tourtiere

This is a traditional dish for French Canadians and is pronounced "tort-ee-air". The true French Canadian meat pie has a lard-based pastry, but you can substitute a basic shortcrust if you prefer a lighter crust. If the potato is omitted, the filling will be less dense. Tourtière is traditionally served with pickles beets or other pickles and a salad. -- posted by Strawberry Girl

Traditional Tourtiere

Recipe for individual meat pies [tortieres], popular in Quebec in the Christmas season. The Tourtiere is usually made like a casserole or pie. I don't see any reason why you couldn't make them into "individual" pies, but adjustments would have to be made in the cooking times. -- posted by Frank Butcher

I started making this for my family when I was around 13. My brother Adam, who I call Adi, was crazy about it. Some people use creamed corn, I found that the frozen corn kept everything nice and moist. I eyeballed everything in this recipe, so hopefully the amounts are fairly accurate. Enjoy... -- posted by Miraklegirl

The Ultimate Tourtiere

Posted as a request. Tourtiere is a traditional favourite, and this recipe says it's been adapted to work with today's much leaner ground pork. The prep time listed is just based on making the meat filling and not the pie crust, which a recipe for is not given, so just use your favourite recipe.
Potato and Bacon Tourtie're

A tourtie're is a savory French Canadian pie. Originally this was made in a cast iron pot over coals. This recipe is made in the oven. The unique part of this recipe is that the topping us poured over the inside of the pie after it is cooked. This is great for brunch or a hearty breakfast. Personally I would love to try this in the cast iron over the campfire and as soon as I do will report how it works. -- posted by LAURIE

Rustic Salmon Pie

Delicious and easy, great for a special occasion or even a week day dinner. The pastry on this is lushious! I used frozen butter and grated it, made it sooo flaky and delicious!! I think one could use almost any filling, I used pink salmon, probably the sockeye would have looked prettier. I'm sure a meat/chicken filling would work beautifully too.

Tourtiere Tarts

Tourtiere is a French Canadian meat pie that is traditionally served on Christmas Eve. I first ever had these at the home of a French Canadian friend..I have been making them at Christmas time as a make ahead appetizer for years now. It can be made into one individual pie, but I prefer the individual tarts..I freeze these individually on cookie sheets and then vacuum seal in my bagger or can be stored in a plastic container. -- posted by Cat^..^atude

Like Emeril, our heritage is French Canadian, and after testing both his recipe and ours, my family agrees that our recipe has more salmon flavor due to the canned salmon. -- posted by Michele M.

French Canadian Tourtiere

There are almost as many recipes for this traditional French Canadian meat pie as there are French Canadians. I come by this one honestly as my father is of francophone heritage - his ancestors settled in Quebec back in the 1600s. Our family tradition is to serve this on Christmas Eve with beef gravy and petite pois (tiny sweet peas). -- posted by shopkeepervicki

Mme Benoit's Tourtière

Tourtière is a French Canadian meat pie which is traditionally served at Christmas. It may be made from pork, beef or a combination of meats sometimes including veal. Different regions in Quebec have their own traditional recipes. Some regions use game such as hare or duck rather than beef and pork. The pies should not have too much filling as they are just a part of the whole traditional Christmas dinner. It's usually served with tomato ketchup. This recipe is the creation of Mme Jehane Benoit, a famous Quebec cooking expert who received the Order of Canada for her contributions to Canadian cuisine. I found this recipe on recipesource.com and on blogger.com where it was posted by Lizzy Ferland. It is originally from the Canadiana Cookbook. -- posted by Dreamer in Ontario
