			<title>Magic Fresh Tomato Spaghetti, Pasta or Pizza Sauce</title>

			<description>Check out this trick - a whole, unpeeled tomato goes in the pot, and a tasty, seed-free, peel-free tomato sauce comes out!  Okay, well, maybe it's not really magic, but it's a great trick to save you from having to peel, chop, and de-seed all those tomatoes (which is the reason I almost never made sauce from my garden tomatoes until now).

We'll take care of the peels and seeds with a blender/food processor and a fine mesh strainer.  Yes, a couple of extra things to clean, but it's still faster than all that peeling and chopping!  Also, because the peels are cooked in the sauce, you preserve more of the nutrients in them.

This is a highly customizable recipe (really more a framework than anything else) - make it smooth or chunky, with meat or vegetarian, regular or low-sodium, or even use it to hide a few extra veggies (a tip for you parents of picky children - you can make them completely undetectable).  The quantities are inexact because there's so much variation in the size, taste and texture of fresh tomatoes, and anything else you add will change the flavor.  So you really have to adjust the seasonings and other ingredients to compensate.  This is part of the art of making tomato sauce, but don't be intimidated! 			<description>This is a Midwestern classic apparently-- a school chum from Iowa told me about this recipe that's popular around fall and early winter, from having leftover cans of pumpkin from stocking up on sale but not wanting to make any more pumpkin pies-- they're popular for high teas, luncheon spreads, Superbowl parties, Thanksgiving and Christmas, or sitting on your can watching The Golden Girls. :D Since I didn't want to use actual marshmallow Fluff...this is my fluffy adaptation of this recipe that came out HEAVENLY. I could eat a drum of this stuff and not get bored of it! One 15 or 16 oz can of pumpkin works, or you can measure out 2 cups from a 28-oz can. 			<title>Sugar Free Pumpkin Bars With Cream Cheese Frosting</title>

			<description>Completely sugar free dessert!  I've been experimenting with a sweetener called &amp;quot;Xylitol&amp;quot; that I buy online and will gradually post recipes with my successful results.  

I promise never to post a recipe that hasn't passed the &amp;quot;Kid Test&amp;quot;.  I have four kids who are very, very finicky eaters.  My kids CAN tell that these aren't made from real sugar - mostly because I don't have real sugar in my house anymore.  But they still love these.  I have also served these to friends without anyone knowing they weren't &amp;quot;normal&amp;quot; pumpkin bars.

I started looking for a sugar substitute when a dear friend had surgery and became completely intolerant to any processed sugar.  Splenda doesn't agree with me and I always prefer 'natural' options when possible.  Xylitol IS more expensive than sugar, so experimentation is frustrating sometimes.  I hope you will enjoy my successes without having to endure the waste I've had.  It has 40% less calories than sugar, 75% less carbs, and has a glycemic index of 7 (compared to sugar at 68 and corn syrup at 100) and my friend can enjoy sweets once again!

The key to using this in place of sugar is to MELT the xylitol before adding it to the recipes.  I just melt mine in my pyrex measuring bowl in the microwave.  I have found it's very important to MELT the Xylitol but not BOIL or otherwise over-heat it, because it does alter it's consistency like sugar.  If you heat it too long, when it cools, it becomes rock hard.  (I'm still figuring out how to use this to my advantage in fudge and caramels - I'll post when I get a successful outcome.)

This pumpkin bar recipe is an adaptation of one I have in an old Better Homes and Gardens cookbook.  I also use only whole-wheat flour and try to skim some of the fat (though not all, in order to keep a nice degree of moistness).

I buy my Xylitol online.  Some bigger cities might have natural/health food stores that sell it in the store, but nothing near me.  I pay about $25 per 5 pound bag, so shop around. 			<description>I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. I got the idea off of another website that used chocolate pudding but I thought using vanilla and dying it orange would be really cool since the pudding and oreos together would be traditional Halloween colors. This recipe can be easily divided in half and so on. For the pudding I used the kind that you cook verses the instant. I think the cooked pudding has a much nicer and thicker consistancy. The amount below for the oreos is a guesstimate because it wouldn't let me put down 1 large package of oreos but either way just one regular package of oreos crushed is what you need.
