It has great, easy to find and healthy ingredients.  Made in the crockpot.  Can be ready for you to come home to (and smells incredible).  Just pay attention to the canned/stewed tomatoes you pick up to make sure they are vinegar free.  Also if you are concerned make sure there isn't any high fructose corn syrup in those canned tomatoes also.  The more natural the better.  This is great even with gluten free cornbread. Stew beef would be traditional and may be substituted, but the short ribs give it an additional unctuousness from their gelatin. Bone-in is preferable, but the nutrition information comes up wrong, so I listed the boneless first. (This could also be adapted for the crockpot - brown the meat, deglaze with the wine, then combine with the veg, spices and stock in the slow cooker. Cook on low 6 hours, then add carrot coins and cook another 2 hours.) 			<description>This is actually based on a suggestion made by another Recipezaar member, SarasotaCook.  I had made a request for ideas to use up some ingredients in my freezer and pantry, and she kindly described how she likes to prepare chicken using the ingredients I had on hand.  I took her idea and this is what I came up with.  Sarasota told me to go ahead and post the recipe, so here is how I prepared it. I used Muir Glen organic for the diced tomatoes.  Note: I removed the skin after cooking and served the meat sliced off the bone; the nutritional facts are assuming you ate all of the marinade, didn't spoon out the fat, and ate the skin.  My chicken breasts were huge and had enough meat to feed 3 servings. 			<description>This is a delicious rich-tasting stew that can also be made with beef, venison or a combination of meats.  The juniper berries really enhance the flavour so it is worth trying to find them.  I found my dried juniper berries at a health food store.  They are very strong so it's best to discard them (along with the bay leaf) as you find them in the finished dish. This tastes even better cooked a day or two in advance and re-heated.  It also freezes well. I adapted this from a recipe on a pamphlet I picked up from an elk farmer near Ottawa. Elk is very lean and also very tender when cooked slowly on low heat (or quickly on high heat).  It is very low in calories, fat and cholesterol and high in protein. Hints: I cook a batch of bacon in advance and keep in the freezer to add at the end.
