Red bell peppers, green onions and mushrooms give it the right flavor and colors to pull an ordinary tuna casserole to over the top. This recipe comes from Art Smith's cookbook &amp;quot;Kitchen Life&amp;quot; which I am enjoying very much! It was easy for me to put together before bed and whoever arrived home first would pop it into the oven. That gave me an uninterruped hour to take care of after work chores and start the kids on their homework.  I tried due diligence on this one to see if it was posted in 'Zaar, but none just like this that I could find. The original recipe called for fresh onion, but today we prefer the dehydrated version. Since many of the meals I cook consist of portions too large for one sitting, I normally separate the remaining recipe into  one and two person serving containers, and then freeze. 			<description>My mother in law made this.  I got it from her.  I change mine around deleting some ingredients and adding more of others.  Play with it to your liking.  You  can substitute canned chicken for the tuna. I also use the bagged Homestyle wide noodles  We love it served with garlic bread.  You can make this ahead, keep refrigerated and cook later. 			<description>Every time I go to my fave Chinese restaraunt I HAVE to eat this crab casserole.  I love the flavors, the texture, heck ... I just love everything about it except for the fact that it makes me wish I had a second stomach just so I could eat more!)  At first I didn't think there was any breadcrumbs in it. My MIL said there is.  So, I went and bought a bit of it and pulled it apart bit by bit and found there was indeed some breadcrumbs in it.

			<description>I adapted this recipe from Cooks.com.  I like Basmati or Jasmine rice for this recipe.  Each adds its own subtle flavor.

Note:  I changed the estimated number of servings from 10 to 6 because after making it twice, I can say that this recipe seems to inspire &amp;quot;seconds&amp;quot; and &amp;quot;thirds.&amp;quot; We eat a salad along with it--no bread, soup, etc.   If you are controlling the portions for a dinner party or are serving a variety of side dishes along with this main course, use the higher number of servings.

Note 2:  I had this leftover yesterday for lunch, and it warmed up great in the microwave.  Freezing seems to be fine, too.

Note 3:  Because we were running low, my husband substituted parmesan cheese for swiss, cut the amount of cheddar cheese in half, and mixed the cheeses into the casserole instead of putting them on top.
