			<title>No Knead Pumpkin Yeast Bread</title>

			<description>I found this recipe on another website, but there was no printer-friendly format. So I'm posting it here so I and other cooks can print it better. I have changed the procedures to reflect what worked best for me.

Most of the preparation time is letting the bread rise for hours and hours. I made this bread the other day and it was so easy and delicious that I would make it every day. Just let it rise during the night or while I'm at work and bake it when it's convenient. It has a really crispy crust and is soft in the center. To enhance the texture I added 1 tsp of vital wheat gluten for every cup of flour I used. It makes the bread heavier and chewier and helps the dough to rise. All three cups of flour listed in the recipe do not blend into the dough, so try adding flour one half cup at a time. If you want to make plain bread just substitute the same amount of water for the pumpkin.

When letting the dough rise, if it's in a warm spot (say a sunroom) it's good to cover it with a damp towel. If the area is not that warm a dry towel will do. -- posted by &lt;a href="http://www.recipezaar.com/member/247368"&gt;Valeria&lt;/a&gt;</description>

Even chicken strips or ... whatevs. MMMM... o la la Your jalapeno mileage may vary, so adjust the heat accordingly. Keep in mind, however, that the heat is the strongest the day you make the sauce and starts to dissipate gradually the longer it is kept in the refrigerator. I usually start off with more pepper than I would like and let the sauce sit in the fridge for a couple of days before I use it. It didn't give the servings, but I doubled it and it filled my standard soup pot, so I'm figuring 5 (1 cup) servings for the regular recipe.  I adjusted the recipe a bit to add a little more seasoning.  You could make it &amp;quot;cream&amp;quot; of tomato by adding cooked cauliflower in before pureeing. 			<description>I admit, the first time I used a pressure cooker I was a little afraid. I left my studio and stood on the other side of the door to avoid severe burning and disfigurement if my pot of legumes exploded. I called a friend to ask her if I was doing it right. But now I see the pressure cooker like a trusted friend who only wants to save me some valued time. So when I saw this lentil recipe in Veganomicon by Isa Chandra Moskowitz and the preparation time of 1 hour, I was so glad I had a pressure cooker to cut the time by nearly two-thirds, borrowing a technique from the Spanish and the Lentils with Chorizo Sausage Recipe (Recipe #342592). The first thing I did was skip the step where you saut&amp;eacute; the onion and carrots for 10 minutes. It's unnecessary, and you'll find that my method makes a soup with a smoother, more pleasant consistency by cooking the vegetables whole or halved, then removing and pureeing them afterwards. My kitchen has a surplus of brown lentils, so those are what I used. I'm going to keep the brown lentils in the recipe because I don't know if French lentils require more liquid. One thing I want to try for next time, since I used bouillon cubes, is to break them up and try to dissolve them in step 2 rather than prepare the stock ahead of time, and I plan to cut down the salt next time. I find the best way to seed plum tomatoes is to cut them in half and sweep out the seedy parts with your index finger. 			<description>A fabulous recipe from Merrill of food52.com; or actually, her mother... I am not a fan of cranberry sauce with turkey for the holidays, and have always just used gravy - this is an inspired alternative. Here is her description of the recipe's background: 

For years now, on the day before Thanksgiving my mother has made what in my family goes by the slightly unappetizing name of &amp;quot;Tuscan Onion Goo.&amp;quot; Inspired by a visit to a family-owned gem in Florence called Ristorante del Fagioli, this sour-sweet onion confit was originally served to her as an antipasto. She enjoyed it so much that she asked, in halting but enthusiastic Italian, if the waiter would tell her how it was made. He promptly ushered her into the tiny kitchen, where the sweaty, grinning chef himself showed her how to put together the dish. She took mental notes and then came home and recreated it, with a few small adaptations.

The recipe has since become one of my mother's signatures, and Thanksgiving would simply not be Thanksgiving in our house without &amp;quot;Tuscan Onion Goo.&amp;quot; It's a great addition -- or alternative -- to cranberry sauce. While the flavors are very different, it serves a similar role: the sweetness provides a counterpoint to other, more savory sides, and the acid in the vinegar cuts through some of the richness that often pervades the meal.

The confit couldn't be easier to make, although it does require a bit of a time commitment. You can use frozen pearl onions, but it's worth trying with fresh cippollini. My mother insists that you have to be crazy to make it with anything other than frozen onions after the first time, but I find peeling cippollini somewhat cathartic. Once the peeling (or the opening of the bag) is done, you briefly saut&amp;eacute; the onions in a bit of olive oil and deglaze them with sherry (my mother's addition -- the chef at Ristorante del Fagioli used Cognac), then simmer them slowly with some water, sugar, red wine vinegar, raisins and toasted pine nuts, until the onions are limpid and soft and all of the flavors have had a chance to meld. 			<description>This is my highly modified version of Carrot Cake by Making Stuff.
I loved it the day after it was cooked, I don't recommend eating it without waiting 6-12 hours. In fact, If you can wait a couple days, it would be just perfect. The texture and the flavors really benefit from waiting. This cake has a Queen Elizabeth Cake-like texture, because of the dates and coconut. It is quite dense and creamy on the inside, with a nice crunch on the edges. For the spice measures in this recipe : I went by eye, knowing the strenght of the spices I am used to use. These measures are approximate, and feel free to experiment to suit your own preferences. I don't recommend putting raisins or pineapple in this cake, because the acidity of those fruits prevents from digesting the starches well. This cake keeps well in an airtight container in the fridge. It's one of those recipes that's very easy to play around with - roast whatever extra veggies you have around the house, make up new garnishes... Another version I enjoy is using shrimp stock and putting a few sauteed shrimp in each bowl.
The recipe could easily be doubled for a larger group of people, but I find that these measurements work very well for a dinner for 2. While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,

			<description>While this recipe calls for summer vegetables, my brother and SIL prepared it for Christmas dinner 2009 and I loved it.  Good as a vegetarian main dish or a side.  It's not quite the same as other vegetable gratins already on RecipeZaar.  Personally, I would make this with less olive oil, the amount of which I specified in the ingredients, but you can use the original amount if you prefer (just convert teaspoons to tablespoons).  This can also be made ahead after assembly and before baking.  Just pre-heat the oven.  Try to buy the zucchini and squash of roughly the same diameter.  I might serve this with bread to soak up the juices.  To make this vegan, omit the parmesan cheese.
