			<description>These are by far, the very best salmon cakes I've ever had.  The cakes I had as a kid were a mixture of salmon, egg and breadcrumbs.  Too bad my mother didn't have this recipe.  I may have been more willing to eat them.  I prefer to use Sockeye for its wonderful pink colour.  Note: When draining the salmon, remove the skin, but not the soft bones. (The idea of blueberries mixed in a corn salad intrigued me, and love all the ingredients so I made this.  DS and I liked it a lot, not DH-think the cumin might have been too much for him so if you have a dislike for cumin you should reduce it.)    Priscilla was inspired to create this recipe b/c of &amp;quot;her father's post-heart attack switch to a healthier diet.  She created this dish with some of her favorite healthful foods.  Dad?  He just turned 90.&amp;quot;  Love that story.:)  Feel free to sub in green onion tops for the chives.   After reading Chef#1227141 review I agree a bit of paprika on the salmon would be even better!  I served with brown rice but a noodle thing would be good too. I have listed the weight below as 1kg and I feel this would serve 4-5 as a main with a nice green salad and some crusty bread and about 10 as an appetizer or as part of a buffet style meal. If you happen to have long pepper, you can use that instead of black pepper. You may want to cook the filets less than 15 minutes, depending on how thick they are. Don't turn them too much, as they will fall apart.

These are a breeze to make but they tick all the taste boxes, as well as being elegant. Cucumbers do vary in size, and I have suggested a medium cucumber, which is about 10&amp;quot; to 12&amp;quot; long.........however, any size will do!! Adjust the cr&amp;egrave;me fraiche to how many cups you yield from a cucumber, I managed to make 30 cups and used 10 tablespoons of cr&amp;egrave;me fra&amp;icirc;che for that amount, 1 teaspoon per cup. Serve these with cocktails and pre-dinner drinks, or as part of a buffet. The cucumber cups and cr&amp;egrave;me fra&amp;icirc;che can be prepared beforehand, but these should only be assembled 1 hour before serving (at the most) and covered in cling film to ensure the smoked salmon does not dry out.
