			<description>My husband made these for me for breakfast today. They were very good! One of the things I like about them is that they have a good chocolate flavor without being too-too-chocolatey! They are very light, too. Goes nicely with morning coffee. You can make the glaze ahead of time if you like. Just warm it up before using until it is a good consistency. Early on, the group's business manger, PanNan, figured out that customers hooked on their fabulous baked goods would soon gain so much weight they would stop buying their daily muffins and scones.  Quickly Bergy and Derf began working on a new recipe for a deletable new scone that would be kind to the figure.  Having developed a basic recipe for light scones, they worked with Madeleine M. to develop a range of flavor combinations that would rival none.  Apricot-Almond was by far my favorite so today, one time only, I'm sharing the recipe with you. I doubled the recipe when I made them and am not sure if I miscalculated, but there was a lot of liquid!

			<description>This base of this recipe is called Puyallup Fair Scones (Recipe #183806)...I of course had to mess with a good thing and here's the recipe I came up with.  These are even better!

Here's some of the research on scones that I found...using butter gives the best flavor, but shortening preserves the scones better after the first day.  Hence the 1/2 butter, 1/2 shortening, a good compromise.  Using heavy cream keeps the scones moister than milk.  The recommended flours (for taste and gluten content) are first, Pillsbury Unbleached Enriched All-Purpose Flour (with a 10 - 11% gluten content), second King Arthur Unbleached Enriched All-purpose Flour (with an 11% gluten content).  Chilling the butter and shortening in the freezer for 20 minutes or so helps the fat not &amp;quot;melt&amp;quot; when mixing.  You can use your hands or a pastry blender to mix the fat and flour, but using a food processor also keeps the fat intact and not &amp;quot;melted&amp;quot; from the heat of your hands.  Mix as little as possible so that the gluten does not over develop and make the scones tough.  Sifting is critical.  2 1/2 cups unsifted flour weighs more than 2 1/2 cups sifted flour and would make a tougher scone. My hubby discovered it in The New Basics Cookbook by Rosso &amp;amp; Lukins a few years ago.  He had forgotten to get reservations at my favorite restaurant for Mother's Day brunch so he made this instead.  It was better than my favorite restaurant!   The original recipe says it serves 4.  But it is very rich and it's enough food for 8 if you're serving with a side of fresh fruit. 			<description>This recipe started as a Lemon Glazed Scone recipe I found in a locally published recipe book, you know the kind sold as a money raiser with personal recipes from community members. Over the years I have adapted it many times. It has become the basic formula I use to make scones for tea with friends, family gatherings or on those mornings when I wake up and find we are out of bread and cereal. I add whatever I have in the cupboard or fridge. It has never let me down.
