Steak Martini/Asparagus Risotto/Braised Tomato Wine Sauce

Bite into a suculent steak and the first thing that comes to mind, might just be the earthy taste of a Cabernet Sauvignon: Louis A Martini! I found this on the LouisMartini.com and Certified Angus Beef site. Fantastic sounding! Have not tasted it as yet; have saved it for my best friend who is planning a large dinner party;).Edited on10/17/2008: The caloric value is high but this is
for a whole meal - steak, risotto, cabernet sauvignon, cream ad infinitum!! Therefore, I am warning you but we tasted this and it was wonderful!! Added a few things here and there but I hope this has made it better - at least we like it!
Simple Microwave Risotto

Microwave Risotto is great because of its forgiving nature; if you forget it for a half hour, nothing is lost. Also, it is a wonderful clean-out-the-fridge, use-your-imagination, I-just-bounced-five-checks recipe. It reheats well too. You can use margarine or olive oil in place of the butter, and you can use apple juice or white grape juice in place of the wine. -- posted by DrGaellon

Spicy Minced Pork Rice Porridge

Rice porridge is a comfort food to many Asians, especially the Chinese. Mix the porridge with different cooked meats and you get an excellent, savoury mixture. In this recipe, the spicy sauce from the minced pork goes hand-in-hand with the "water" from the porridge, so it tastes like a thick, yummy broth. -- posted by Muffythechef

Clay Pot Rice With Chicken

The name says it all ... rice cooked in a claypot, with chicken and/or other meats. The claypot gives the rice a slightly burnt flavour which makes it oh so yummy! This is a popular dish at the hawker stands in Singapore and Malaysia, although it is more commonly made at home. -- posted by Muffythechef

Pan-Fried Sole With Caper-Parsley Sauce and Wild Rice

The sauce is a creamy, slightly spicy complement to the light sole and the earthy wild rice. Be careful trying to scale up as you'll want to serve the sole fresh from the pan, so don't cook more than you can fit in one pan.

Cooking time is based on the assumption that the rice will take about an hour. Otherwise, about 10 minutes. -- posted by Chef Grizzly

Poached Cherry Risotto

I really like risotto. The trouble is that I am the only one in the house that likes it, until now. Everything is better when it is sweet. also, you cannot live near Door County without having a few cherry recipes on here. I used Recipe #229437 #229437 by the lovely and talented Chef #58104 for the cherries called for in this recipe. Yes, I still add the vanilla because my DH loves vanilla. You can skip this step if you use Rita's cherry, since it already is flavored. -- posted by Jess4Freedom

Sushi Rice

I tried making this after watching the Good Eats episode "Wake Up Little Sushi" with Alton Brown. It turned out really great.
Middle Eastern Rice Pudding

Stumbled upon this recipe on the internet in a blog called "Porcini Chronicles", which was posted by one of the blog members - Suzan .The recipe originally came from about.com by Fayed Saad, but she modified it by adding less sugar and adding some salt.Anyways, the whole point is that this makes the most perfect rice pudding anytime you make it, both in flavor and consistency. It is also the best comfort food that you can have on any day.It can be eaten warm or cold and garnished with cinnamon and nuts or with anything that your imagination comes up with. This is one of my all time favourite desserts and hopefully you will like it as much as I do. -- posted by Baker30

Creamy Rice Pudding - Bonnie Stern

"There's too much liquid", you're going to say. Trust me....this will work out to be the creamiest rice pudding you've ever made. Stir once in a while to prevent any rice from sticking to the bottom, and use a large pot to avoid the mixture from boiling over. Short grain rice will produce a creamier pudding then brown or long grain. The cooking time may seem long and tedious, but because it cooks at the lowest setting, it does not need constant supervision. Another wonderful recipe from her Heart Smart Cookbook. -- posted by Diana #2

Oven Baked Parmesan and Garlic Risotto

Classic risotto needs constant stirring but this baked version needs hardly any attention as it cooks gently in the oven. To jazz it up a bit:
When you add the remaining butter and cheese, stir in some shredded roast chicken. Heat through for 1-2min.
Fry 2oz cubed pancetta or smoked streaky bacon with the onion and garlic. Stir in some fresh, chopped basil, thyme or baby spinach before serving. -- posted by English_Rose

Mushroom Risotto With Italian Sausage Sauce

A very nice recipe based on one from the Sunset Quick Cuisine cookbook. Its intro entices, "Moist and creamy, this risotto is laced with mushrooms and crowned with a meaty tomato sauce." I would start with the Italian Sausage Sauce so that its flavors blend while you make the Mushroom Risotto; otherwise, the original recipe says to make the Sausage Sauce while the risotto is simmering for the 15 minutes. -- posted by mersaydees

Cousa Mashi - Arabic Stuffed Zucchini

Cousa Mashi is what you serve the guests you like the most. A bit time consuming to make, but the results are worthwhile. While it is called cousa mashi, you should include some small eggplants and a couple green peppers for variety and to make the sauce taste amazing. Cousa is a squash like zucchini but lighter in color. You could substitute zucchini for cousa. The size for the vegetables should be from 4 to 5 inches long. The recipe comes from my Jordanian mother-in-law, who is renown for her wonderful cooking. In this part of the world, a generous person is also generous with the right spices. -- posted by Cookie Jarvis

Frozen Asparagus Risotto With Bacon

Spring brings us all this gorgeous but pricey fresh asparagus. I don't mind the expense for the pleasure of steamed spears. But I've found that in making risotto, using a frozen product often gives as much flavor, and is easier and cheaper. Step 6 is where I veer away from traditional risotto making - something I figured out when my kids were little and I wanted to be with them rather than stand at the stove, stirring. This early prep saves you at least 10 minutes of on-your-way-to-varicose-veins time. -- posted by Elisabetta47

Arancini Rice Balls

We recently spent 2 weeks on Sicily - 1 in a 15th century renovated winery on the slopes of Mt. Etna, and 1 on the north coast, overlooking a Med. type scene. Earlier we had been invited to dinner with the family of a new friend, where all the women gathered to teach us how to make Arancini !! This recipe is from a book I bought there --"Fragrances and Flavors of Sicilian Cuisine", since no one in the group had sufficient common language skills to accurately copy their recipe. It IS labor intensive -- but just wonderful ! I copied the measurements as listed and did not attempt to convert. -- posted by NurseJaney

This came from the milk calendar. Make sure you use short grain rice for this recipe to get a creamy pudding. The long grain rice won't cook properly and the pudding won't thicken. The apples and cinnanmon are a nice change from plain rice pudding. -- posted by Sweet PQ?

Spicy Tuna Salad Sushi Roll

This recipe tastes very similar to the spicy tuna rolls found in Japanese restaurants, but the best part is that you use canned tuna rather than raw tuna. Don't get me wrong, I love raw tuna; I just don't feel comfortable playing with it at home. I created this recipe when I wanted sushi rolls but didn't have a lot of fresh ingredients on hand. This can also be adapted to use in an asian salad. I plan on putting up that recipe at a later time. Note: the sumeshi (the term for cooking rice in the japanese style) portion of the recipe is copied from Sushiday.com. -- posted by OwlMonkey

Mushroom Risotto

This is one of the first dishes I cooked when I first got married. 'Real' risotto seemed too complicated. This recipe is pretty easy. The ingredients are so simple, but the dish is delicious. I had trouble giving an amount for the mushrooms. You have to decide how strong you want the mushroom taste to be. I often sprinkle the dish with a bit of fresh chopped parsley just before serving. -- posted by *Bellinda*

Four Cheese Arborio Stuffed Red Bell Peppers

I love red bell peppers! They even become better when they are cooked; roasted, baked, fried, pureed. I'll take 'em any way you make 'em. One day when I came across some at a local market on sale for 99 cents per pound instead of their usual $3.99 per pound, I had to buy some for dinner that night. And this is what I was inspired to come up with. Please, please use RED bell peppers... the flavor will not be the same with green ones. This is a good main dish (esp. for Lent) or as a side dish. -- posted by andylynn

Sensational Rice Custard Pudding

This is a very old recipe that was my husband's grandmother's own creation. She was well known for her cooking and baking. I have been making this for over 40 years and always get raving reviews. Once, a cousin gifted me with a very large glass bowl that had 8 smaller serving dishes. She included a note that this was to become 'the family dinners rice custard pudding bowl' as everyone requested that I make it for all our gatherings! For a creamier custard pudding, use Aborio rice or a medium grain rice; I prefer the short Aborio rice. Never use instant rice.

You may wish to use less sugar as this is a very sweet custard pudding, due to the condensed milk. I hope this becomes a favorite of your family too! -- posted by Debaylady

Candy Corn Onigiri (Rice Balls)

For Halloween bento boxes! This is a lunchbox friendly recipe, quick to put together. Prep time does not include cooking of rice, as you can prepare the rice the night before, or use leftover rice. I like cooking my rice fresh in my rice cooker while I fix the rest of the lunches. These would also make good non-sweet treats for a Halloween party. You can also add a smidge of filling to the rice ball before you decorate it, like chicken, squash, or whatever. :) -- posted by CraftScout
