			<description>This is very rich and very decadent. For special occasions or romantic picnics. Emmenthaler cheese can be substituted for Gruyere, or use a combination of both. It is possible to use sour cream in place of whipping cream. It should not be necessary to season the filling with salt because the smoked fish is already quite salty, but do so, sparingly, if desired. Time does not include chilling the pastry. If you are concerned about calories and/or cholesterol, try substituting low fat evaporated milk for the cream - it will not taste the same, but it might make you feel less guilty! You could even use Julesong's Oil Crust Pie Shell #202023. I've not tried it myself, but it has good reviews. Moi? 			<description>A great pie to add silverbeet to your diet. Even my children enjoy this open pie. You can  use pre-made pie crusts or frozen shortcrust pastry sheets as the pie shell. It even turns out OK without a pie shell at all! I've made this pie gluten-free by using ChristinaCeline's Recipe#214686 as the pie crust and you dot need to grease the pie dish or cook the pastry shell before filling.   I use light ricotta cheese and light cheddar in my pie to reduce the fat content- you can use the full versions if you wish.  You can also add in some cooked diced bacon or ham pieces with the silverbeet if desired or add in some sliced chillies if you like some heat in your pie. 			<description>Well everything else it seems has its muffin pan version on Zaar: from meatloaf to pizza to apple pie and even twice-baked potatoes, but I couldn't find any quiches.  I have posted here my adapted version of a recipe for Sweet Potato and Leek Quiches made in muffin pans that I found in a March 2005 issue of 'Fresh'.  The recipe specifies chopping the sweet potato into chunks  2.5 cm (approximately one inch). Zaar wouldn't allow me to specify the size of the chunks in the list of ingredients. 
To make these quiches as appetizers, you could also use smaller recessed muffin pans, although that could be quite fiddly.  For variation and added flavour, add chopped bacon pieces. 			<description>Turn Christmas Day leftovers into a delicious Boxing Day treat: Roast Potato Tortilla!  I've adapted this recipe from one which featured in the pre-Christmas 2008 Australian magazine 'New Idea' as an excellent way to give new life to leftover roast potatoes. According to the Zaar Kitchen Dictionary, in Spain, the word 'tortilla' refers to a thin omelette, the traditional version of which contains potatoes and Spanish onions.  That I find intriguing as I've been making something similar for years - raw potato cubed and onion, garlic and herbs - simply dubbed by me as a 'Chip Omelette'. Very UNsophisticated but delicious nonetheless. You can, of course, use this recipe at any time of the year to use up leftover roast potatoes or any leftover vegetables: sweet potatoes, zucchinis, mushrooms, peas or corn.  With a recipe such as this in your repertoire, you may well want to  make extra roast potatoes whenever you're roasting potatoes.  Traditionally, in Spain, Roast Potato Tortilla is served warm or cold.  This makes it ideal for picnics, potlucks and take-to-work lunches.  Untraditionally, if you prefer it warm, it is easily re-heated in the microwave. The secret is slow cooking the meat to increase the flavour. The addition of a good beer is optional and you may not want to do this if it is for children also.  This recipe has a fairly long preparation time and should be cooked a day in advance of when you plan to eat it.
A good steak &amp;amp; kidney pie should not be fancied up with exotic herbs, spices or vegetables. Some of my American friends have loved this pie although, on occasion, I had to substitute additional mushrooms (just before baking) for kidneys. To my surprise, his creation was delicious and had no strange taste at all; the meat tasted similar to dark meat chicken.  He had 4 squirrels, which yielded a little over 1 pound of meat.  He ended up with 2 pot pies because he wanted a lot of potato, and used full 15 ounce cans of lima beans and green peas.  Our pot pies were packed with vegetables with squirrel accents. 			<description>I invented these extreme variations of Quiche Lorraine at the end of ZWT5 based on Karen Elizabeth's Recipe #299242 #299242, taking advantage of the unique ingredients I had bought over the tour.  Each variation I tried and pictured was great in its own way.  Next time, if I had piperade sauce on hand (Julie B's Hive's Recipe #233205 #233205), I might add that on a wedge.  The measurements for toppings are for 1 choice of topping to cover the entire quiche.  Choose 1,2,3,4, or 5 toppings, and make a decorative pattern, allowing small wedges to be cut of this rich quiche.  If available, Pillsbury's refrigerated pie crust works well (do not prick or pre-bake) in a glass deep-dish pie plate.  I recommend very small wedges (12 servings), this is very rich. Note that Morningstar Farms recently changed their product to include egg and dairy, so read the label before buying (not all stores carry the brand new bags, Boca is my second choice). The best part is it's an all-in-one meal, you don't have to serve side dishes (although a dark green salad with a light dressing would go well too). 			<description>Tourti&amp;egrave;re is a French Canadian meat pie which is traditionally served at Christmas. It may be made from pork, beef or a combination of meats sometimes including veal. Different regions in Quebec have their own traditional recipes. Some regions use game such as hare or duck rather than beef and pork. The pies should not have too much filling as they are just a part of the whole traditional Christmas dinner. It's usually served with tomato ketchup. This recipe is the creation of Mme Jehane Benoit, a famous Quebec cooking expert who received the Order of Canada for her contributions to Canadian cuisine. These are ingredients I always have on hand and can whip this up a head of time or in the morning. Measurements can be altered to taste. If you like spicy, savory add more, if not, add less. The salsa gives this quiche a nice kick and the flavors of cilantro, sausage and potatoes add to the taste and textures. This is a family favorite in my house. Great for overnight company as it feeds alot.
