			<description>One day we were shopping at Costco in Albuquerque, New Mexico, and a sample lady gave us a sample of salmon spread on a cracker.  It was absolutely DELICIOUS!  The next day we returned and purchased the Bear &amp;amp; Wolf brand of Wild Alaskan Pink Salmon, which is the brand you should use if you can get it.  You can even get it through their website.  The next day the sample woman was not there, so we had to come up with the recipe by trial and error.  I guess you could actually use any brand. 			<description>I was inspired by other tasty fish dishes I have had that were based on mayonaise.  One time I had to use only ingerdients I had on hand, so I came up with this.  I have used this for fresh albacore, yellowtail, and dorado.  It would work for any firm white fish.  My 2 year old and 4 year old both ask for more every time.  Don't fear the mayonaise.  It keeps the fish moist and adds delicious richness without covering up the flavor of the fish. 			<description>Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac &amp;amp; cheese or fried potatoes.

You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture.

The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that!

			<description>The original recipe came from the San Francisco Chronicle.  The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach.  If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use.  However, I have used tuna in water when it was all I had in the pantry.  Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version.  Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!!   I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it.  This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.).
