Sesame-Glazed Asparagus

This recipe combines the rich taste of sesame with lemon, accentuating the delicious flavor of asparagus. It is quick to make, making it good for any day of the week. A friend of mine from South Dakota said asparagus grows wild in the ditches there....almost makes me want to move from sunny Florida to cold South Dakota! This recipe originally came from a cookbook called "Savory Secrets: A Collection of St. Louis Recipes". -- posted by breezermom

Asparagus and Toasted Garlic

This is by far my favorite asaparagus recipe. It's a great holiday side dish, or perfect for any meal because it's so quick and easy. My best advice is to pick thin asparagus stalks, as the thicker ones are often bitter and don't cook as well. Take care not to burn the garlic -the idea is to lightly toast it. -- posted by Ditterbug

Creamy Asparagus Risotto With Pine Nuts

Based on a recipe out of a little book called "Perfect Risotto", with some amendments.
Indian Asparagus

Don't be fooled by the strange sound of coconut with asparagus. Because of the spices and hot green chillies these ingredients combine to create a wonderful spicy asparagus treat.
This is a popular preparation of asparagus in Southern parts of India.

Asparagus Stir Fry

A simple vegetarian stir fry. This recipe uses roasted red peppers rather than fresh. They are found usually near the jarred pickles. You can also use your own, but I would marinate them in sweet pickle juice (or a vinegar and sugar mixture) before using for extra flavor. -- posted by Ice Cool Kitty

Asparagus and Morel Bread Pudding

Came across this recipe in The Washington Post & am saving to use for Easter Dinner. Full of things that sing spring to me - eggs, asparagus, morels & green garlic. Much of it can be readily available in home gardens - not the morels though. I have my patches throughout the country but, sorry, not telling where any of them are.

Green garlic (immature garlic whose leaves are still green) is simmered with the milk for flavor. I did not try to list green garlic in the ingredients - it was driving me wild. Dried mushrooms will work for this dish as well - readily available on-line if not in your locale.

Prosciutto Wrapped Asparagus

I came up with this dish last night while looking for a prosciutto wrapped asparagus recipe. I prefer to roast my asparagus and I don't care for raw prosciutto, so here's my creation! I wouldn't salt the asparagus because the prosciutto is salty enough. Feel free to season the asparagus with whatever you like: thyme, rosemary, etc. This doesn't just have to be a side dish, it could be finger-food too! -- posted by KPD

Mrs Bice's Asparagus Casserole

Mrs. Bice was a member of my grandparent's church when I was growing up. I remember this casserole from the funeral lunches the UMW would prepare for the family before or after the service. Mrs. Bice's original recipe calls for 3 cans of asparagus spears, but I prefer fresh or high quality frozen cooked. You need enough to cover the bottom of your pan completely. Asparagus lovers like me say "the more the better!"
This was always served as a side dish, but I often make it as a meatless main dish. -- posted by DeniseBC

Poblanos Plus

A Vegetable Medley, with color and flavors that will go well with chicken or pork.

I enjoy most vegetable combinations and I try a variety until I get the appropriate set of flavors and colors. Sometime the combinations don’t work but this one does.

Hints:
I buy odd amounts of vegetables so that I can combine them as the idea “hits me.”
I like blanching, so that dinner can come together quickly!
Salt or lemon juice with blanch water helps retain colors. -- posted by Mr. D

Tempura Vegetables (Also Fish, Shrimp or Calamari Rings)

My daughter has been asking me to make tempura so I've been on the lookout for recipes. This recipe was found in the LCBO's Food & Drink Spring 2009 magazine.
For the best results, make sure you don't over mix the batter. The beer and rice flour produce a delicate, crispy batter. This recipe only includes vegetables but you could also try fish, peeled shrimp or calamari rings.
You can also experiment with other veggies. -- posted by Dreamer in Ontario

Simple, fresh, and bright. Serve warm or cold. Recipe by Melissa d'Arabian, winner of "The Next Food Network Star" 2009. Her show is called "Ten Dollar Dinners with Melissa d'Arabian". This recipe is from "Savory Savings" episode. This would be wonderful dish for a picnic. COOKS NOTE: I had more asparagus then the recipe called for so I doubled the Vinaigrette but used only about 3/4 of it. Since you have the whole lemon anyway, you might as well double it. I did not want to saturate the asparagus but felt it needed more. I also used some of the lemon zest as a garnish and served it chilled. It was wonderful... -- posted by JT'sMom

Pan Roasted Asparagus With Red Onion and Bacon

Published in Cook's Illustrated, March-April 2007. The recipe recommends using asparagus that is at least 1/2-inch thick near the base. If using thinner spears, reduce the covered cooking to 3 minutes and the uncovered cooking time to 5 minutes. Do not use pencil thin asparagus; it cannot withstand the heat and overcooks too easily -- posted by swissms
