			<title>Boeuf Aux Carottes (Beef Stewed With Carrots)</title>

			<description>A classic French peasant dish, the long slow stewing with carrots and pearl onions gives the meat an unexpected sweetness. Stew beef would be traditional and may be substituted, but the short ribs give it an additional unctuousness from their gelatin. Bone-in is preferable, but the nutrition information comes up wrong, so I listed the boneless first. (This could also be adapted for the crockpot - brown the meat, deglaze with the wine, then combine with the veg, spices and stock in the slow cooker. Cook on low 6 hours, then add carrot coins and cook another 2 hours.) I found stuffed it in a cookbook, got the story, tried the dish, got the rave reviews, and am sharing because a relative said &amp;quot;FINALLY, a new Chicken recipe!&amp;quot;

Don't be afraid to make this for the family dinner for a trial. Great served with steamed rice and roasted brocolli. If you make  chafing pans of this, double the recipe here. You can wing the rest to accomodate any size crowd. It was just around the corner from where I worked, so it was a popular lunch spot.  Occasionally we were lucky enough to find this on their lunch specials menu....Lucky us!  I recommend using a firm white fish....I use amberjack, grouper, or snapper. If you cut all the bloody pieces out of the fillet, you won't get a fishy taste.  The fresher the fish the better! 			<description>A tasty and different way to use some of the Sunday Roast leftovers on Monday! Although I have specified lamb in this recipe, beef would also work very well, it's just that I had roast lamb leftovers when I made these. These rissoles are lightly spiced and tangy - perfect for supper when served with salad, pickles, chutneys and maybe a naan bread or pitta bread to make a sandwich. They are easily made and can be prepared ahead of time and left in the fridge, as they hold their shape better when they have been chilled and are firm. These will also freeze very well; open freeze them before frying on a tray or plate until firm and then pack them into freezer bags or a plastic container. 			<description>This is from Cooking Light, 2006.  I've used duck legs and it works just fine.  I also add Chinese five spice to the duck with the orange zest and garlic.  And sometimes, I turn it into a drunken duck by adding a tablespoon or so of Grand Marnier to the sauce while I'm reducing it.  I serve this beautiful dish with whipped sweet potatoes (with orange zest, cream cheese and Chinese five spice powder) and roasted green beans with shallots. 			<description>This is a great recipe that a friend of mine has been bringing to office pot-lucks for years.  I just got the recipe from him and made it myself.  It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.

  I used whole wheat spaghetti for the pasta, and regular olive oil, you could use what you like.
  I was hoping to have some of this left over for the next day but I ate it all that night.  I put down 2-4 servings but I ate it in one.  Sorry!!
