			<description>One of my favorite restaurants in Seattle was Kaleenka's on First Avenue. I loved their borshch and piroshky, and I always felt warm and comfortable in the restaurant. Kaleenka's has unfortunately closed, but I did find their recipe for piroshky in &amp;quot;Dining Ethnic Around Puget Sound&amp;quot; which was published in 1993. Kaleenka featured good Russian hearty fare, traditional cooking from the Ukraine, Uzbekistan, and Georgia. The name &amp;quot;Kaleenka&amp;quot; was derived from a ubiquitous shrub that grows all across Russia, which is revered since ancient times as a symbol of the land and culture. The Kaleenka notes that &amp;quot;piroshky&amp;quot; is derived from a Russian word pronounced &amp;quot;peer,&amp;quot; which means &amp;quot;feast.&amp;quot; Many different fillings are common, including chicken, fish, and fruits, but this beef and cheese filling is the favorite. In those days before food processors, she used a meat grinder. Which is how I'm posting this recipe.  I process this the same way using my Kitchenaid w/ attachments or sometimes I just give the cheese and pimentos a few zaps in the processor. This makes lovely tea sandwiches using whole wheat or white bread with the crusts removed and cut in quarters. 			<description>This is my latest concoction in my mission to bring healthier food to my household.  Over the past few weeks I have been using Fridays to try out different versions of healthier burgers.  Tonight we had these Thai inspired turkey burgers.  They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste.  I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup.  I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. I saute any misc veggies I have laying around such as mushrooms and spinach and add them to the mix.  These can also be put into casings and refrigerated.  The colder the rice the easier it will be coat in bread crumbs.  I can't say how long because they never lasted longer than a day or so. 			<description>Chef Brad Fosseen serves these delicious, hearty burgers at his Spokane restaurants and they are one of the most popular dishes on the menu!  The burger is great as is or you can add additional seasonings (such as chili powder or curry) in the 4th step.
When sauteing the burgers, start with a cold pan; it gives them a nice crust. 
At the restaurant, the chef sautees the burger for 2-3 minutes, flips it, adds a cheese slice, and then finishes it in a 400-degree oven for a couple more minutes.  These can also be baked.
