Hard to believe when in competition with other cheese and meat-loaded pies. This one is full of vegetables with low-fat cheeses and homemade sauce in a whole wheat crust. Baked in a springform pan, the sides allow for an attractive design of plum tomatoes and fresh basil leaves. 			<title>Iron Mike's Sweet Tomato Pizza Sauce - the Spirit of Cincinnati</title>

			<description>So I grew up in Cincinnati. 18 years of Cincy Chili, Ribs, Ice Cream, and, of course, LaRosa's Pizza, whose sauce is flavorful and SWEET. Now that I've been away, I find you can't get any pizza remotely close ANYwhere else. Now this is no copycat recipe, but it captures the spirit of Buddy L's pizza sauce. It complements vegetable toppings as well as meats... My wife and I have not ordered pizza out since this sauce was concocted... I HIGHLY recommend using caetb's pizza dough with this sauce. (Recipe #38512 - the one with the wine...) I put the ingredients in the bread machine and it turns out great every time. I cook the finished pizza between 400 and 425 degrees fahrenheit for 9-12 minutes on a normal cookie sheet, or 11-15 minutes on an &amp;quot;air cookie sheet.&amp;quot; (My wife and I prefer the normal cookie sheet, so the crust cooks and the cheese doesn't burn...) I'd love to hear feedback from others, especially misplaced Cincinnati Folks - let me know your thoughts!

Mike's Notes:  Since I concocted and posted this recipe, I have been back to Cincinnati... Needless to say, when I had the &amp;quot;real thing,&amp;quot; I was mildly disappointed!  Doh!  I'm thinking about decreasing the &amp;quot;sweet&amp;quot; contents by 1/2 tbsp each on the honey and brown sugar - it IS awfully sweet! 			<description>Heres the deal.if you want REAL authentic Italian tomato sauce, youve come to the right place. Sure you can save yourself all the time by opening a couple cans of diced/peeled tomatoes, but then again, thats not authentic at all. You can freeze this sauce for later use.

This sauce is perfect for anything that requires a tomato sauce: e.g. spaghetti, lasagne, pizza sauce, etc. 

My girlfriend learned this authentic recipe while living in Italy for several years. Its simple, but takes a lot of time and a lot of love, but its well worth the effort! This is for your free Saturday or Sunday when you will be in the house for the day. 

Add more tomatoes, garlic, or basil if you wish. There really is no set amount for each of these, but I do suggest a minimum of 10 whole red ripe tomatoes, and a minimum of 5 garlic cloves. Add some crushed red pepper to give it a kick if you wish. 

This recipe is the rundown of how I make the sauce now. It took me several attempts to really master this, but once you get it down you can make more tomatoes at a time. I usually work with two pots and start out with 10 in each pot, skin all the tomatoes in both, combine and start more in the empty pot to really make a large pot to freeze. The local vegetable stand sells 25 lb. baskets for $9 while in season. We do 50 lbs. a week for a month, so we can freeze and have great sauce all during the winter.

			<description>Check out this trick - a whole, unpeeled tomato goes in the pot, and a tasty, seed-free, peel-free tomato sauce comes out!  Okay, well, maybe it's not really magic, but it's a great trick to save you from having to peel, chop, and de-seed all those tomatoes (which is the reason I almost never made sauce from my garden tomatoes until now).

We'll take care of the peels and seeds with a blender/food processor and a fine mesh strainer.  Yes, a couple of extra things to clean, but it's still faster than all that peeling and chopping!  Also, because the peels are cooked in the sauce, you preserve more of the nutrients in them.

This is a highly customizable recipe (really more a framework than anything else) - make it smooth or chunky, with meat or vegetarian, regular or low-sodium, or even use it to hide a few extra veggies (a tip for you parents of picky children - you can make them completely undetectable).  The quantities are inexact because there's so much variation in the size, taste and texture of fresh tomatoes, and anything else you add will change the flavor.  So you really have to adjust the seasonings and other ingredients to compensate.  This is part of the art of making tomato sauce, but don't be intimidated!
