			<title>Tuna Pasta Salad</title>

			<description>This is a quick and simple lunch or light supper from 2009 Taste of Home Annual Recipes (courtesy of Sue Gronholz, Beaver Dam, Wisconsin).  I doubled the recipe to have leftovers during the week.  I followed the recipe except I used whole wheat pasta shells, red onion, regular mayonnaise (1 cup instead of 2 cups), and I tripled the peas.  I also used 1/2 teaspoon salt and decided to add lemon pepper seasoning at the end for flavor.  Works great when you're hungry now and need something quick. 			<description>Combining spicy and cooling ingredients for a festive main dish shrimp salad served on bulgur and ringed by avocado relish. Formalize the presentation by molding the shrimp and rice (in a rice mold or 6-oz. ramekin), then ringing with avocado relish and pouring remaining chipotle dressing as outer ring.  The Avocado Relish can be made ahead and refrigerated. The Chipotle dressing makes 3 cups and can be held in the top of a double boiler over simmering water for 2 hours. (Bulgur is a nutritious, versatile wheat product with a pleasant, nut-like flavor and an extended shelf-life that allows it to be stored for long periods; it can be substituted for converted rice, although it is more nutritious.) Out of desperation I started making salads to go but the lettuce wraps would always fall apart or turn funky around the edges.  I decided to wrap them in tortillas, saran wrap and foil to take with me to work or appointments.  These handy all in ones are a great tummy saver when you are hungry and need a pick up or need to be able to eat quick and well.  Teachers do that all the tme-20 min. for lunch and usually less than that.  This idea came in handy.  Lunchbox friendly too as you can put a cool pack on them to keep cool for hours. Note:  Prep time does not include the time for cooking shrimp if using fresh instead of frozen pre-cooked shrimp.  Also, the recipe calls for microwaving the bacon and also the dressing mixture. The original recipe also calls for the jarred roasted red peppers but I find I don't really miss it if I don't have them. One of my favourites and it's even good thrown in a tortilla with a little lettuce for a sandwich!  I will say though, it doesn't keep that well - eat it the day you make it as it get kind of watery and the avocado gets a little mushy the next day. 			<description>This is classic Cobb salad flavors, but a definite twist. Smokey turkey bacon, mango, seafood (crab, lobster and or shrimp) and a fresh citrus vinaigrette, but just as good. Now for expense reasons, I love shrimp and crab, but by all means, use lobster for the ultimate if you want. I try to use some good crab (canned is fine) as well as some great shrimp from your local grocer.  You can even use some grilled salmon which is just as fine for this.

I love this elegant salad. You can vary the greens if you want some fresh spring greens, arugula or even watercress, but I happen to like romaine for my salad.  Also I like to use the classic flavors of egg, bacon, tomatoes, but I love to add some onions to the salad base and then the fruit gives it a nice twist with the seafood and the citrus vinaigrette is a nice change.  I still top with gorgonzola for the bleu cheese lovers for some of that basic flavor and then top with with fine chopped walnuts for some crunch.  But have fun, use your favorites... nothing wrong with changing it up a bit.

Yes lots of ingredients, but nothing hard, just some chopping involved, but it makes a great hearty salad. Fun for entertaining.  Serve a nice bowl of fresh soup to start and then some homemade bread with the salad ... that is a very hearty dinner and a nice change from heavy pastas, sauces and casseroles.  But I'm a big salad person, so I love it and it is always a crowd pleaser. Well you get the idea - then I got it. Regardless, I love it and have been making it for a couple of years and it certainly isn't difficult and I love that pea sprouts have become more widely available this days.  The sprouts or also known as shoots and tuna mix nicely with the tangy mustard sauce to make a very easy quick dish to make. It literally takes 15 maybe 20 minutes to make. And agreed you will pay a little premium for the pea sprouts but you could also use other micro greens or spring greens, but you don't know what you are missing until you try them.  And the tuna ... buy it when it goes on sale, that is when I do. This is rich in flavor but at the same time very delicate and well worth the extra money for a nice Sunday dinner or for company. 			<description>This is quick, easy, and makes a great light dinner.  I love salads, and love to try to come up with something new that is still hearty, satisfying and easy.  I love to serve this with a hearty creamy white bean soup, or maybe a fresh garden potato soup or your favorite. Also, fresh grilled asparagus, grilled zucchini or marinated mushrooms or some green beans. I serve these pretty shells over a small bed of lettuce and let the fresh tomato vinaigrette be the dressing for that as well.  One last note ... you can use canned or packaged tuna (I prefer the packaged, much nicer texture), but I use fresh tuna for this.  It literally takes 5 minutes or less to saute, let it cool as you cut up and prepare everything else.  Stuffed shells and then drizzled with a fresh tomato vinaigrette over fresh greens makes a great salad option to that every night tossed salad.
