			<description>This is a really tasty, economical and different way to enjoy fish! Lots of flavor from the marinade and easy clean up! Winners in my book. I am sure this would work very well on any firm, mild fish. When I made this I was a little crunched in the time department so I only got to marinade it for 1 hour and it was delicious. Plan ahead! This is best marinated for at least an hour but no more than 2 hours. 			<description>Cactus is a common and tasty food item in Mexico and parts of SW USA. Cactus, or NOPALES as they are known in Texas and Mexico, can be found fresh and needle free in the produce section. You can even find jars of Nopales or Nopalitos (little (pieces of) Nopales) in the ethnic aisle of your grocery store. If you choose to use those please drain them and rinse them well. Green Beans or chayote can be substituted if cactus is not available. The nutritional info here is not correct as the olive oil is used for coating the items you are grilling and in the dressing. Not all of it is consumed. The recipe made more spice rub than was needed to coat the steaks so we heavily applied.  We found that this overpowered the dish a bit, so I would recommend not heavily applying the rub, just use enough to coat. It was very flavorful and we plan to fix it again.  From &amp;quot;How to Grill&amp;quot; by Steven Raichlen.  Regarding the cilantro root -- my husband looked at every Asian market in the area to no avail thinking if anyone would have cilantro root they would.  He felt it was essential to the recipe despite the recommendation of adding additional cilantro instead.  He mentioned to me he had been looking for cilantro root -- &amp;quot;Did you think of the herb section of the nursery?&amp;quot;  I bought a little 4-inch pot of cilantro from the herb section and washed the roots thoroughly (a chore, I will admit).  Sometimes you can find cilantro with some of the roots attached, but rarely. 			<description>This recipe combines grilled shrimp brushed with lemon butter and sprinkled with Creole seasoning. The shrimp is added to a mixture of red bell pepper slices simmered in olive oil with garlic and onions.  Alfredo sauce is then added to the shrimp and peppers and laced lightly with cayenne pepper to kick it up a bit. This mixture is then served over a bed of angel hair pasta.  I created this about two years ago on a whim and it has become a family favorite. The trick is not to make it too spicy - but the flavors of the grilled shrimp, sweet peppers and light amount of spicy alfredo is a real delight in our house.  I doubt this recipe is original, but it is something my family asks me to make for special occasions because it is a favorite. The timing of the cooking of the pasta, peppers and shrimp is essential to avoid overcooking any of the ingredients. 			<description>This is my favorite grilled salmon.  It is grilled on a cedar plank (make sure you soak the plank for at least 8 hours).  The ingredients are the perfect blend.  The original recipe has it baked in an oven at 400 degrees for 15 to 20 minutes.  We cook it at the same temp and time on the grill.  You could use 4 - 6 ounce portion fillets (skin on) on 2 cedar planks.  We prefer half a side of salmon with the skin on. The recipe is by Michael Chiarello.
