			<description>I just invented this tonight, after getting &amp;quot;stuck&amp;quot; with a couple of pounds of crawfish from a crawfish boil.  It's so good I wanted to hop around the kitchen singing.

This recipe is for crawfish boil leftovers; it won't be the same otherwise.  You'll need two pounds of whole crawfish plus the corn, potatoes, etc, that were boiled with them.  (My two-pound package contained two short corns on the cob, four little new potatoes, and two pounds of whole crawfish.) 			<description>My Cajun mother makes a wonderful mirliton casserole for the holidays that's always a hit.  I had a craving for mirliton and crawfish one day, and pieced together this soup from several recipes and a few traditional Cajun cooking methods.

Some people prefer to peel and pit mirliton before using them, but the whole fruit is edible.

Crawfish tails are usually mostly cooked before being peeled and bagged, but it's best to be on the safe side. Try this out for your next Mardi Gras party, and you will surely get praise for being unique and creative.  This recipe came from Sam's Club, October, 2008, courtesy of Mulate's Restaurant.  You can also use the blackened salmon filets from Sam's Club in place of the catfish.  Edited 6-5-09:  The original recipe does call for 1/2 pound (2 sticks) of butter, but that is WAY too much IMO. This is easier to make than the original recipe because you dont need to fuss with cooking live lobsters or getting the meat out of the shells  and you dont need quite as large a pot to accommodate whole lobsters. Either boil or steam the lobsters yourself or buy lobster already cooked at a local fishmonger. If you dont have a hand blender use a food processor, blender or food mill. 			<description>This delicious recipe uses all of the shrimp.  Be sure to buy un-peeled shrimp.  You start by making a sofrito and end with a broth that is incredible in its depth of flavor.  Let your food processor do the mincing.  Where you see shrimp soup listed in the ingredients know that I use cubes of  Knorr Sopa de Camaron that are about a Tbsp.  For some reason the Recipe Tsar won't let me use the term.  Feel free to add more of the Sriracha if you like.  I do.
