Rannoch Smokery Cold Smoked Beef Crostini

These crostini are an appetising mix of tender thin slices of finest Scotch beef and rich beetroot and orange chutney. They make quite a substantial delicious pre dinner canapé or as a starter with a salad garnish. They are easy to make and all the ingredients can be store cupboard or freezer, so you’ll never be caught out again if unexpected guests turn up or people are hungrier than expected! -- posted by LP3000

Gourmet Mac & Cheese W/ Lots of Variations

Tweak the spices to your liking. I like it also without the paprika, but garnished with a sprig of fresh rosemary.

Also try making it cheesier or adding or substituting cheeses. I've made an excellent one with brie. I've also used canned tuna instead of chicken for a quicker version.

I have also experimented with different seasonings and rubs for the chicken or tuna, including celery salt, cayenne, rosemary, cumin, etc.

Changing the pasta also greatly changes the flavor as well, in my opinion.

Can be made with dried spices but I recommend fresh!

To go above and beyond, you can also bake the finished casserole with a breadcrumb or other topping. -- posted by GoldsmithLissa

Truffled Wild Mushroom & Three-Cheese Macaroni/Pasta

Extremely decadent!

Use shaved truffles if you want to splurge, but truffle oil will suffice! (be very wary of a "budget" source on truffles...food poisoning usually follows!)

Can be an appetizer or main dish...i recommend the latter : )

Pumpkin Ginger Muffins or Cupcakes

Use white flour if you prefer, but I think the wheat gives it great texture!

I've also used vanilla yogurt and it adds a soft variation more for a dessert type muffin.

Also try topping with cream cheese icing (check my recipe I posted!). Sometimes I even add a little cinnamon, ginger, etc or a mix of holiday spices to the icing.

Use smaller muffin pans to make a nice snack for your meal or a quick breakfast. You can even freeze them! Try making a loaf cake as well. -- posted by GoldsmithLissa

Pumpkin Pudding With Candied Ginger Whipped Cream

Drommar

This is an almond butter cookie that melts in your mouth! An old Scandinavian recipe,I have been making this cookie for over 50 years: it was one of the first ones that my Swedish Grandmother taught me to make. However, this is NOT the cookie you make when you are running short on time. You must be proactive and do several steps before you can even begin the cookie itself. It is critical to really brown the butter as it's that key ingredient that adds all the flavour. I will make over 100 of these each Christmas: at the start of the baking day I wil brown and cool the butter. At the end of the baking day, I will combine the ingredients and bake it, knowing that these MUST sit out on the counter to cool 100% or they shatter. The next day I repeat the steps. But, these are so worth the little bit of extra preparation; they are the first cookie to disappear from the tray each year. -- posted by The_Swedish_Chef

Sweet Braised Whole Scallions (Molly Stevens)

This would be a fabulous, easy side dish for Thanksgiving. "As the scallions braise, the sweet anise flavor of the tarragon mingles with their oniony juices, giving the whole dish a candy-like sweetness. If you can’t find fresh tarragon, or simply don’t care for its taste, substitute fresh parsley or omit the herb altogether. The scallions will still taste delicious." Recipe is from "All About Braising: The Art of Uncomplicated Cooking" by Molly Stevens. -- posted by blucoat

Spice Cake With Bourbon-Pecan Frosting

Moist cake with sweet and buttery frosting...

Tweak the ingredients to your liking. Try it with variations in the spices, extracts, and liquor: such as cayenne, ginger, almond extract, spiced dark rum, cointreau, irish cream...

Also try glazing the pecans with carmelization, candying, or even a nice orange spice. For an easier variation, add some cayenne and brown sugar or some of the other spices mentioned earlier before toasting the pecans. Then sprinkle them atop after icing, to keep the flavors more independent of each other. -- posted by GoldsmithLissa

Pumpkin Crisp Plus Lower Fat Variations

This is my husband's favorite dessert. We got the recipe from his uncle Larry. I have made it for may family and it has been requested that I bring it to Thanksgiving again this year. I also made it for a BBQ this summer, and a friend who came to the BBQ asked for the recipe so she could make it for Thanksgiving.
Tender and Spicy Molasses Cookies

This is a highly modified version of Old Fashioned Ginger Cakes by Rachel-Snachel . It is interesting because it uses no milk or eggs, and is devoid of refined sugar.

This recipe's flavours are equilibrated for Blackstrap molasses, if you use regular molasses you might have to reduce the spices.

This is a very nutritious, flavorful and comforting recipe on cold winter nights. Perfect if you are nervous, not too good if you feel agressive. -- posted by Blueberries and Mortar

I wanted to make a pear pie with a pecan crumb topping, but sometimes the sweetness of such a topping can make a plain fruit filling seem tart. Inspiration came from a jar of pear cinnamon caramel dessert sauce I had in my fridge. The flavors blend perfectly, and the pecans give a nice crunch to the topping. We also have heart-health issues in my family, so unlike most crumb recipes, this one doesn't use butter. -- posted by akageorge

Moist Pumpkin Spice Bread

This may be the most delicious pumpkin bread recipe I've ever baked. I came up with this for my brother's 18th birthday and it has been devoured in just two days. I believe the applesauce in the recipe is what makes it so ooey-gooey moist. It's also low in fat as the applesauce replaces the oil that would normally be used. The recipe makes two loaves, one of which can be frozen or given to a friend. -- posted by EntirelyEmily

Thanksgiving Pumpkin Blondies

From The Best 50 collection of cookbooks. This is straight out of the Brownies and Blondies edition. A little of this goes a LONG way! Not really a blondie by my standards, but it passes off as an interesting bar-type dessert. PLEASE NOTE: Because most people are not really used to tasting molasses, it may take a few bites to fall in love with this recipe. I did not like it at all when I first tried it. But, after giving it a second bite, I found I can't get enough of it. This seemed to happen with EVERYONE who tried it. So, please, before giving an unhappy review, try it again. If you find that the molasses is just too much to handle, try cutting the topping ingredients in half. It really does make a lot of topping as it is. I hope you enjoy this! -- posted by the_cookie_lady

Sweet and Savory Squash Stew

This recipe combines some of the most iconic tastes of fall--butternut and acorn squash, sweet potato, apple--in a sweet and savory pot of deliciousness. I recommend serving with a dollop of sour cream. And cornbread.

All amounts for seasonings are estimates--I tend to season as I go and according to taste; I have a feeling these are underestimates. I will be sure to update the next time I make this with adjusted amounts. I used a smoked (pre-cooked) ham steak for this; I have also made it with other kinds of ham, with turkey sausage, and without meat altogether with positive results. -- posted by Tlharin

Holiday Nut Roll (Americanized Croatian Nut Roll)

While similar to other nut roll recipes, this filling is unique because it uses no egg whites or lemon and includes a delicious "Americanization" of the Slavic recipe by adding--whiskey! It adds a fantastic additional flavor; feel free to split the filling before adding whiskey if you'd like to reserve some spirit-free for the kids (though it cooks off and I've never met a kid who didn't like this).

Makes a big batch--perfect for giving away. Freezes very well. My sister and I will make double this batch all at once and freeze them until we're ready to give/send them out. -- posted by Tlharin

Shell's Potato Soup With Carrots

I love to make variations on potato soup and this is one of our favorites!

Potatoes and carrots are the main parts of this soup, but occasionally, I like to add one other fresh vegetable if I have it (only add one additional veggie in a small amount because you don't want to overpower the carrots & potatoes). I added some fried Okra recently (fried it first to get rid of the slimy-ness) and it was awesome! Also, you can vary the stock from chicken to beef to even veggie stock if you want. For this recipe, I'm going to use chicken broth, which is my favorite for this soup.

To make the healthiest version, you can substitute butter for margarine, Cream for 2% Milk and remember to put bacon into your personal soup bowl. Sorry, scratch that - reverse everything I just said. Whatever you do, don't forget the bay leaf, as it's a critical flavor ingredient!

So warm and filling and easy on the tummy - I hope you like it! -- posted by Chef #1296089
