			<title>Stove Top Smoker Brined Salmon</title>

			<description>This is not a difficult recipe to make, but it does require some advanced planning. You may wish to brine the fish the night before serving, setting it out to dry just before bed, and smoke it upon awakening.

Brining and drying the fish prior to cooking creates a protective skin (or pellicle) on the outer surface of the fish. This film helps to hold in the moisture and provides a concentration of flavors from the brine.

The brine basically consists of 4 cups liquid, usually water; a generous quantity of salt, usually some form of sugar, and additional ingredients to flavor the brine. If you have a larger quantity of fish, just make additional brine. Throw brine away after use.

This method includes poaching fresh salmon with the vegetables. If you like, you can substitute carrot for the red pepper. Scales up very easily to make a large batch for a family get together, and goes down VERY WELL with some fresh bread. Hubby now insists that I make this every weekend as his Saturday lunchtime treat! I haven't made it yet, but am putting it here until I can.  You can use salmon fillets with skin, just bake them skin side down, then leave the skin on the baking pan, using only the meat. DS and I liked it a lot, not DH-think the cumin might have been too much for him so if you have a dislike for cumin you should reduce it.)    Priscilla was inspired to create this recipe b/c of &amp;quot;her father's post-heart attack switch to a healthier diet.  She created this dish with some of her favorite healthful foods.  Dad?  He just turned 90.&amp;quot;  Love that story.:)  Feel free to sub in green onion tops for the chives.   After reading Chef#1227141 review I agree a bit of paprika on the salmon would be even better!  I served with brown rice but a noodle thing would be good too.
