Roasted Tomato Salsa

Can't beat salsa made from freshly harvested vine ripened tomatoes. Roasting results in a rich full falavoured sweet sauce. The chillies are mild and go well with the richness of the roasted tomatoes. evolved from Mexican, healthy ways with a favourite cuisine.
Homemade Salsa for canning

Found this on on line awhile ago, made some adjustments for heat and chunkiness. I love this recipe because it cans well and the longer it sits, the hotter it gets. You can chill before serving if you want, but it's great right out of the pantry. Makes a great gift. -- posted by TeleComCal

A Unique & Yummy Salsa!

I am a a stickler for using fresh ingredients so when my boyfriend from 5 years ago made this up for the first time I cringed! Pardon me for saying so, but if I hadn't have been living with him I never would have eaten it! Hahahaha!!!! The boyfriend is long gone but this is the only salsa I'll eat! If you aren't used to cilantro it may take a few minutes to grow on you - it did me. Give it a chance though. It is seriously yummy!! -- posted by Lottidawe

Rainbow Roasted Salsa & Gazpacho Bonus

Made this myself. The only non-roasted veggie is ONE, solitary garlic clove which just punches up the flavor. The salsa is not spicy at all. My mom described it as a little sweet. The salsa was a hit. I was tempted to title this Witchin' Salsa (replace the W with a B), but this is more kid-friendly. For you heat-eaters (myself included), you can add cayenne, hot sauce, or replace the jalepenos with other chiles. I just had to go wimpy because of my mom. I swear, I can practicially DRINK tobasco. My mom enjoyed the gazpacho part with a grilled cheese. You can even spread the salsa on crusty bread and call it 'Bruschetta'. Alternatively, you can GRILL the veggies -- posted by nomnom

Salsa Mexicana (Fresh Tomato and Chiles)

From Rick Bayless, 'Authentic Mexican.' If you're looking for an authentic Mexican salsa, this is it! It's so simple too! I only use one onion and two jalapenos when I make it, but I decided I'd post the original recipe instead of altering it. The way I make it produces a medium heat. I'd imagine making it his way would produce a hot salsa. I really like it with the lime juice. I haven't made it with the vinegar yet. -- posted by ChipotleChick

Black Bean and Corn Salsa (Low Fat)

These amounts are only estimated as I really do not measure when making this salsa, start with amounts listed and adjust to taste. I most always use fresh cooked corn removed from the cob to make this, I find that it is much better than frozen or canned corn! Plan ahead the salsa needs to chill for a minimum of 4 hours before serving, don't even think about serving it right away, the flavor will intensify upon chilling! I use a whole small jalapeno pepper, as we like it very spicy, you might want to cut back on the jalapeno pepper slightly to suit taste. This is one of the best recipes for black bean and corn salsa, I make it all the time for my get togethers, everyone loves it and there is never any leftovers, it all goes! Servings is only estimated. -- posted by KITTENCAL

Mexican Pico De Gallo

Ok i learned to make this Pico de Gallo from my mother who learned it from her mother and it has been like that since the women in my family has been making it.
This Pico de Gallo can can be as tangy as you want it to be if you want more lime add more if you want more spicyness add of course more jalapeños.
Tips: Remove the seedsand veins of the peppers if you dont want it to be too spicy hot.

Optoinal: Add Avocado to give the Pico de Gallo a blend between the spicy Jalapeños and the sweet Avocado. But be advised when you use Avocado you must eat it sooner since Avocado goes bad faster then the other ingredient, but the good news is that the acidic nature of the jalapeño keeps the avocado from spoiling so soon.

Store in a sealable container in the fridge. -- posted by Sami D

Dill Pickle Salsa

This is one out of my recipe files from Gourmet class. We had to come up with something "different". What's more different than salsa made with a dill pickle? But, it is good, even if I do say so myself. It's not hot, but if you prefer a hotter salsa, use the hot dill pickles. The yield will depend on the size of your tomato. -- posted by Redneck Epicurean

Queso

My cousin and I created this recipe by accident when we wanted queso but did not have any of the "traditional" Velveeta. We went rummaging and this ended up being my favorite queso ever, and I have not made Velveeta based queso since. It is important to use American cheese to get the right flavor.
Notes:
1. Although I assume black pepper can be used instead of white, white pepper does taste different.
2. You should be able to find Goya products in the Mexican section of your grocery store.
3. If you do not like it very hot, use the mild salsa and use less pepper. -- posted by MistyCat82

Vampire Deterrent

I got this recipe originally from my old next-door neighbor. I watched her make it one Friday in 3 minutes flat, and when she took the cover off her food processor the heavenly smell of garlic just wafted throughout the house and killed every vampire in the neighborhood. My neighbor calls this Moroccan Zchug, my friends call it That-Yummy-Garlic-Stuff and I just smile and pile it on barbecued meats, baked potatoes, whatever. I actually happen to like vampires -- my father was born in Transylvania -- so I hope none are offended by this recipe. Just a boring little note here: there are two kinds of people in this world, cilantro lovers and cilantro haters. I belong to the former, Sushiman to the latter. If you are like Sushiman, just sub parsley for the cilantro. Since I let him put a ring on my finger and pay for my electricity, I've been making it with parsley instead and it's just as good. -- posted by Mirj

The Best Salsa Ever

I like a thin and spicy salsa for my tortilla chips, eggs, tacos and more. This is a very simple version of something you might find at a salsa bar in a Mexican restaurant. If you like it chunky you might consider diced tomatoes and less water. Not bad for something you can make with a $1 can of tomatoes and some ingredients in the spice rack. For a milder version you can skip the habanero sauce and use your favorite hot sauce. -- posted by NorCal Will
