Mirin Marinade

This is superb on ahi or scallops to be grilled and served either on a salad or as a main course. Try it with the Pineapple Wasabi Aioli for dipping. Yum! It is enough for 2 good sized ahi steaks (3/4 pound total)or about 1/2 pound large scallops. Reserve an ounce to use as a baste during the grilling process to avoid cross contamination. -- posted by KauaiCarolAnn

Lori's Tuna Salad

Tuna, Cheese and Pasta Salad

Three-color pasta, cubed cheese, tuna, and roasted sweet peppers blend into a spunky salad that we enjoy over 2 suppers during hot summer days. This is an excellent salad that I've served with or without cashews since sometimes I forget those. I don't recall which of my magazines I got this from but it's favorite of mine. -- posted by Cher Jewhurst

Trio of T's Salad (Tuna, Tomato and Tarragon)

This is a Yummy salad! Such fantastic flavors in one place! Super easy, low in fat, and eye appeal galore! I have read that by soaking the red onion in water for 20 minutes will tame it a bit, but I've never felt the need for it. Feel free to use your favorite salad spices, such as, McCormick's Salad Supreme, it's great, but not everyone would care for it. -- posted by FLUFFSTER

Summer Pasta Salad

This is the quintessential summer comfort food. When it was too hot to cook or eat a heavy dinner, my mother would often make this as a light summer meal. The leftovers taste great the next day! NOTE: Many of the spices can be adjusted to taste. I like to experiment with new flavors, like adding dill or curry powder. (cooking time is boiling the pasta and eggs, while prep time is chopping and mixing) -- posted by kolleen1021

Ceviche

Ceviche is a light and refreshing, chilled citrus-marinated seafood salad which originated in Peru. The acidity of the marinade denatures the protein structure of the fish, essentially "cooking" it. The result is a less fishy-tasting dish than other uncooked seafood.

Note: Other types of fresh seafood (such as lobster, shrimp, scallops, octopus, etc) may be substituted for the fish, if desired. Always purchase the freshest seafood you can find, preferably sushi-grade. -- posted by Sephardi Kitchen

Catherine Ann's Enticing Tuna Salad - the Longmeadow Farm

This recipe was saved from many years ago (35) when my then future MIL and I would enjoy a cool, refreshing "time-out" on her screened in porch. Never finding tuna in a can" or a tuna from "anywhere" to be especially great tasting, particularly to my immature palette (I was probably 19 yers.old) I would hem and haw about how I was already full, wasn't hungry, etc...etc...until one day, I thought I would take the plunge and just eat it. And it was as delightful as promised. Maybe it was the time spent with this woman that had such an impact on my life, maybe it was the summer breeze softly making the wind chimes "tinkle" in the distance, either way, I have loved this method of making this simple sandwich ever since. So with great fondness for a great woman, I present to you, the reader, Catherine-Anne's simply lovely tuna salad. -- posted by Andi of Longmeadow Farm

Yellowfin Tuna Summer Salad

Could there be a more delightful dish to usher in the beginning of the warm weather season than a delicious, crispy salad? As an added bonus, this salad is as pretty as a picture and tastes as good as it looks!
We have used both the Yellowfin tuna (also known as Ahi tuna) marinated in lemon dill and olive oil, and the one with roasted garlic in olive oil. Both are equally delicious.
My husband and I have a newsletter publishing company and work from home. I came up with this recipe because I needed something crunchy and filling for a mid-day meal. And one that wasn't calorie laden. -- posted by Olivia Paige

Nicoise Salad With Grilled Tuna

This is our family’s favorite Nicoise salad. You can substitute canned tuna or grilled chicken for the grilled tuna. Change out the vegetables to suit your taste. The dressing is the best part – flavorful enough to stand up to the potatoes and tuna, without overwhelming the greens. I like to use a mix of lettuces in this salad – for flavor and appearance. Serving size is a generous plateful. -- posted by dianegrapegrower

Tuna Pasta Salad

This is a quick and simple lunch or light supper from 2009 Taste of Home Annual Recipes (courtesy of Sue Gronholz, Beaver Dam, Wisconsin). I doubled the recipe to have leftovers during the week. I followed the recipe except I used whole wheat pasta shells, red onion, regular mayonnaise (1 cup instead of 2 cups), and I tripled the peas. I also used 1/2 teaspoon salt and decided to add lemon pepper seasoning at the end for flavor. Works great when you're hungry now and need something quick.
If you want a tuna salad fresh of a fishy or metallic taste - you need to drain the tuna. put it in a fine meshed colander; don't just drain if from the can. Rinse the tuna with cold water and while rinsing, break up the chunks with your fingers so that the flakes of tuna are uniform in size. After rinsing, put colander of tuna in the refrigerator for 30 mins while it drains. -- posted by Ceezie

Pepper Crusted Tuna, Mustard Sauce and a Pea Shoot Salad

This was adapted by a friend of mine ... who got it from a caterer ... who got it from a friend ... who got it from a magazine, who got it from WHO KNOWS where. Well you get the idea - then I got it. Regardless, I love it and have been making it for a couple of years and it certainly isn't difficult and I love that pea sprouts have become more widely available this days. The sprouts or also known as shoots and tuna mix nicely with the tangy mustard sauce to make a very easy quick dish to make. It literally takes 15 maybe 20 minutes to make. And agreed you will pay a little premium for the pea sprouts but you could also use other micro greens or spring greens, but you don't know what you are missing until you try them. And the tuna ... buy it when it goes on sale, that is when I do. This is rich in flavor but at the same time very delicate and well worth the extra money for a nice Sunday dinner or for company. Just add a soup to start and maybe some grilled bread to make a perfect dinner. -- posted by SarasotaCook

I was recently sold on quinoa and how awesome it is! Gluten free, an almost perfect protein, easy to prepare, the list goes on! This is a combination of two recipes, one of which I altered. The first is from this site, (#16399, Quinoa-Toasted). The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes. We thought it tasted a bit like sushi and loved it! Feel free to add more heat, but this had enough for our family as we've got wee ones.
