Try a Cashew Chicken Salad in a Sandwich on a Hot Summer Evening

The title is pretty self-explanatory, and I think you'll agree that this is a nice way to spend a summer evening. Kettle (crunchy) potato chips on the side, a couple of home-made cookies or a brownie, some carrot sticks, and you've got a pretty decent brown-bag lunch, too. The original recipe (from Taste of Home, Aug/Sep 09) calls for pumpernickel bread. -- posted by Debber

Thanksgiving Leftovers: Harvest Turkey Bread Salad

This is a great panzanella bread salad using up those leftover pieces of turkey meat, rolls, and cranberries. Alternately, you could use Texas Toast croutons (from the store) or toast up some of the leftover rolls instead of using Italian bread. Thanks to the Taste Of Home folks for a great way to make the day after Thanksgiving as tasty as the Big Dinner. -- posted by Debber

The Realtor's Buttermilk Garlic Salad Dressing

I love this dressing! It's so creamy and delicious! If you are out of buttermilk, you can substitute 1/4 cup sour cream and 1/4 cup milk. I have done that many times with very good results. This one tastes great either way. Make it the day before you plan to use it if you can. That way the flavors will have time to blend. -- posted by Realtor by day, Chef by night

Fresh Cabbage and Tomato Salad

This recipe was in a brochure from our Health Insurance Company. It sounded good so I tried it and we liked it very much. It is a heart healthy recipe from the National Heart, Lung and Blood Institute. Guess that can't hurt...lol. You can make more of the dressing if you like extra flavor from that. We made a double batch of the dressing. Cook time is chill time if you want it chilled, but other than that there is no actual cooking time. Use a small head of cabbage. I couldn't get the software to let me reflect that in the directions or the ingredients. -- posted by OceanLuvinGranny

Wes' Super Awesome Pea Salad

I got this recipe from my buddy Wes which was a dish that his grandmother always made. People are sometimes afraid to try this 'cause the ingredients may seem strange, but I'm telling you, it's AWESOME! And once they try it they can't get enough. Also, don't be afraid of the canned peas, they really do work better than fresh or frozen. This recipe can easily be doubled or tripled for larger groups. I hope you enjoy! -- posted by Lovin' Life

Loaded Ranch Potato Salad

My deli stopped carrying their ranch potato salad, so I needed to come up with one! This is a super easy potato salad--great for leftover boiled potatoes! (And no egg!) I also cheat and usually use the real bacon pieces from the store with dried snipped chives. I hope that you enjoy! Note: Cooking time is cooling time and does not include cooking the potatoes. -- posted by Dwynnie

Fresh Corn, Black Beans, and Tomato Salad

Another great tasting recipe from Cook's Illustrated:
Fresh off the cob is perhaps the best way to eat summer corn, but corn tossed with beans and tomatoes is a close second. The sweetness of the beans and the acidity of the tomatoes bring out the flavor of the corn. We wanted to find the best way to combine and flavor this trio. Here’s what we discovered:
Boil the ears of corn until just tender, then cool them quickly under running water so that they don’t overcook.
Canned black beans taste fine, as long as you rinse and drain them thoroughly to remove any of the liquid in which they come packed.
Choose sweet-tasting, firm-textured grape or cherry tomatoes. They release less watery juice into the salad than diced full-size tomatoes do. -- posted by Pi-E

Spicy Millet Pumpkin Salad

This is a healthy, veggie-filled salad, which is perfect for an autumn dinner or potluck.
It adds an oriental twist to one of the most traditional fall veggies. If you cant find hokkaido squash, you may use any pumpkin or squash you like (prepare accordingly).
This is a very versatile dish as you can adjust the veggies and spices to your liking and also eat it either hot or cold. -- posted by Lalaloula

Creamy Cucumber Salad Dressing

Delicious dairy-free version of cucumber dressing. I liked to use 2 small cucumbers, rather than 1 large because of the seeds. IF using a large or non-organic cucumber, make sure there is no wax on the peel, and scrap some of the seeds out! For a thicker, creamier dressing add more cashews and less water; for a thinner, lighter dressing add more water and fewer nuts. -- posted by Kozmic Blues

Layered Pear, Feta, Cranberry, Salad With a Balsamic Dressing

This is just a PRETTY salad. I like to serve this in a glass bowl so you can see the layers. Now obviously you can just toss it all together, but for a dinner party or pot luck dinner, this is just really nice. Simple ingredients and it goes together in just minutes. Now I use my basic vinaigrette which you will have a little left over, or if you want just use a good store bought dressing. My secret for this salad is to add a little honey to the dressing that goes really well with the pears and the cranberries. You could always add a little honey to a store bought dressing to achieve the same taste. -- posted by SarasotaCook

Sarasota's Simple Sides-Mushrooms, Fennel, Tomatoes & Onion

Now, we all know how to grill vegetables. This is my favorite marinade and I make this all the time with local market ingredients. And what is nice is you can use the outside grill, inside grill pan or even just the broiler. I serve this with steak, chicken, fish, or just about anything you can think of and sometimes just as a salad. It is super quick, easy, and absolutley delish. Fresh slices of tomatoes (yellow, purple, red and orange; fennel, onions and portabello mushrooms); a easy quick marinade and what a side dish. And think healthy. One of my girlfriends makes this all the time since I showed her; on baguettes, with pasta, over fish and just as a side. Serve these warm vegetables over a bed of bibb lettuce with some fresh grated peccerino romano for a quick healthy salad. -- posted by SarasotaCook

Sweet Savory and Spicy Potato Salad

My friend Tricia made this for a cookout and I fell in love! It is the only potato salad I will make from now on. My husband never eats potato sald. He says "If there is meat around, why waste the time on side dishes?" He ate two HUGE servings of this......it is THAT good! If you cannot find candied jalapenos, just use one small fresh jalapeno (seeded and minced) and a tablespoon of sugar....it is just as good. We love curry, so we add more curry powder. Taste it and customize it to your taste!

Gazpacho Shrimp Salad

This is great to serve anytime! Makes a great lunch and a fine dinner if you toss a little wine and a loaf of crusty bread in the deal! You can use whatever vinegar you like, and can add, after tasting, more. Nakano makes several seasoned vinegars that are scrumptious! Smoked paprika is one of the best seasonings I've ever used; you can't believe how fragrant it is nd the taste is amazing. However, having said that, it is very pricey.
Magic Fruit Salad

Take a trip to the Farmer's Market with your kids and choose fruits to make a fresh fruit salad! Serve your fruit salad as a snack or with a meal. This salad is best when eaten as soon as it is ready. Each serving is 1/2 cup. I found this recipe in a Cornell Cooperative Extention leaflet. I have not tried this recipe, but I'm posting it for safe keeping. -- posted by internetnut

Waldorf Salad With Lemon Dressing

It just wouldn’t be the holidays without a Waldorf Salad on our table. There are some variations. Not everyone uses marshmallows. Dried cranberries or raisins would probably be an excellent addition. Just experiment — the lemon dressing will make it tasty!

California Salad (Tomato, Cucumber and Onions)

Simple, refreshing and delicious! Juicy tomatoes, crisp cucumbers and crunchy onion combine with Miracle Whip to make an unbelievably delicious salad! You will be surprised and delighted...the juice from the tomatoes combines so well with the Miracle Whip, you'll never know that Miracle Whip is in it once the flavors have combined. You may be tempted to add something to it, it seems too simple to be good, but try it like this first, I guarantee you'll like it! I make it often for potlucks and BBQ's and people are always amazed at the simplicity of this recipe. Family legend is that relatives from California always made this salad and so it was dubbed 'California Salad'. Can easily be made low/non-fat, but I prefer the regular version. It is also great as a 'relish' on grilled meats, especially brats. This is also a very 'forgiving' recipe...I never measure anything, just throw it together. Just remember the veggie ratio is 1:1:1 and you'll do fine! **Unless you live in a warm climate and can grow or get locally grown tomatoes all year long, don't bother making this in the winter! Fresh, ripe juicy tomatoes are the key to making this salad** Easily doubled or tripled, but yield will vary depending on size of the vegetables. "Cooking time" is refrigerator time! -- posted by The Frugal Cheflady

Spicy Coleslaw

I am a single woman living on my own. When I come home from work the last thing I want to do is slave over a hot stove or spend hours making dinner. I need quick and easy options. I try to utilize as many "convenience" items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own. Enjoy! -- posted by Chef #188403

A Greek inspired salad of fresh tomato halves, fetta cheese, olive oil and herbs. Perfect side dish for a meal, or wrapped up in a piece of flat bread it makes a great sandwich. It is absolutely essential to have good quality tomatoes for this dish. Little mini roma tomatoes are ideal, or any vine-ripened or organic fruit. -- posted by becy
