Norwegian Potato Doughnuts

When I was a little girl my grandfather, who was a full fledged Norwegian, used to make mashed potato donuts for us on those special times when we got to sleep over at my grandparent’s house. These donuts and wearing “angel jammies” (my grandfathers white T shirts) are 2 treasured memories of “Boppa.” This recipe tastes very much like what I remember his tasting like. Prep time includes chilling time. -- posted by LAURIE

Hilde's Norwegian Waffles

I have several recipes for waffles but I always come back to this one. I only use NATRON in my waffles but I have substituted NATRON with baking soda in this recipe. I think both NATRON and SOURED MILK is hard to find in the US. Norwegians always use a 5-heart iron to make waffles but it's no requirement. Serve them warm with any topping your heart desires. -- posted by Strawberry Jello Cake

Swedish Pancakes

These are very thin and crepe like but are heavier. They have a very smooth texture. I've read that these may not be authentic Swedish pancakes but the recipe was passed down to my great Grandmother Helen from my Swedish great great Grandmother Maria. It is over 100 years old...possibly 150 or more! Some of my Swedish relatives started the famous Svenhards bakery here in California. They no longer own it but their original packages have my great great Aunt Tilda's (Maria's sister) photo on them! There are similar recipes on Zaar but none with these proportions. My family eats them with maple syrup with melted butter in it and boysenberry syrup drizzled over that and then sprinkled with powdered sugar. You can also eat them with fresh fruit or jam. Servings are an estimate...some people eat 3...or some like me can eat 10! *My Grandmother makes these with up to 5 eggs sometimes and does add a pinch or two of salt. -- posted by Engrossed

Gamma's Swedish Pancakes

These are thin pancakes. Trust the process-batter is very thin and runny! We always roll them up into little logs to serve with toppings or stuff rolled inside. It's fun for the kids to pick their own toppings. They 'keep' well, and it doesn't hurt the quality to collect them on a dish in the oven while you cook the whole batch so everyone can eat together. Save the leftovers, they microwave great! -- posted by Jess4Freedom

Aebleskiver (Round, Filled Danish Pancakes)

This Danish delicacy is served in many Danish-American homes, including mine. A special pan is needed; even though new pans are available, many cooks favor the old cast-iron pans, which are handed down from generation to generation. You can get them at many scandanavian specialty stores, and can also order them online. In Denmark, aebleskiver is served as a dessert with sugar or marmelade. On the island of Aero, a small sliver of prune is put in the middle as they are cooked. There are many different recipes, and this one is my family's favorite. We put a little jam, preferably lingonberry preserves, in the middle of our aebleskivers as they are cooking, before turning them, and we eat them with sweetened cinamon-sugar applesauce. You will need a little practice in turning these doughnut-like treats. A fork works, but some practiced "turners" use a knitting needle, preferably wooden, or a similar device such as an ice pick. Even a toothpick will do. -- posted by AB_Fan

Danish Oven Pancake (Aeggekage)

This sounds so good. This is an allrecipes.com recipe which was submitted by WOLSELEY. Here's the introductory statement:
"An Aeggekage is a traditional Danish oven pancake, usually served as a buffet item or as a dessert for a family holiday meal. It is a light, cake-like dish that is not too sweet and absolutely delicious with fresh seasonal berries and fresh whipped cream! (Think of it as a sweetened Yorkshire pudding). Just make sure you serve immediately, this pancake does not do well cold nor is it a good leftover. But chances are you won't have any remaining Aeggekage to worry about!" -- posted by Happy Hippie

Update: Finally got to make this deliciously ooey, gooey pancake. I also added a dash of vanilla and would also recomend decreasing the butter to about 6 tbs from 8. I also preheated the oven to 400 degrees to melt the butter and then decreased the temp to 350 when I put the batter in. Oh so yummy! I will update the ingredients below so that the nutritional information is correct. -- posted by C. Taylor

Aebleskivers (Danish Pancakes)

This bed & breakfast was in Leavenworth, Washington, and it was called Abendblume. The kind woman who ran the place served us Aebleskivers for breakfast one of the mornings (along with other fine fares), and before we left we'd purchased an Aebleskiver pan and now we are able to make these yummy treats at home!
Fruit and Cheese Blintz or Breakfast Crepes

One of my favorite breakfasts, easy and quick to make and they go fast!
Some of my recommendations for a little twist (I mix and match!):
-If you desire sweeter crepes, omit the salt and add 2 tablespoons sugar
-Try spreading a little cream cheese before filling the crepes
-Add 1/4 cup of fresh berries, your choice (corresponding to your yogurt flavor, I recommend strawberry, which should be thinly sliced)
-Garnish with whipping cream is desired -- posted by Hydra

Pannu Kakku (Finnish Oven Pancake)

This is from Beatrice A. Ojakangas' book, The Finnish Cookbook. My dad is from Houghton-Hancock in the UP, and when visiting my cousins there, I ate the Soumi Cafe's version with my sister Gail. Beatrice says, "Serve this with jam for breakfast, or with Blueberry Soup for dessert. Pannukakku also makes an excellent base for fresh berries in season; use it as you would a shortcake." -- posted by mersaydees

Spiced Christmas Gingerbread Coffee With Cognac Chantilly Cream

As soon as I discovered how to make ginger syrup, this gingerbread coffee was on the menu last Christmas! I tasted my first Gingerbread coffee, or actually, Gingerbread Latte, in a branch of Starbucks in Manchester, England in 2006 - and it was love at first taste! Mine is a little bit more grown up and indulgent, as I have included a spiced, cognac laced whipped chantilly cream topping! We will be having this for Christmas morning this year, and for many more mornings or evenings I suspect, as the mood takes us! Enjoy this coffee not just at Christmas time, but also throughout the colder months. This recipe is not for latte, but for a fresh filtered coffee and cream version - but I think it is just as delicious. -- posted by French Tart

This is based on a recipe from Beatrice Ojakangas' cookbook, Scandinavian Feasts.

These pancakes are served as a dessert in Denmark and the traditional filling is jam and sugar; but you can really add anything to your liking. We also eat them for breakfast.

Danish-Dutch fusion cuisine. The recipe for the batter is typically Dutch (yeast raised) but the filling of jam is quite Danish. Try Cherry-Strawberry Preserves for the Bread Machine ABM (http://www.recipezaar.com/311376) for the filling. I use an aebleskiver pan, which has larger indentations than a poffertjes pan.
Plättar Med Lingon - Swedish Pancakes With Lingonberries

As one might guess from the name, this very thin pancake hails from Sweden. Swedish Pancakes can be served for breakfast, but Swedes also prepare them for supper accompanied with a bowl of hearty pea soup.
Unlike the thicker American "flap jack", the Swedish pancake is more like the French crepe. Rather than syrup, the pancakes are usually garnished with lingonberries, a tart red berry, and sprinkled with powdered sugar.

So Easy and Tasty Apple Streusel

"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan".

Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy!
Adapted from Penzey's spices and the intro is what they said about the recipe.
A little history:
In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish. -- posted by Sharon123

Apple Streusel Muffins

These muffins are great grabbed straight out of the oven, warm with vanilla ice cream or with a steaming cup of coffee for breakfast. The addition of sour cream makes these muffins super moist, with a awesome rich flavor. This recipe makes two dozen muffins, which is a great because you can share with friends! Use your favorite apples, this recipe used Northern Spy. Honey Crisp are one of my favorite apples, along with Gala and Fuji. A tart apple would do well here too.
