Creamy Herb Chicken Tortellini (Or Shrimp/Scallops, or Meatless)

A flavourful cream cheese dip based sauce encasing plump cheese tortellini and a mixture of fresh vegetables. The original recipe called for chicken, but we have substituted shrimp and scallops many times, which makes it just as good. You may also omit the chicken/seafood to make it part of a vegetarian meal. -- posted by LUv 2 BaKE

Lemongrass and Beer Shrimp

This is a dish with layered flavors; a complex taste yet so easy to prepare. I use a light Belgian beer (Hoegaarden) for this one but any light (not necessarily LITE) beer should do (if I was in the US, I might try Corona?). I like to serve these with sesame noodles on the side.
This was the result of a very poorly followed recipe. We were pleasantly surprised with the result and will be checking out local Weight Watchers groups tomorrow. The asparagus can be either fresh or frozen. I used frozen and that worked out just fine. Also, if you like more heat, increase the amount of chili paste. -- posted by luvinlif2k

Shrimp in Lobster Sauce

A friend from work was born in Hong Kong. He went to live with his Master at the age of four. He accepts that learning, and now teaching, kung fu is his lot in life. However, his Godfather operated an open air "kitchen" in downtown Hong Kong. Cooking became my friend's passion. This is the recipe he gave me when I asked him how to make Shrimp in Lobster Sauce. **Doubling the recipe will triple the cook time, but not affect the quality of the dish. -- posted by ATM 67

Shrimp and Egg Fried Rice

This fried rice is a favorite of Hubby's and also was well-received by guests. It's easy to whip up quickly if you need to. I try to use the minimal amount of meat needed to give it good flavor to the whole dish when I make it just for the two of us. You may want to increase to 1/2 lb shrimp if serving to guests.

Hubby actually prefers this using 1/2 lb pork in place of the shrimp, but this is healthier. Sometimes I sub fake crab for the shrimp. It ends up a little sweeter but still good. Scallops are also a delicious option. -- posted by Panthur

Nassi Goreng

(Sometimes spelled Nasi.) My understanding is that this is simply Indonesian for fried rice, so of course there are actually many versions. This is a Dutch version I've had for ages. Chicken can be substituted for the pork. For the baby shrimp, you can use salad shrimp from the fish counter at the grocery store--just don't leave on heat very long, since it's already cooked. Cooking time assumes starting with already cooked rice; cooking time isn't really "passive" since you have to keep an eye on it and stir a lot. You can substitute cooked Asian noodles for the rice and you'll have Bahmi Goreng. -- posted by echo echo

Pasta With Seafood and Cabbage

We threw this together one evening when we felt like eating something a little daring! Has anyone ever heard of cabbage being daring? Of course, we had to go to the store for all the ingredients and then come back and cook it! How much fun. It takes 45 minutes including soak time for the pasta, which is made of rice. Updated: 10/23/06 -so as to clarify Notta Pasta(Brand Name) is gluten-free. Also, use gluten-free soy sauce however, we used Kikoman personal preference. -- posted by Manami

Shrimp Stir Fried Rice

I love fried rice, and have experimented with how to make it for years until finally I came up with my own "secret" recipe that I'm now sharing with you. One secret to good fried rice is that the cooked rice has to be cold. It's best to prepare it the day before and refrigerate, but I've even gone so far as to chill it down in the freezer in a pinch. -- posted by BrendaMarie

Shrimp With Tofu Stir-Fry

This is a recipe I came up with, combining 2 different recipes. I really like this dish because it's so simple to make and healthy too. Don't let the list of ingredients turn you off, it is actually rather easy and fast to make. The list of vegetables can be substituted with what you may have already such as tomato, edamame (soybeans), corn, bell peppers, broccoli florets, bok choy, etc. Tip: Using different colored veggies makes this dish very pretty! Try to cut everything in a similar size as well. I consider this to be a family style dish, which means usually it's served alongside other dishes. So if you are serving more than 2 persons, I would suggest you add more shrimp, then serve this along with sautéed greens with garlic (i.e. spinach), and maybe add a soup to round out the meal. I usually double the ingredients and also double the amount for the broth/soup so we can soak it up with the rice. Hint: If you use dry shiitake mushrooms, use the soaking water for part of the broth (I always use it in soups now since my grandma told me about using it to add flavor to recipes). -- posted by JMigs;0)

Moo Shu Shrimp

This recipe comes from the March 2007 issue of Cooking Light. It is a nice supper for during the week. The original recipe called for 2 tablespoons of the hoisin sauce, which I thought was too much. It has a real strong flavor, and about half that was good for us. I thought the original amount drowned out the other flavors of the recipe. The original recipe also only called for 2 teaspoons of the peanut oil, but I needed more to keep the veggies from sticking. -- posted by Kim127

Honey Lime Cajun Shrimp Stir Fry

This is a recipe I developed myself. The first stir fry that 2 out of 3 of my kids will eat! I took the basic marinade from Recipe #231870 and made up my own stir fry. The vegetables are what I had on hand, so feel free to adjust the veggies to what you like to use. Time includes only 1 hour of marinading. -- posted by WI Cheesehead

Stir-Fry Prawns / Shrimps With Vegetables and Fresh Thai Noodles

This recipe started off as a chicken salad but I wanted something warmer and I had raw green prawns at home so it ended off as a stir-fry. For the noodles I used Fresh Thai Noodles which are yellow in colour and flat, I purchase them in the fridge section of the supermarket. I ate the stir-fry the next day for lunch and the flavours really enhanced. Enjoy -- posted by Chef floWer

Flaming Garlic and Whisky Gambas! (King Prawns - Giant Shrimp)

French, Spanish and Scottish fusion cooking at its best!
Take large gambas (king prawns or giant shrimp) and sauté them in garlic butter.....then add a generous slug of Scotch whisky - set them alight - flambé them for a minute or so...........serve them hot with crusty bread to mop up all the sinful garlic butter and whisky juices - maybe with a salad of mixed baby leaves! Sublime...........divine decadence on a platter! I like these - can you tell??! Allow 2 to 3 per person for a starter and about 4 to 5 per person for a main course, when served with accompaniments. Tactile eating - so provide plenty of napkins or finger bowls! -- posted by French Tart

Spicy Beef With Shrimp and Bok Choy

In my search for recipes using bok choy, I ran across this recipe on Yahoo.com I am trying to introduce my family to new ingedients and they have never eaten bok choy. This sounds like a delish recipe and preparation should be simple. Cook and prep times noted are estimates as I have not yet prepared this stir fry. This would be good served over rice noodles or brown basmati rice. If you try it before I do, please share your thoughts in the review process. NOTE: Shao Hsing (or Shaoxing) is a seasoned rice wine. It is available in most Asian specialty markets and some larger supermarkets in the Asian section. If unavailable, dry sherry is an acceptable substitute. -- posted by Happy Hippie

Pasta With Sun-Dried Tomatoes

A simple sauce tossed with your favorite pasta for a quick yet healthy dish.
Sun-dried tomatoes and mushrooms provide a nice meaty texture for those who choose not use meat. Personally, I add a pound of jumbo shrimp at the end and substitute clam juice or seafood broth for chicken broth.
This meal is served with a caesar salad and Texas toast After the sauce has cooked to desired thickness, just toss the pasta and you are ready for a treat.
My idea, my version. Takes less than an hour minutes to prepare. -- posted by Chef #1168101

Pork/Shrimp Egg Rolls
