediately thought of my favorite side dish at the Jackson Diner buffet. This is a great sidedish but I also like it as a main meal too, with some rice or naan. Green peas would work in this recipe too, either as a third main ingredient or to replace the chickpeas, but I love the richness of the chickpeas and couldn't get over not only how close it was to Indian restaurant quality, but also how simple and quick it was to make! By accident better yet! You'll find it hard to believe it's homemade and from canned food better yet. The taste is very hot and spicy, and what I love the most is the way the kick sneaks up on you after a minute! :) Important note-- I created this dish by accident so I just ballparked the spices before tweaking measurements. This yields about 4 cups (I'd have about a 2-cup serving with one more leftover for the next day), so if you're planning on a potluck, larger amount to cook for your family, OAWC/OAMC, etc. you might want to use the multiplier on here to figure out the correct proportions for the ingredients. -- posted by the80srule

Easy One Pot Lentils and Rice

I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. I hope you enjoy this as much as we did! -- posted by Chef #1082457

Cuban Black Bean Vegetarian Feast

After carefully perusing the other Cuban black bean dishes here, I decided this one is different enough to offer. Served over brown rice, with all the toppings, it's a power-packed veggie plate!
Black Eyed Pea Balsamic Salad

I got this at a farmer's market in Texas. A chef from one of the local resturants was demonstrating how to use the veggies of the season. This is a hit on New Year's day, the legend being that you eat black eyed peas on New Years day to insure health, wealth and happiness. Not so sure about the wealth, but health an happiness are great. You can use either fresh or frozen peas, but not canned and can substitue finely diced ham for the bacon. Good eating. -- posted by liral

Chuck's Daddy-O Beans

In 1990, I was fortunate to get involved with a great family who gave me a home and a place to feel safe (thanks, George) and pretty quickly, I came to think of Chuck as "dad". I don't know where he got this recipe or how much trial-and-error was involved, but whenever the family gets together...these are always at the top of the request list. I recently got it from him as part of an online recipe exchange. The secret is the flavor of the teriyaki sauce cooking down and bringing the whole thing together; he prefers the brand sold at Costco but use the one you like the best. I also think the green chiles are just as essential to the finished dish as well. Add more or less of any of the ingredients to suit your taste and whatever brands you prefer--that is the beauty of this recipe. For extra pizzazz...throw in a pound or so of ground meat...pre-cooked or just broken up. -- posted by Hungry Hogareno

Lentils With Cumin and Asafetida

This is a wonderful Indian lentil side dish. Asafetida has a very strong, musky smell that many people find unappealing. Store it in an airtight container to prevent it from contaminating your other spices, and if you really don't like the smell, keep it in the freezer--I left it in my car for a little while and everything in the car smelled like it afterward. Despite the strange smell, I have not yet met anyone who dislikes the flavor once it's prepared! This recipe comes from a cookbook called Madhur Jaffrey's Spice Kitchen.
Date and Chickpea Cous Cous

This was a throw together I made one night that turned out brilliantly. You can adjust the seasonings to your taste... just remember the stock and cous cous should be equal quantities. Great blend of sweet, sour and spicy. It's quick, filling, nutritious and will keep for a few days in the fridge - nice cold as well. To make vegan just omit butter. -- posted by Malaliu

I usually add ukranian sausage to this, but it also works well with leftover chicken or any type of sausage. It's also good without any meat as a vegetarian dish or as a side. -- posted by Lady Bathory
