Creamcheese Muffins

This is a quick and easy recipe which you can adopt too. You can use different kind of fruits, i love to use seasonal things so i would use berries in fall, bananas in winter, strawberries in spring and mango in summer.
You can also use chocolate chips, raisins, nuts or a combination of those to make the batter according to your personal preferances and taste. -- posted by Iceland

Baked Brandy-Cranberry Sauce

I can't remember where I got this recipe, but it did call for putting the brandy in when serving. I had to change that.
Aunt Edna's Persimmon Pudding

This recipe comes from my great aunt Edna, which I got from my aunt Shirley. I always remember it from family reunions but only recently discovered how to make it. After making a couple batches and having them come out just as I remember as a kid, I decided I had to share it with the world. -- posted by Chef Curt

Layered Pear, Feta, Cranberry, Salad With a Balsamic Dressing

This is just a PRETTY salad. I like to serve this in a glass bowl so you can see the layers. Now obviously you can just toss it all together, but for a dinner party or pot luck dinner, this is just really nice. Simple ingredients and it goes together in just minutes. Now I use my basic vinaigrette which you will have a little left over, or if you want just use a good store bought dressing. My secret for this salad is to add a little honey to the dressing that goes really well with the pears and the cranberries. You could always add a little honey to a store bought dressing to achieve the same taste. -- posted by SarasotaCook

Kiwi, Strawberry and Grape Juice.

I got this recipe from 'The top 100 juices' by Sarah Owen, published by Lifetime Distributors, Castle Hill, Australia.
Sarah Owen says "All three fruits in this juice provide a massive infection-fighting boost of vitamin C and can help to shorten the duration of a cold. The kiwi fruit a also contain lutein, a phytonutrient known to reduce the risk of cancer, heart disease and eye disease. Both strawberries and grapes are high in ellagic acid, which neutralizes carcinogens. The tannins, flavones and active compounds in the grapes combine to make them energizing and strengthen the cell walls of blood vessels"
You could make more than one serving, and serve with lemonade and ice in a punch bowl for a party if desired.
I haven't made this yet, as I don't have a juicer, but if I ever get one, this will be the first juice that I make.
Enjoy! :) -- posted by TALIA #3

Berry Yoghurt Smoothie

I got this recipe from Sarah Owen's book "The Top 100 juices", published by Lifetime Distributers, Castle Hill, Australia.
Sarah Owen says "The super-nutrient vitamin C is needed for more than 300 diferent processes in the body, but it is easily wiped out by smoking, pollution and stress. Found in abundance in berries, vitamin C and other antioxidants help to quash the damaging free radicals that are associated with many illnesses."
The original recipe calls for natural bio yoghurt to be used, but any yoghurt will do.
This makes a large amount of smoothie, and if you're making it just for yourself, I'ld recommend halving it.
I hope you enjoy this healthy - but still tasty - smoothie :) -- posted by TALIA #3

Marinated Figs and a Ricotta Custard

Originally, I saw a version of this in Southern Living a few years back and tried it. It was a hit, but I sort of forgot about it. And then I found it posted on a Blog last year and again made it. I have used this probably seven or eight times now and it is a wonderful recipe. Fall flavors, but tangy and sweet and the ricotta custard is light which makes the perfect combination. -- posted by SarasotaCook

Cranberry Walnut Pie

Something Special from Wisconsin. The state fruit is the cranberry, and of course, Wisconsin is the dairy state. The ingredients in this seasonal pie bake up into a wonderful treat for Thanksgiving. Our family first had this pie at the Elegant Farmer in East Troy Wisconsin. It took us quite a few attempts to recreate it. I think this is pretty close. You can make your own crust, or use a prepared one.
Whole Wheat Pancakes With Blueberry Compote

This is a refresh of a Wholeliving.com recipe. Martha Stewart's gang opts for low-fat buttermilk, but I never have that on hand so I trade in 2% milk or vanilla soymilk -- depending on what's in the fridge. The added wheat germ supplies some potassium and iron (it has more than any other food). I also add a teaspoon of cinnamon (because I love it) and cut the whole wheat flour with some all purpose flour so they don't taste too "nutty." To make the compote, you can use fresh or frozen blueberries -- up the lemon juice for more tartness and up the sugar for more sweetness. -- posted by Kristine at Recipezaar

Cinnamon Apple Syrup from Peel

This is a yummy way to use up apple peels. I like to cook apples during the fall to freeze for a winter side dish. I always hated throwing away the peelings. I modified a recipe that I found online until I got a consistancy and flavor that I am happy with. I enjoy using tart apples like Cortland or Winesap. My whole family loves this syrup. It is especially tasty when poured over Cinnamon Pecan Pancakes :) I love to have this simmering on the stove, it makes the house smell wonderful! -- posted by AmyR

Almost No-Fat Harvest Pumpkin Cinnamon Rolls

I came up with this recipe one rainy Saturday morning when everyone wanted cinnamon rolls but I didn't want to take the time for "regular" ones. I had purchased a ball of pizza dough at the store so I used that as my dough for the rolls. Worked out GREAT!! This will probably be our Christmas breakfast.....easy and YUMMY!!! I am a "dump cook" so I approximate with measurement. :-) My kids LOVED these!!

Would be good with chopped walnuts, but my kids won't eat those very often. I have to call them "super food" to get them to eat ...but only occasionally. :-) -- posted by sconehead

Red and Black Candy Apples

This is a fabulous Halloween creation that I fell in love with and had to keep safe (as in not losing the recipe!). It's from mattbites.com (http://mattbites.com/2009/10/13/adams-scary-apples/) and I unashamedly stole it word for word. You'll find some amazing photo's of these apples there too. All credit goes to Matt and Adam, and they deserve it in truckloads!

"*A Note About The Black Apples:* Lighter colored apples (Granny Smith, Golden Delicious) work well in making the red appear bright and glassy; darker apples like red delicious help the black candy appear as dark as possible. Muy spooky!

Also, Adam made one batch with red food coloring and after he had a few red apples he reheated the candy mixture and added black food coloring. Adding black to red will make it darker. He repeated the dipping process. Black food coloring can be found online or at specialty baking stores."
Do Not take the times I gave as gospel they are a complete guess. IMPORTANT:
You will also need "8-10 wooden twigs, twimmed" -- posted by Annacia

Caramel Apple Pie Filling (Oamc)

This is a recipe that my husband came up with when we had a lot of apples after apple picking several years ago. It has become a family favorite and one that we look forward to making after what has become a fun annual family outing at a beautiful orchard. We like using a combination of at least two or three varieties of apples for flavor and texture. Our favorite combination is Macintosh, Jonagold, and Granny Smith. I double or triple this recipe to can or freeze to use later in pies, over ice cream, on my oatmeal, or straight up, but it is so good it doesn't last long. -- posted by UrbanDesiMommy

Fall Harvest Smoothie

This recipe tastes like pumpkin pie in a glass! You will never know it is packed with veggies and fruits and "good for you stuff". Top with a little fat free whip cream for an extra-special desert. My teen-age daughter begs for this and sometimes we even heat it up for a thick soup. The key to this recipe is to make sure you use a blender/smoothie maker that has enough power to completely puree alll the ingredients; otherwise the squash will stay stringy. -- posted by RackeSRN

Colorado Mel's Apple Cranberry Crisp

This recipe is delicious. Our family really enjoys tart fruit desserts, so the recipe below reflects that. If you prefer yours a bit sweeter then you should use a sweeter apple or add another half cup sugar to the fruit. One thing I love about this recipe is how versatile it is! I'll switch out what fruit I'm using just based on what I have on hand. Yummm! This is also a healthier "Crisp" recipe than the average. There is more fruit and less crisp...
Sheila's Best Apple Crisp (No Oats)

This is the apple crisp from my childhood (there is no oatmeal in the topping). If I could only pick one dessert to make the rest of my life, this would probably be it. Mom always made this in her beautiful copper au gratin pan. I bought the same pan when I got married, just so I could make this dessert. Originally from the 1966 version of the "Woman's Day Encyclopedia of Cookery", Mom adapted it slightly over the years (with a little help from Cooks Illustrated I think). Cutting the apples into "cubes" (instead of slices) helps the apples keep the apples firm throughout. I have made this with pecans or walnuts. I have also made it without nuts. I like it best with pecans, but all versions are yummy!! I love it warm or cold. You can serve it with ice cream, but I usually only do that for dinner parties. -- posted by Mrs Goodall

Acorn Squash With Citrus and Chile

I really enjoy acorn squash and can't wait until the fall crop is ready each year. Zaar has a ton of recipes with acorn squash stuffed with just about everything, but after an extensive search I couldn't find one similar to this one. I was surfing the 'net and found this recipe at the Care2 website @ http://www.care2.com/greenliving/acorn-squash-with-citrus-and-chile.html Care2 says this about recipe: Something magic happens when you roast an autumn squash—it transforms from a hard, grainy, starchy thing to a mellow, creamy, sweet miracle. Matching autumn squash with flavors like cinnamon and brown sugar is a natural; but we found a recipe that adds tart and spicy to the sweet taste of acorn squash, that is fresh and surprising but still warm and comforting. Why not switch things up a bit with this roasted acorn squash with chili and citrus! -- posted by SassiFras

Val's Cranberry Salsa

My friend Val shared this recipe with me last year. It is a new favorite, and one that I plan on taking many places over the holiday season, as it is different. Best served with Wheat Thins, this salsa is yummy and a must try! The original recipe called for a 1 pound package of cranberries; I've found that fresh cranberries are now packaged in 12 oz. portions, and this size works. Don't forget to allow time for chilling, to allow flavors to develop...This will make enough for 2 blocks of cream cheese, so you have 1 to serve, and 1 to share! -- posted by alligirl

Oh You Foolish Cranberry

I don't care for Cranberry Sauce- especially the stuff in the can- but my family loves it. So in keeping with the tradition of making dishes that my family loves I came up with this one. I uses fresh cranberries and it is wonderful on the Thanksgiving dinner table as well as on Ice cream in the summer. This is more of a slightly spicy fruit sauce. I can this in nice jars with a bit of fabric and ribbon, and give it away in gift bags at Thanksgiving and Christmas. This recipe has a myriad of uses including as a topping on Cheese Cake, or as a filling between layers of cake.

Skillet Spiced Cranberry Chicken

I like to serve this easy one-pan dish throughout the holidays, when fresh cranberries are in season! Frozen or dried cranberries could also be used, for all year round appeal. Feel free to adjust sweetness to your tastes (we like it tangy). This chicken is great served with stuffing or rice, and your favorite seasonal vegetables. -- posted by BecR

Spiced Baked Pears

This is a perennial favorite for Thanksgiving! It's adapted from a recipe for Spiced Baked Apples by Lorraine Chausse on allrecipes. The pears make a really lovely presentation for dinner parties and can cook while you eat dinner.
The recipe states 6 servings, but you can also halve them and just ladle the sauce over the half. These are yummy served by themselves or with some vanilla ice cream. -- posted by Heidigal

Easy Peach Cobbler

This is a great recipe because I usually have everything on hand so when unexpected company arrives it takes 5 minutes to get into the oven and then the smell makes everyone hungry! -- posted by Buzymomof3

Baked Squash With Apples and Cranberries

The tart flavor of this cranberry-colored glaze perfectly balances the sweetness from any winter squash. If acorn squash is not your favorite, try butternut. -- posted by Annacia
