Lekvar Prune Plum Filling or (Apricot)

Found this on-line requested by a fellow Zarrie needed for my Lekvar (LEHK-vahr) Kugel recipe #53841( I was able to find it canned. A thick, soft spread made of fruit (usually prunes or apricots) cooked with sugar. This Hungarian specialty is used to fill a variety of pastries and cookies. Lekvar can be purchased in cans or jars in most supermarkets. -- posted by ~Rita~

Danish Apple Cake

A former neighbor of mine & I were trying out recipes from some newly acquired military community cookbooks we had "won" together on Ebay. My neighbor found this recipe in one called "Recipes on Parade:Desserts" and since we both had a copy of the cookbook, we both tried it out - and loved the recipe. You would serve this scooped into a bowl, garnished with a little shredded cheddar and whipped cream, or as my neighbor preferred, some vanilla ice cream. This tastes best warm. This is called a "cake" but is not a typical slicing cake. -- posted by HeatherFeather

Apple & Quark Pie Bars

One of my favourite apple pie recipes that makes enough for a small crowd! The exact number of apples needed depends on the size of the apples used - you need enough apple slices to cover the whole 30 cm x 40 cm pie. Instead of sliced apples you can also use applesauce and mix it into the quark mixture. -- posted by stormylee

Boston Coffee Cake

Boston cakes are essentially various versions of cinnamon rolls baked in a round cake pan into a cake form and served in slices, like a cake - I have no idea how Boston became associated with them! This is one of the basic versions featuring hazelnuts and almonds. (And it shouldn't be quite as dark as the cake in the picture, I overbaked that one a bit!!) Please note that the amount of gluten in flour varies across the globe, so use the amount listed here only as a guideline - while it's perfect for me, you might find you need more or less! Instead of fresh yeast you can also use dry yeast, just adjust the temperature of the dough accordingly and add the dry yeast with the flour. -- posted by stormylee

Cream Cheese & Orange Filled Rolls

Like cinnamon rolls, only with cream cheese filling! You can also make a lemon filling by using lemon zest and lemon juice instead of orange if you prefer. This is a Finnish recipe and Finns don't usually go for very gooey and sweet things - the rolls are subtly sweet and have a fresh orange taste. You can add more sugar to the filling if you like, or try making more of it! -- posted by stormylee

Danish Apple Pudding

A flavoursome Danish apple pudding with hazelnuts, honey and lemon. This dessert can be made well ahead of serving time as it is served chilled. Hazelnuts although high in fat contain mostly monosaturated fat which helps to lower levels of blood cholesterol in the body. I found this recipe on an International Masters '1001 recipes for pan or wok' card. -- posted by bluemoon downunder

Midsummer Swedish Strawberry Compote - Jordgubbskräm

Midsummer would not be Midsummer without strawberries, and this is a simple Swedish recipe to make, to celebrate Midsummer, wherever you may be! In Scandinavia, the summer solstice is a magical time. The lavender twilight lasts until 11 p.m. and the day breaks again at about 2 a.m.; above the Arctic Circle, the sun doesn't sink below the horizon for weeks. This year, 2007, Midsummer Eve, the beginning of the three day official holiday, falls on June 25. Throughout Scandinavia, families and friends gather to decorate the maypole with birch leaves and wildflowers, make flower crowns for women and girls, dance around the maypole, sing summer songs and feast on pickled herring, new potatoes, and aquavit. In addition, many families have their own special foods that they traditionally serve as the Midsummer meal. These are usually dishes that can be prepared ahead of time and easily served outdoors. -- posted by French Tart

Norwegian Cloudberry Cream With Lavender and Vanilla

This is a twist on the traditional way of serving cloudberries in Norway, I have added lavender and vanilla to enhance the ephemeral flavour of this delicate arctic berry. A member of the rose family, cloudberry bushes produce delicious yellow/orange berries that are highly prized in Scandinavia. Smaller than blackberries and raspberries, cloudberries are picked at the end of July and the beginning of August. The cloudberry is almost exclusively sold fresh or made into jam, but it's also used in liqueurs and as a filling in sweets and chocolates. They are difficult to substitute - but I imagine raspberries or lingonberries would be a lovely idea if you cannot get cloudberries. -- posted by French Tart

Danish Oven Pancake (Aeggekage)

This sounds so good. This is an allrecipes.com recipe which was submitted by WOLSELEY. Here's the introductory statement:
"An Aeggekage is a traditional Danish oven pancake, usually served as a buffet item or as a dessert for a family holiday meal. It is a light, cake-like dish that is not too sweet and absolutely delicious with fresh seasonal berries and fresh whipped cream! (Think of it as a sweetened Yorkshire pudding). Just make sure you serve immediately, this pancake does not do well cold nor is it a good leftover. But chances are you won't have any remaining Aeggekage to worry about!" -- posted by Happy Hippie

Taste the Clouds

This is a wonderful and simple Norwegian dessert traditionally made with cloudberries. Cloudberries are aromatic and rare berries that grow in the moors and mountains in Norway. Cloudberries can be purchased online or sometimes found in specialty stores. A close relative found in Alaska, Maine and Northern Canada is the baked appleberry. If you cannot find frozen or fresh berries, you can use cloudberry preserves. In that case, use less honey. While it won't be the same, you can substitute any local berry for a delicious dessert experience. -- posted by Alskann

Old Fashioned Pound Cake & Raspberry Trifle

Elegant, rich, and BEYOND description--don't let the long list of ingredients or directions put you off--this is WELL worth the effort!!!--my family looks forward to our annual FIRST raspberry picking of the year--because THIS is the first thing I make, and we gobble it up! The authentic old-time kind of pound cake--makes three loaf-pans. Use one for this recipe, freeze the other two for future use (you'll want to make this more than once!). Trifle makes enough for ONE large serving bowl. Cooking time is "chilling time" -- posted by Debber

I got this recipe from an OLD "Pillsbury Kitchens' Family Cookbook". I have been using this recipe since I was in High School, so that should tell you how EASY they are to put together and they are such a hit! You can do anything with them. Add fruits for a yummy breakfast dish, chicken and cheeses for a dinner dish (VERY good), or sweet fillings and powdered sugar for a dessert. -- posted by Ms. Baker

Fruit and Cheese Blintz or Breakfast Crepes

One of my favorite breakfasts, easy and quick to make and they go fast!
Some of my recommendations for a little twist (I mix and match!):
-If you desire sweeter crepes, omit the salt and add 2 tablespoons sugar
-Try spreading a little cream cheese before filling the crepes
-Add 1/4 cup of fresh berries, your choice (corresponding to your yogurt flavor, I recommend strawberry, which should be thinly sliced)
-Garnish with whipping cream is desired -- posted by Hydra

Dallaspulla - Awesome Finnish Pastry

I discovered these pastries as an exchange student in Finland and they are my absolute favorite in the whole wide world (my boyfriend's too). I have been searching high and low for a recipe and finally I found this one on Axis of Aevil so I thought I'd share. Can't wait to try it!!

There's the traditional Finnish filling as well as an American alternative since quark is pretty hard to find in the States.

NOTE: The vanilla cream flour can be replaced by mixing together 1 teaspoon vanilla sugar and 1/4 cup potato or wheat flour -- posted by mdmdt

Rhubarb Crisp: a Celebration of Summer!

My rhubarb flourishes at the end of my clothesline, right next to a patch of hollyhocks that sway in the summer breezes. Right now there are some little birds (I can't make them out with my spotting scope) snatching up pine needles and flitting about busily. Anyway, this recipe comes from the June '09 issue of *Country Living*. I do live in the country, and have an abundance of rhubarb. It's easy to freeze the cut-up pieces, and if you toss the pieces with sugar (right in the zipper bag), you can pop it in the freezer and use them later. The extra sugar will be fine in the recipe! -- posted by Debber

Scandinavian Style Almond Paste

This is a wonderful almond paste to use in recipes like scones, pizzelles, almond cookies, and other pastries but is optimal for those itty bitty Danish almond cakes.
I got this from a cooking magazine a few years ago. My version calls for 2 tbsp butter but you might want to up it to 3 if you find that it's not a good consistency or almond-to-butter ratio. If you don't have almond extract at hand (because you're like me and are too poor and/or lazy to buy a bottle), vanilla extract will work too. Also you need a food processor for this! -- posted by the80srule
