Colorful Broccoli Summer Salad

This is a refreshing twist on broccoli salad. Slightly sweet and tangy. Great with teriaki pork chops. For optimum flavors, make one day in advanace or at least two hours before service. -- posted by Sherri at the Beach

Pasta Primavera Salad

This is a very fresh, colorful, and vitamin and nutrient rich salad. One large pot of boiling water does all the cooking for the vegetables in this salad. The addition of the vegetables has been timed so that they're all done at the same time. Using a strainer to remove the vegetables from the water stops the cooking fast and leaves you with a hot, lightly seasoned broth to boil the pasta in. From Vegetarian Times. -- posted by Enjolinfam

Grilled Chicken Salad--Few Ww Points

This is a great way to enjoy a barbecue without the guilt of loads of points to calculate in your daily weight watcher journal. I usually have to make extra when my son's around he loves it. Sometimes I use angel hair pasta instead of the spaghetti squash. The prep time includes marinating and cooking time. I hope you enjoy it as much as we do....hot or cold! -- posted by yumyumum

Easy Broccoli Cranberry Salad

This recipe is from from the Cape May Buffet at the Beach Club at Disney World. It's very simplistic but the combination of ingredients make it very flavourful. It doesnt use cheese which makes it a bit different from the regular broccoli cranberry salads I have had in the past. Makes for a nice summertime salad/side dish. -- posted by Sassy in da South

A Lighter Broccoli Salad

I LOOOVE broccoli salad, but have always had a little trouble feeling good about eating it since it has SO many calories! So I took a classic recipe and made it just a little lighter. It's still not as healthy as eating plain ol' broccoli, but it is DELICIOUS! I love to have this in the fridge to grab whenever I get a craving for a snack :) -- posted by Melanie2590

A really nice blend of crisp broccoli, nuts and a tangy sweet dressing!
Phil's Broccoli Salad

I got this recipe from Phil, my school's chief custodian. I am guessing at the number of servings as it would depend on the size of the heads of broccoli used. Phil says to cut up and wash the broccoli the day before preparing so that the broccoli is as dry as possible. I made it the same day I cut up the broccoli by putting the broccoli in my salad spinner. -- posted by Irmgard

Broccoli Cheddar Salad With Toasted Pumpkin

From Vegetarian Times. This potluck classic tastes best when the vegetables are generously coated with creamy dressing - a mayonnaise-yogurt combination makes that possible while keeping calories and fat in check. You can substitute roasted pine nuts for the roasted pumpkin seeds. Time doesn't include chilling overnight. -- posted by Enjolinfam

Vegetable Stir-Fry With Chinese Noodles

This is something that I do mainly for my father because he really loves Chinese food. If you can't find Chinese noodles you can substitute Thai noodles. Please don't use rice noodles because they are too thin and white and will hardly be noticed. Also, the amount of soya sauce is a bit high in this recipe, so feel free to reduce as much as possible. The amount given here will only be a suggestion and really reflects my family's tastes and no one else's. -- posted by Studentchef

Broccoli Crunch With Creamy Almond Dressing

Tiny green florets, crisp apples, crunchy shallots, candied nuts and slivered red onions are tossed in a barely sweet, creamy almond vinaigrette.

Find the freshest broccoli you can and be sure not to overcook them, you just want to blanch them quickly. A wonderful mix of crunch and color! You can make the components ahead of time, but don't dress the salad until you are ready to serve it; preserving the various crunches.
Broccoli in a light dijon vinegrette. The Black Olives and Feta give it a unique flavor and since you use the stems of the broccoli there is little waste. I found this at an organice vegetable site. Sometimes I use more olives, personal taste. -- posted by BakinBaby

Broccoli Slaw Salad

This is a fantastic recipe that you will enjoy as well as your family and guests! This is perfect for a get together, pot lucks, and for no resson at all!
And...you don't have to tell them it's made with reduced fat mayonnaise!
If you can't find Craisins(dried cranberries) you can use regular raisins or the sweet golden raisins. Just soak them in warm water for a few minutes, so that they plump up. If you can't find the broccoli slaw already prepared and packaged up, you can shred chop /shred your own broccoli. This came from the inter-net, author unknown. -- posted by FLUFFSTER

Spicy Peanut Thai Vegetable Salad

This is a very easy, amazingly tasty vegetable salad that takes minutes to make. The combination of all the greens, reds, orange and yellows in the vegetables make a wonderful presentation. It's the vinaigrette that brings all the veggies together. You can use any veggies you happen to have on hand; I think it would be great with tomatoes and lightly cooked asparagus. I made it at the last minute for a picnic with the veggies I had in my vegetable bin - everyone raved. I made it the next day for a work luncheon and had the same reviews. -- posted by Eight West

This cabbage salad is very flexible, and very tasty! It's one of those salads where you can't stay out of it! You can add just about any vegetable you'd like. There are many variations of this recipe. I got this version from a coworker. This recipe is vegetarian, but be sure you read the ingredients on your Ramen Noodles. Not all oriental-flavored noodles are vegetarian. For non-vegetarians, I've heard of adding chicken instead of the tofu.
