Tuna Pasta Salad

This is a quick and simple lunch or light supper from 2009 Taste of Home Annual Recipes (courtesy of Sue Gronholz, Beaver Dam, Wisconsin). I doubled the recipe to have leftovers during the week. I followed the recipe except I used whole wheat pasta shells, red onion, regular mayonnaise (1 cup instead of 2 cups), and I tripled the peas. I also used 1/2 teaspoon salt and decided to add lemon pepper seasoning at the end for flavor. Works great when you're hungry now and need something quick. Yummy! -- posted by AmyZoe

Peppy Pasta Picnic Salad

Colorful, healthy salad. Have this salad as one to be served along side a green salad and your favorite BBQ. Do not mix your meat and Yogurt dressing with the pasta ingredients until you are at your picnic- it only takes a minute to toss them together. I recommend that you use "HOT" pepperoni sticks not the usual pizza pepperoni. If you don't like too much spice use medium pepperoni but this salad is meant to be spicy or it will be boring. If you do not want to be bothered roasting your garlic just crush it and saute it in a tsp butter for 3 minutes. I say 6 servings this would be as a side salad and depends on the appetites of your group -- posted by Bergy

Creamy Seafood Pasta Salad

"Salad Envy": That's what they'll have when you show up at the next potluck with this creamy, colourful and delicious offering. You can tell them it's low in calories too, but they probably won't believe you. Substitute the shrimp with salmon, tuna or lobster for a different taste experience. Note: After several hours of chilling, the pasta will absorb some of the dressing. To return it to a creamier consistency, simply add one or two tablespoons of salad dressing. Cooking time does not include time for refrigeration. Created for the Craze-E Salad Contest. -- posted by Diana #2

Quick and Easy Pasta Salad

I had never made a pasta salad before, but my girlfriend wanted one for a party, so I threw this together and it turned out amazing. I used italian dressing but next time I might use a sundried tomato dressing. I think that would kick it up a notch. Make sure your pasta water is heavily salted and dont skip on the garlic, it adds a great flavor to the pasta. -- posted by chef victoria #2

Light and Fresh Pasta Salad

Yum! This pasta salad is super easy and versatile. You can add or omit whatever veggies you like.

For the bell pepper, I like using yellow or orange to add great color, but you can use whatever you like. As for the feta cheese, you can purchase crumbled or block; however, I like using block cheese, breaking it down, and upon mixing, it crumbles down perfectly.

I like to make this the night before my event so all the flavors meld together. -- posted by Mitra <3

Jalapeno and Pesto Chicken Pasta Salad

This is a delicious, cold chicken and pasta salad. Very healthy as well. It takes less than 10 minutes to put together and is bursting with flavor from only a few ingredients. I prefer using two jalapenos (SEEDED) but if you want only a very little spice to it, just use one. I wouldn't skimp on any of the ingredients, they all make this salad what it is.

It's too gorgeous out to spend much time in the kithen, but I was pretty impressed how a package of Kraft Classic Ranch with Bacon Pasta Salad can be doctored up to taste homemade. I threw in an extra tomato because it tastes fresher and some extra chives. You could probably top this with nuts or cheese or olives...whatever your heart desires. I was a little worried about this one, but I think it turned out great! Very different than any pasta salad I have eaten before. Give it a try and let me know what you think! -- posted by RJ Hallstrom

Greek Pasta Salad

This is one of our favorite pasta salads. It makes 4 big servings (full lunch) or 8-10 side dish servings. I like to go a little heavy on the feta and the olives, and I use the frozen fresh basil and oregano. We make this for all of our summer cookouts, it's refreshingly different than the standard pasta salads.
Israeli Couscous, Tomato and Mozzarella Salad

My modifications to #116054. The Israeli couscous really makes this a wonderful salad. A small round pasta such as Pearl Pasta can also be substituted. Can be served right away, but best if refrigerated for a few hours. Great for using up tomatoes and basil from the garden. If using larger tomatoes, dice and drain prior to mixing. -- posted by Chef #609434

World's Greatest Macaroni Salad (Seriously!)

A neighbor shared this recipe 30 years ago and it immediately became a "must have" at every family get-together! Feel free to play around with the sugar & vinegar a little - we like it a little more "zippy" but you can tone it down and make it a little sweeter if you want. This is going to look a little runny when you first stir it up, but the dressing thickens quite a lot as it chills! -- posted by Park Rangerette

Tortellini Salad

A simple tortellini salad with veggies and a vinaigrette dressing. Simple, and tastes great warm or cold!

I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like!
Gourmet Pearl Couscous Salad With Vegetables and Cashew Nuts and

Blu Gourmet Pearl Couscous (GI 52) now carries the GI Symbol. Unlike traditional couscous, pearl couscous which takes its name from its pearl-like shape and size is often described as a ‘toasted pasta specialty’. Like regular pasta, it is made from hard (durum) wheat and water. But instead of being dried, it is toasted in an open flame oven. It has a rich, nutty flavour and a chewy texture, with a smooth, almost buttery mouth feel. It makes a perfect side dish to meat, poultry, or fish instead of potatoes, rice, or traditional pastas or couscous. It cooks in around 10 minutes by the absorption method – just like rice – and you can also use it in a variety of dishes – just like rice and other pastas. Product ambassador, chef Gabriel Gate, has developed a number of recipes using pearl couscous. You’ll find it will serve around 10 people at a barbecue and is a great way to use up leftover vegetables. Serves 6. -- posted by Kiwi Kathy
