			<description>A nice light Asian inspired salad dressing or dipping sauce that goes well on a salad or as accompanining sauce for entrees and apps.  You can adjust the heat according to your personal tastes.  Start small with the pepper, and work your way up if you are not sure.  You can interchange the lemon juice with lime or orange, depending on your taste and what you have on hand.  As far as the fish sauce goes, its one of those things that on its own, not so good, but add it to something, and it really brings up the flavor. 			<description>I got this from a Sunset magazine about 15 years ago and having lost it and found it several times, I'm finally putting it in here for sanity's sake!  The recipe calls for sliced deli roast beef, but I've used leftover steak or roast and it's great.  The veggies can be played with too--cucumbers, sliced bell peppers, halved cherry tomatoes, bean sprouts have all worked well.  It's very refreshing and no cooking!  Prep time doesn't include the marinating time. I prefer to use only the recipe for the Thai Peanut Dressing, found in the CPK cookbook, to accompany my Chinese Chicken Salad (cabbage, romaine, steak or chicken, crushed peanuts, shredded carrots, pepper and cucumbers).  It is absolutely DELICIOUS and very easy to make. 			<description>This salad is great. Light, crunchy and pleasantly nutty. After graduating from college this past May and being home looking for a job I got sick of eating the same things everyday so I threw this together for something lighter. I've included what I use below, but this salad lends itself to be pretty flexible. Would be great with sliced grilled chicken on top or shrimp might be good too, with a little squeeze of lime. One warning: this makes quite a lot of salad so unless you are feeding a crowd I wouldn't put the dressing on all of the salad at once... it won't keep (soggy lettuce, soggy crunchies, etc). A good solution would be to bag up single serving portions in ziplock baggies and then top with dressing and crunchies when ready to serve.
