The Realtor's Shrimp Scampi W/Spaghetti

This will blow you away. The first time you serve this, you'll be ok because they don't know how great it's going to be. The second time you serve this, you better put it on the table and get out of the way FAST cause they are going to knock you down trying to get to it. It's a recipe that I have developed through years of making it over and over and over. This is the best version I have been able to create. NOTE: This recipe is to be used with 1/2 pound of spaghetti. If you are using 1lb of spaghetti, double the recipe because there won't be enough sauce for a full pound. If you are doubling it, don't double the lemon juice or it'll be too tart, just bump it up to 3 Tbsp. and only bump the lemon pepper up to 3/4 tsp or it will be too salty for some people. MANGIA! -- posted by Realtor by day, Chef by night

Shrimp and Rice Casserole

I haven't made this yet but it sounds yummy to me. Recipe comes from The old Farmer's Almanac. It was submitted by Mrs. Henrietta McClellan. I'm thinking that cream of shrimp soup might be a good substitute for the cream of mushroom soup. At the holiday season this would be pretty made with red and green bell pepper. This casserole is also good topped with grated asiago or longhorn cheese. -- posted by Lorraine of AZ

Jamaican Chilli Coconut Fish and Prawn (Shrimp) Stew

When you're in the mood for something loving with a tropical feel, this does the trick every time! Try to use Jamaican chilli sauce that's made with scotch bonnet or habaneiro peppers. The result is a mild creamy stew with the subtle heat of the chilli just about coming through. You could use a different type of chilli sauce but it wont have the same flavour or special heat that the scotch bonnet provides A delightful alternative soothing way to serve plain white fish. Just wonderful! -- posted by robd16

Cajun Shrimp and Sausage Gravy over Biscuits

A few years back I was visiting friends in LA, and after a long day of fishing, a wonderful dinner with fresh fish of course, the next day we all woke up famished. Well ... biscuits with sausage gravy was the request, but I wanted to do something a little cajun. Our last vacation day, so it was clean out the fridge, but still trying to make something that resembled biscuits with sausage gravy. After a quick run to a local quick stop to get some cream and biscuits we were set. Well this is the creation, and it is really good. The only thing I have changed since I returned is that I love to add some scallions right at the end for a fresh flavor, but otherwise, pretty much the same. Make this for a breakfast/brunch for family this holiday season. And if you don't want to use andouille, use a spicy or mild sausage along with the cajun spices. And if you bake, make your own biscuits. I'm just not much of a baker, so I take a short cut and use a canned biscuit. We served this with some scrambled eggs and Bloody Mary's (it was the last day of vacation). But skip the eggs, and you won't miss them - this is a very satisfying dish. -- posted by SarasotaCook

Baked Shrimp With Long Skinny Pasta

The pasta is the only skinny thing about this recipe. Originally published in Bon Appetit under the name Judi's Baked Shrimp, it seemed to plead for a bed of pasta, so I was happy to oblige. Don't skip the breadcrumb topping; I tried that, and the results weren't nearly as good. If you want to serve shrimp at a dinner party, this concoction will make your reputation, and you'll never again be satisfied with ordinary scampi. Warning: Between the butter and the shrimp, there is nothing remotely low-cholesterol about this dish. Select your victims wisely. The garlic could be problematic if you have a date tonight, too. Blame Judi; it's her recipe and her fault. -- posted by Nadacook

Ginger-Garlic Shrimp With Tangy Tomato Sauce by Kerry Simon

"The marinade for these shrimp is a piquant mix of lemon juice, garlic, ginger, basil and parsely - which would taste just as wonderful with chicken or pork. The dipping sauce is almost chutney-like with chunks of whole tomatoes, lemongrass and lime juice add tang." Chef Kerry Simon is the creator of this dish - F&W Newsletter - October, 2009.
Shrimp Ravioli With a Tomato Vodka Cream Sauce

I have been making these for years - ever since I moved to FL where shrimp is so affordable. They are light and creamy. Wonton wrappers make this easy to make and the creamy sauce is a quick 10 minutes on the stove. I often make these ahead and freeze ... then when I need them, just pop them in some boiling water, heat up my sauce, and dinner is ready. Serve with a traditional crisp salad (I happen to like a grilled romaine salad) and then of course some crusty garlic bread. A nice twist to the traditional cheese or beef ravioli. -- posted by SarasotaCook

Spicy Orange Shrimp Ceviche

Makes a great appetizer, party snack, side dish or main course! Also try using assorted seafood such a tilapia, crab, scallops, etc.

I included the ketchup, but you can use sweet Ecuadorian tomato sauce as traditional or skip it altogether as I prefer! Some also like it on the side and let the guests choose. You can also place a dollop on the side of the martini glass as some restaurants do.

You can flash cook the shrimp if preferred by placing in boiling water for 2 minutes before peeling and deveining them. You can make this with only an hour or so of "cooking" in the citrus juices, as you prefer.

Also...I use 2-3 jalapenos and occasionally habenero for extra pep!

Serve with a crisp but fruity sauvignon blanc (rochioli or girard) -- posted by GoldsmithLissa

Lighter Shrimp Scampi

(From Everyday Food)
Scampi minus the butter and wine. Keep a bag of frozen (raw) shrimp in the freezer and you can have a quick and easy weekday meal on hand. (It just takes a few minutes to quick thaw the shrimp, follow the directions on the bag.) I always have a jar of minced garlic in the fridge and I often sub bottled lemon juice for fresh. I serve with steamed broccoli and a salad. You could also serve with a side of pasta, rice, or garlic bread. -- posted by Pomtini

The Best New Orleans BBQ Shrimp. Ever.

I perfected my BBQ shrimp recipe after cobbling together elements of many other recipes. BBQ shrimp is a classic New Orleans dish, purportedly invented at Pascal's Manale. It's not an accurate name, though - there is no barbecue sauce involved and the shrimp don't go anywhere near a grill. Having fresh shrimp is very important! The Abita imparts a unique flavor, too - if you can get Abita in your area, definitely use it, but if you need to substitute, choose a mild amber ale. Nothing too hoppy and nothing too plain.

This recipe will serve 4 as a main dish or up to 8 as an appetizer.

This is a dish you eat with your hands - messy and fun! -- posted by CptShane

Lemon and Artichoke Risotto With Shrimp

I adapted this recipe from Rachel Ray's 365: No Repeats cookbook. Be careful not to overcook the shrimp or they will be rubbery. The estimate for the amount of liquid will vary depending on the several factors, but you should be safe with at least 6 cups of pre-heated liquid, you can expect your rice to be done once you have added 4-6 cups. Start checking for texture after the 4th cup is added. -- posted by Erindipity

Jon's Spicy Citrus Shrimp

These shrimp are delicious and easy to prepare, look and taste very impressive. They have a nice background heat (that won't make you feel like your tongue is on fire), and the citrus flavour from tangerine, lemon and lime ties nicely with garlic and ginger. This recipe was created by my fiancee, Jon, hence the name. We serve it with toasted white rice (recipe #87090 will do the trick!) and a simple salad with balsamic vinaigrette.
This recipe is broiled in the oven (due to a surplus of snow) but would also be delicious grilled.

Sarasota's Crock Pot Chicken, Sausage and Shrimp

This is an easy put together dish which has lots of flavor. I am especially fond of it because of the wine and tomato base vs. soup based. A key to this dish is to pan sear the chicken first, the flavor is just so much better to me. The shrimp is added 30 minutes before serving which will give you time to make a side of polenta with added parmesan cheese, or you could use rice; and a small side salad. Great flavor with very little work. -- posted by SarasotaCook

Pad Thai

This was adapted from another recipe on this site. (Thanks ms_bold for a great beginning!) I changed the original recipe to suit my family's tastes, to shorten cooking time, and to decrease the fat content. I am primarily posting this to check the Nutrition Facts since we are trying to eat healthier without compromising on taste.

I used the breast meat from a Rotisserie Chicken, but this would also be a great way to use leftover chicken breast.

My children will not eat anything remotely spicy so my husband and I must add crushed red pepper to our plates after serving, but I'm sure this would be even better if it was cooked in.
Sweet Orange Basil Skewers With Shrimp & Scallops

A light healthy start to 2010. Fresh flavors of fresh oranges, basil, shrimp and sea scallops served over my recipe #407149. Grilled outside or inside on a grill pan makes this quick and easy. You can even broil these is you want. Light and healthy! Add some grilled veggie like zucchini or snow peas for a great light dinner. -- posted by SarasotaCook

This is out of the 2004 edition of KCTS Chef's cookbook. It was sent in by Antonio Mauro the executive chef from Anton's Pasta Bar in Burnaby BC. The original recipe called for 20 oz of pasta for 2 servings. No wonder the portions are so big at restaurants. I change it to 8 oz and decreased the half-half also to 8 oz. it was 18 oz. Hope this works. -- posted by TeresaS

Grouper Iberville

Grouper has a mild flavor, somewhere between bass and halibut with a firm flesh perfect for grilling. It's the ideal choice for those that are uncertain about the flavor of fish. If you cannot find grouper, substitute striped bass, mahi-mahi, black sea bass (flakier texture), red snapper (flakier texture), pompano, lemonfish or catfish.
Chumley's Shrimp Skewers

I came up with this recipe the other night when my wife and girls wanted Alyssa's Favorite Fish, recipe# 361646. I didn't feel like fish so I tried this, I think you will enjoy it.
I used whole wheat spaghetti for the pasta, and regular olive oil, you could use what you like.
I was hoping to have some of this left over for the next day but I ate it all that night. I put down 2-4 servings but I ate it in one. Sorry!!
Be careful not to overcook the shrimp. -- posted by Chumleyathome
