			<description>DH &amp;amp; I were the lucky recipients of a lrg amt of fresh salmon recently. 18 lbs went to be smoked &amp;amp; the rest is in our freezer, so I've been on a mission to expand my salmon horizons. The Alaska Seafood Marketing Institute has been my best source &amp;amp; they didn't disappoint me w/this truly special potato salad that ranks right behind &amp;quot;my mama's best&amp;quot; for me. They described it as a side-dish, but I've used it more as a hearty 1-dish salad meal &amp;amp; just served it w/crusty bread &amp;amp; a variety of veggie/salad items at its side (sliced tomato &amp;amp; cucumber, olives, hard-boiled eggs, etc). Times were estimated &amp;amp; do not include time spent cooking the potatoes. This is a must try! Enjoy! (Edited to Add: To halve this recipe, use 1/2 can salmon &amp;amp; the rest of the ingredients halve easily. Salmon is low in calories and saturated fat, and high in protein, and a healthy fat, the omega-3 essential fatty acids.Which are essential for human health but because they cannot be made by the body, they must be obtained from foods. 			<description>This was put together for lunch at work.  Despite the ingredients, it is still cheaper than buying subsidized food at work, assuming I want to enjoy what I eat:  most was bought on discount or at sales.  And since I have an &amp;quot;on my feet a lot&amp;quot; job, having protein is a must for me.  

Boiling eggs:  add lots of salt to your water.  If egg shells are weak, the change in osmotic pressure will have them &amp;quot;implode&amp;quot; rather than &amp;quot;explode&amp;quot;, if their shells are weak.  The salt doesn't affect egg taste or sodium content much, even if they implode.  Much better... I put in the egg(s), then turn on the heat, and once boiling, reduce and let it go another 7 or so minutes.  

Shrimp: NEVER overcook shrimp.  Two minutes at boiling, max.  I boil water then throw the shrimp in.

Recipe #83189 You can use this, instead of a prepackaged container, which is what I found and used (this time, not in the future!)
