			<title>Traditional Caprese Salad</title>

			<description>Caprese salad is a great main dish (lunch) or appetizer for a summer dinner.  It goes best with a white wine, and is amazing when preceding a light pasta dish.  When using as a main dish for lunch, double up the portions.

This is a recipe that has been handed down through the generations in my family as long as anyone can remember.  My grandmother (peacefully rest her soul) recalled learning this recipe from her grandmother.  She also told stories of her grandmother recalling learning it from her grandmother.  This is a truly old-world Italian version of this recipe.  Many of the versions that people know have been Americanized or have been updated in some way. 			<title>Chopped Salad by Marconi's in Baltimore</title>

			<description>&amp;quot;Marconi's&amp;quot; restaurant opened it's doors in the early 1920's, and had been a staple on the Baltimore restaurant scene until it closed recently. This historic restaurant is truly where I obtained my love of lettuce salads when I was a youngster. I went with my mother and father, downtown (sometimes even during the week!) to enjoy the great American &amp;quot;classic dinner&amp;quot;. I always felt like a grown-up ordering my own salad, which was made table side. I absolutely fell in love with the big old woodened, seasoned, salad bowls and large wooden forks to mix up the ingredients. I could eat anyone under the table eating one of these salads, and to this day, this salad is a favorite of mine. Just recently, this inspired &amp;quot;Marconi Chopped Salad&amp;quot; showed up in the &amp;quot;Baltimore Sun&amp;quot; paper by Brucie White who answered a request for this recipe. Although &amp;quot;Marconi's&amp;quot; never officially published this recipe, Mr. White has tried to put together the components that were so inspired for so long in memory of this great establishment. I have added my own twist by some additions, but I wish to credit Mr. White for his contribution. 			<title>Honey-Roasted Pear Salad With Thyme and Verjus Dressing</title>

			<description>An elegant and sophisticated salad that makes good use of verjus (verjuice) in the dressing. I use a local blue cheese, such as Roquefort in this salad; however, please do use a local blue cheese of your choice - any creamy or robust blue cheese will marry well with the pears and tart dressing. Verjuice, or verjus, is the juice of unripe grapes. This staple of French provincial cooking, a key ingredient in Dijon mustard, has the tartness of lemon juice and the acidity of vinegar, but the harshness of neither. Its delicate flavour is ideal for everything from stocks to sweet syrups - as long as you know what you're doing. Verjus was also a common ingredient used in English cooking throughout the Middle Ages. I try to make a batch of verjus every year with the green grapes from my non-dessert grape vine - as I love cooking with it. This recipe came from an old copy of Bon Appetit magazine from 2005. You will be surprised and delighted...the juice from the tomatoes combines so well with the Miracle Whip, you'll never know that Miracle Whip is in it once the flavors have combined. You may be tempted to add something to it, it seems too simple to be good, but try it like this first, I guarantee you'll like it! I make it often for potlucks and BBQ's and people are always amazed at the simplicity of this recipe. Family legend is that relatives from California always made this salad and so it was dubbed 'California Salad'. Can easily be made low/non-fat, but I prefer the regular version. It is also great as a 'relish' on grilled meats, especially brats. This is also a very 'forgiving' recipe...I never measure anything, just throw it together. Just remember the veggie ratio is 1:1:1 and you'll do fine!  **Unless you live in a warm climate and can grow or get locally grown tomatoes all year long, don't bother making this in the winter! (Just another idea for dressing this fresh fruit salad up with frills!) This is not only healthy, but it is SO festive and colourful - my photo shows the one I made this Boxing Day (26th December), I usually add kiwi fruit too, but we had run out of them.......oooops! My quantities listed here make enough for 6 to 8 people, but this can be increased as well as reduced to suit personal requirements. I normally serve this with cr&amp;egrave;me fraiche or vanilla yoghurt, but its also wonderful when served naked, the salad that is, not me!
